Number Of Ingredients 7

1 head garlic
2 tablespoons extra-virgin olive oil
1 1/2 cups cooked soy beans
2 tablespoons tahini
2 tablespoons freshly squeezed lemon juice
1/2 cup fresh flat-leaf parsley, leaves
Coarse salt

Steps:

  • Preheat oven to 400 degrees. Place garlic on a piece of aluminum foil and drizzle with 1 tablespoon oil. Wrap in foil and place on a small baking sheet. Place in oven and bake until tender, about 45 minutes. Remove from oven. Let stand until cool enough to handle. Squeeze garlic from skins, discarding skins; set garlic aside.
  • In the bowl of a food processor, combine the soy beans, garlic, tahini, lemon juice, and parsley. Process until smooth. Transfer to a medium bowl, and season with salt. Cover with plastic wrap. Refrigerate for at least 1 hour before using.

Hummus from Scratch image

This is a great recipe made from dried garbanzo beans and soy beans. I cook my beans in a pressure cooker for an hour in a half water, half stock solution, but the old 'soak the beans overnight and simmer for two hours' method would also work.

¾ cup dry garbanzo beans
¼ cup dried soybeans
1 bay leaf
1 onion, quartered
1 cup vegetable broth
3 cups water
2 cloves cloves garlic, crushed
1 lemon, juiced
2 tablespoons soy sauce
black pepper to taste
¼ cup tahini
¼ cup chopped fresh parsley

Steps:

  • Rinse the garbanzos and soybeans, and place them in a pressure cooker along with the bay leaf and onion. Add vegetable broth and enough water to cover the beans by 1 inch (or follow the manufacturer's instructions for the minimum amount of liquid required).
  • Seal the lid and bring the pressure up to high; reduce the heat to low and cook, maintaining high pressure, for 1 hour. Allow the pressure to drop naturally.
  • Drain the beans, reserving the liquid. Place the beans in the bowl of a food processor. Add the garlic, lemon juice, soy sauce, black pepper, and tahini; process until smooth. (You may add some of the cooking liquid for a thinner consistency.) Scoop the mixture into a bowl, and mix in the parsley.

1 package (16 ounces) frozen shelled edamame, thawed
1/2 cup tahini
1/2 cup water
1/3 to 1/2 cup lemon juice
2 garlic cloves, minced
1 teaspoon sea salt
1/4 cup olive oil
1/4 cup minced fresh mint
2 jalapeno peppers, seeded and chopped
Assorted fresh vegetables
Rice crackers

Steps:

  • Microwave edamame, covered, on high until tender, 2-3 minutes. Transfer to a food processor; add the next 8 ingredients. Process until smooth, 1-2 minutes. Serve with assorted fresh vegetables and rice crackers.

WASABI AND SOY SAUCE HUMMUS

A healthy hummus, with a sushi-like twist! This is my first ever published recipe, so please be honest and kind in your comments! For my first batch I tried adding a sheet of nori (seaweed). I do not recommend this, unless you REALLY like the flavor of nori, as it completely overpowered the other flavors. Maybe some small slices on top, as a garnish? I've found that this recipe makes a nice condiment on sandwiches, too!

1 (15 ounce) can chickpeas (garbanzo beans), drained with liquid reserved
3 tablespoons soy sauce
2 tablespoons olive oil, or more to taste
2 tablespoons lemon juice
1 tablespoon tahini
1 tablespoon wasabi powder
1 clove garlic
¼ teaspoon ground black pepper

Steps:

  • Combine about 1/2 the chickpeas, soy sauce, olive oil, lemon juice, tahini, wasabi powder, garlic, and black pepper in a blender; blend until smooth, scraping down the sides of the blender bowl with a spatula to assure ingredients fully integrated. Scrape mixture into a bowl.
  • Put remaining chickpeas into the blender, reserving 5 to 7 individual beans for later use. Blend until smooth, adding reserved liquid from the cans if moisture is needed to get them smooth; add to the prior batch and stir.
  • Make a shallow pool in the center of the hummus with the back of a spoon; garnish with reserved chickpeas and a small amount of olive oil.
  • Cover bowl with plastic wrap and refrigerate at least 1 hour.

2 cloves garlic, minced
1 (15 ounce) can black soybeans, drained
2 tablespoons sour cream
2 tablespoons white onions or 2 tablespoons yellow onions, minced
3 tablespoons lemon juice
1 1/2 tablespoons tahini
1/2 teaspoon ground cumin
1 teaspoon cider vinegar
1/8 teaspoon cayenne, to taste
1 tablespoon olive oil
1/4 cup green onion, finely chopped,for garnish

Steps:

  • Combine all ingredients, except the green onions, in a food processor to create a thick puree.
  • Garnish with green onions.

1 clove garlic, peeled
1 1/2 cups cooked black soybeans or 1 can (15 ounces) organic black soybeans, drained (reserve liquid)
2 to 4 tablespoons freshly squeezed lemon juice
2 to 3 tablespoons soybean cooking or canning liquid or water
1 1/2 tablespoons tahini (sesame-seed paste)
1/2 to 3/4 teaspoon salt
1/2 to 1 teaspoon harissa or 1/8 to 1/4 teaspoon ground cayenne pepper (optional)
Sweet paprika and oil-cured olives, for garnish

Steps:

  • Mince the garlic in a food processor. Add the black soybeans and the minimum amounts of the remaining ingredients. Process to a fairly smooth paste, scraping down the sides of the work bowl as needed. Taste and blend in more of any ingredients required to give a smooth consistency and to suit your taste.
