Honey-Soy Braised Pork With Lime and Ginger image

This is a wonderfully simple and hands-off way to prepare a flavorful hunk of meat, equally suited to a weeknight or a dinner party. There is no need to brown the pork first because the meat gets appealingly dark and caramelized while braising in the rich combination of soy sauce and honey. Fresh cilantro, scallions and a squeeze of lime added just before serving bring freshness. This meal is flexible: It works over rice or other whole grains, tossed with noodles or wrapped in lettuce leaves.

Number Of Ingredients 10

3 to 4 pounds boneless, skinless pork shoulder, trimmed of big hunks of fat and cut into 2 pieces
8 large garlic cloves, smashed and finely chopped
3 tablespoons minced fresh ginger (from one 3-inch piece)
1 teaspoon red-pepper flakes, plus more to taste
2 teaspoons finely grated lime zest and 2 tablespoons juice (from 1 lime), plus more lime wedges for serving
1 cup tamari or low-sodium soy sauce (see Tip)
1 cup honey
1 tablespoon toasted sesame oil
Cooked rice, noodles or lettuce cups, for serving
Toasted sesame seeds, sliced scallions and chopped cilantro, for topping

Steps:

  • Heat the oven to 325 degrees. Place the pork in a large Dutch oven that has a lid. Scatter the garlic, ginger, red-pepper flakes and lime zest over the top. In a measuring cup, whisk together the tamari, honey and sesame oil, then pour it over the pork. Using tongs, turn to coat all sides of the pork in the sauce, and spoon some over the top so that some of the garlic and ginger is on top of the pork. Cover, transfer to the oven and cook for 2 hours.
  • Uncover the pot and flip both chunks of pork. Cover the pot and braise until the pork shreds easily with a fork, about 1 more hour. Transfer to the stovetop.
  • Using tongs, transfer the pork to a serving platter or a large shallow serving bowl. Using a ladle, skim and discard the excess fat off the surface of the cooking liquid remaining in the Dutch oven, if desired. Bring the sauce to a boil over medium-high heat and let it simmer until reduced and slightly syrupy, about 8 minutes.
  • While the sauce simmers, coarsely shred the pork using two forks. Sprinkle the lime juice over the top of the meat. Drizzle about half the sauce over the top of the shredded meat, then toss to combine. Serve over rice or noodles or in lettuce cups. Top with sesame seeds, scallions and cilantro. Pass the remaining sauce at the table, if desired, as well as extra lime wedges and red-pepper flakes.

2 tablespoons vegetable oil
2 tablespoons sugar
1 lb boneless pork belly, cut in three equal-sized pieces
2 tablespoons soy sauce
1 tablespoon five-spice powder
3 slices peeled fresh ginger, each 1/3-inch thick
3 garlic cloves, peeled
1 1/2 teaspoons salt
water

Steps:

  • In a large Dutch oven or wok, heat oil and sugar over medium-high heat, swirling pot until sugar melts and turns a caramel-amber color.
  • Place pork belly slices in pot and sear on all sides, about 1 minute per side, using tongs to turn.
  • Pour enough cold water into vessel to cover the pork. Add soy sauce, five spice powder, ginger, garlic, and salt. Bring to a boil and skim any scum that rises to the surface. Reduce heat to low and simmer, uncovered, for 3-4 hours, until pork is very tender and fat is easily penetrated with a spoon. Add water as necessary to keep pork fully submerged.
  • Remove pork belly and set aside. Strain solids from braising liquid and return liquid to pan. Over high heat, reduce until lightly thickened and glossy. Adjust seasoning if necessary.
  • Slice pork into 1/3-inch thick slices. Lightly coat in reduced braising sauce.

This hearty braise requires minimal ingredients and makes use of a pressure cooker to reduce hours of work into just 45 minutes of hands-off cooking. The pork belly soaks up the Korean-inspired marinade of soy sauce, garlic, ginger and scallions, and a good dose of black pepper balances the sweet-salty flavors. To finish, the cooking liquid is reduced into a silky sauce that glazes the meat. Serve the tender pork in crisp fresh lettuce cups to balance the richness of the meat. Leftovers can be chopped and reheated in tomato sauce for a quick and tasty Bolognese sauce.

3/4 cup low-sodium soy sauce
2 scallions, finely chopped (about 1/4 cup)
1/4 cup turbinado sugar (or 3 tablespoons granulated sugar)
2 tablespoons minced fresh garlic
2 tablespoons minced fresh ginger
3 dried shiitake mushrooms
Kosher salt and black pepper
3 1/2 pounds skin-on pork belly, sliced lengthwise 1-inch-thick then cut into 4-inch pieces
Steamed rice, lettuce cups, kimchi and gochujang, for serving

Steps:

  • In a pressure cooker, combine soy sauce, scallions, sugar, garlic, ginger, mushrooms and 1 teaspoon black pepper, and mix well. Lightly season pork belly with salt and pepper, and add to cooker. Toss pork in the sauce, massaging the sauce into the meat. Arrange pork in an even layer on top of the sauce. Lock pressure cooker lid in place and set steam vent to sealing position. Select high pressure and cook for 30 minutes. Let pressure release naturally.
  • Transfer pork and mushrooms to a large plate. Carefully pour liquid into a fat separator or large bowl and degrease. Return liquid to the pressure cooker. Using the sauté function, simmer until reduced to about 1/2 cup, 10 to 15 minutes.
  • Meanwhile, thinly slice the mushrooms. Once the liquid is reduced, add the pork and mushrooms to the cooker and simmer, stirring, until warmed through and evenly coated in the sauce, about 3 minutes. Transfer to a serving platter and spoon the sauce on top.
  • Serve with steamed rice, lettuce cups, kimchi and gochujang. Cut pork into bite-size pieces, wrap and enjoy.

  • Cut pork belly into 2 cm x 5 cm (1 in x 2 in) thick slices. Sprinkle light soy sauce, dark soy sauce, sugar and pepper. Mix well to coat the pork slices evenly and set aside to marinate for 30 minutes.
  • Blend the shallots and garlic in a food processor to a fine paste. Add a little oil to grease the blades, if necessary.
  • In a wok or skillet, heat up cooking oil over low-medium heat, and stir-fry the garlic-shallot paste for 2 minutes. Add cinnamon bark and star anise and stir-fry for a few seconds. Add the salted soy beans or soy bean paste, and stir-fry for 30 seconds. Add the mushrooms (without the soaking water) and stir-fry for 1 minute.
  • Drain the pork slices in a sieve, reserving the marinade sauces. Increase the heat to high, add the pork slices and stir-fry until it starts to change colour, about 3 to 4 minutes. Return the marinade sauces to the wok or skillet, and add enough water (including the mushroom soaking water) to just cover the pork. Bring to the boil, then lower the heat and cover. Let simmer until the pork is tender, about 45 mins to 1 hour.

  • Put all the marinade ingredients, except the oil, in a pestle and mortar and crush to a paste. Add oil to loosen the mixture, then massage it into the meat. Cover and chill for 6-12 hours.
  • Put the soy sauce, orange juice, spices and sherry in a large saucepan or casserole with a tight-fitting lid. Stir in 1.75 litres<span class="s2 cold water, then bring up to a simmer. Add the cabbage and pak choi to the stock and cook for 2-3 minutes until tender. Remove the pan from the heat, then swirl in butter to taste.
