SUMAC-SPICED SHRIMP SCAMPI PASTA

Sumac-Spiced Shrimp Scampi Pasta image

Sumac, a Middle Eastern spice, adds a tanginess to classic shrimp scampi. It also gives the dish a light powder-pink tone.

Provided by Elena Besser

Categories     main-dish

Time 35m

Yield 4 to 6 servings

Number Of Ingredients 12

1 pound linguine
1/2 cup panko breadcrumbs
5 tablespoons extra-virgin olive oil
Kosher salt and freshly ground black pepper
4 tablespoons unsalted butter
1 pound peeled and deveined shrimp
2 tablespoons sumac
1/2 cup dry white wine
4 large cloves or 6 small cloves garlic, minced
2 teaspoons crushed red pepper flakes
1 lemon, zested and juiced
1 cup finely chopped flat-leaf parsley leaves and tender stems

Steps:

  • Bring a large pot of salted water to a boil. Add the linguine to the boiling water and cook according to the package directions until al dente. Reserve 1/2 cup of the cooking water then drain.
  • While the pasta is cooking, combine the panko and 1 tablespoon of the olive oil in a large heavy-bottomed pot. Season with salt and cook over medium heat, stirring continuously, until toasted, 2 to 3 minutes. Transfer the toasted breadcrumbs to a paper towel-lined plate to drain any excess oil and set aside. Wipe out the pot.
  • Combine 2 tablespoons of the remaining olive oil with 2 tablespoons of the butter in the same pot and heat over medium heat until the butter is melted. Season the shrimp on one side with 1 1/2 teaspoons of the sumac and some salt and black pepper. Add the shrimp to the pot in a single layer, seasoned side-down, and cook until the bottoms are pink, 1 to 2 minutes. Season the tops with 1 1/2 teaspoons of the sumac and some salt and black pepper. Flip the shrimp and cook until the bottoms are pink, 1 to 2 minutes. Remove the shrimp from the pot, remove the tails, cut the shrimp in half crosswise and set aside on a plate. Do not wipe out the pot.
  • Add the wine to the same pot and cook over medium heat, scraping up the browned bits, until the wine is reduced by half, 5 to 7 minutes. Add the remaining 2 tablespoons butter and 2 tablespoons olive oil; cook over medium-low heat until the butter is melted. Add the garlic, crushed red pepper, lemon zest and remaining 1 tablespoon sumac. Cook over low heat, stirring, until the garlic is tender, 2 to 3 minutes. Add the lemon juice, stir to combine, then remove from the heat.
  • Add the linguine to the sauce in the pot and toss. Add a splash of the reserved pasta water, as needed, and toss until the sauce reaches your desired consistency.
  • Add the shrimp and 3/4 cup of the parsley and toss to combine.
  • Serve the pasta in wide bowls, holding the linguine with tongs and rotating each bowl with the other hand to form a pasta nest. Top with the toasted breadcrumbs and remaining parsley. Enjoy!

Provided by Food Network

Time 30m

Yield 1 sandwich

Number Of Ingredients 9

2 tablespoons olive oil
2 onion slices
2 slices sourdough bread
1 tablespoon unsalted butter
3 slices SPAM (about 1/4-inch thick)
Mayonnaise or mustard, for serving
5 or 6 pickle slices
Lettuce, tomato or pickled jalapenos, optional
Serving suggestion: fries

Steps:

  • In a saute pan, heat oil and saute onions until caramelized, 5 to 10 minutes.
  • Toast bread, either on the grill top or toaster.
  • In a pan with butter, cook SPAM until browned, about 5 minutes per side.
  • Spread your favorite sandwich spread (mustard or mayo) on your toast; I prefer a nice spicy brown mustard. Add SPAM, grilled onions and pickle slices. Add lettuce and tomato or pickled jalapenos if it floats your boat. Sometimes you can switch it up and use RAW ONION, instead of grilled. Go crazy! It's your SPAM; do what you want.
  • Serve with American fries and a cold PBR. YES! AMERICA!

Marinated pork tenderloin rolled in puff pastry dough. This tastes great, and your friends and family will think you slaved for hours making it.

Provided by PAULASMITH

Categories     Meat and Poultry Recipes     Pork     Pork Tenderloin Recipes

Time 3h10m

Yield 6

Number Of Ingredients 6

1 ½ pounds pork tenderloin
⅛ cup soy sauce
¼ cup Worcestershire sauce
1 lemon, juiced
salt and pepper to taste
1 (17.5 ounce) package frozen puff pastry, thawed

Steps:

  • In a medium nonporous bowl, combine the soy sauce, Worcestershire sauce and lemon juice and mix well. Place the pork in the bowl, turning to coat well on all sides. Cover and refrigerate for at least two hours, allowing the pork to marinate.
  • Preheat oven to 375 degrees F (190 degrees C). Place tenderloin in a 9x13 inch baking dish.
  • Bake, uncovered, at 375 degrees F (190 degrees C) for 20 to 30 minutes, or until internal pork temperature reaches 140 degrees F (60 degrees C).
  • Remove pork from oven. Drain the liquid from the baking dish and reserve for later as a gravy, if desired. Roll out the two puff pastry sheets and wrap each piece of tenderloin in the dough, sealing the edges to completely enclose the meat. Return this to the baking dish.
  • Bake at 375 degrees F (190 degrees C) for 20 minutes, or until the pastry is golden brown.

  • Preheat the oven to 400 degrees Fahrenheit. Slice the bread in half lengthwise, then stack it back together and slice it down the middle to form two large sandwiches, or again to make 4 small. Place the sliced bread on a baking sheet with the cut sides facing up. Bake for 5 minutes, or until warmed through and turning lightly golden around the edges.
  • In the meantime, prepare the creamy basil sauce*: In a food processor, blitz the roughly chopped garlic to chop it more finely. Scrape down the sides, then add the mayo, basil, salt and pepper. Blend until smooth, then set aside.
  • To assemble the sandwiches, lightly drizzle balsamic and olive oil over half of the cut sides of bread. Layer some arugula on top, then weigh it down with rounds of mozzarella. Top with the sliced tomato, then sprinkle the tomato lightly with flaky salt.
  • Spread the basil sauce generously over the cut side of the remaining slices of bread. Place them face down over the tomatoes. Enjoy.
