SOUTHWESTERN CLUB SANDWICH
I used to make these at a bar and grill. They went over great.

Steps:
- 1. Pound chiucken to about 1/4 inch thick, grill or bake.
- 2. Crisp bacon. I prefer to do in microwave, not much if any grease that way.
- 3. Spread guacamole liberally on both sides of bread. Add the jalapenos [if using], the chicken, bacon, cheese, lettuce and tomato.
- 4. NOTE: You can make the same basic sandie using a cajun sauce and call it a Cajun Club. Or add provolone and creamy italian dressing for an Italian. The possibilities are limited only by your imagination. Oh yes, one other possibility is to add fresh cucumber or other veggies. Use your imagination for a sauce or dressing!!

Steps:
- Mix first 5 ingredients in small bowl. Cover and refrigerate until ready to use. Cook bacon in heavy large skillet over medium heat until crisp. Transfer to paper towels and drain. Toast bread. Spread mayonnaise mixture evenly over bread slices. Cover 2 bread slices with turkey, then tomato, avocado and bacon. Season generously with salt and pepper. Top with lettuce and remaining bread slices. Cut diagonally into quarters. Skewer each with frilly toothpick if desired and serve.
THE WESTERN CLUB
Steps:
- Stir mayonnaise, cilantro and jalapeños in small bowl to blend. Season dressing to taste with salt.
- Place 2 bread slices on plates. Spread each with 1/4 of dressing. Top with turkey, onion, a second bread slice, remaining dressing, avocado slices and sprouts. Place third bread slice atop each sandwich; press to compact slightly. Cut sandwiches into quarters; skewer together with extra-long toothpicks, if desired.

- In a bowl, combine olives, chili powder, cumin and salt; set aside 2 tablespoons. Add the mayonnaise, sour cream and onion to the remaining olive mixture. , Place bread on an ungreased baking sheet; spread 1 tablespoon of mayonnaise mixture on each slice. Top with turkey and tomatoes. Spread with another tablespoon of mayonnaise mixture; top with avocados and cheeses. Sprinkle with reserved olive mixture. Bake at 350° for 15 minutes or until heated through.

- Working in two batches if necessary, cook bacon in a large skillet over medium heat until brown and crisp, 6 to 8 minutes per side; transfer to a paper-towel-lined plate to drain. Pour off all but 2 tablespoons rendered fat from skillet.
- Season turkey generously with salt and pepper. Add to skillet, and cook over medium heat until opaque throughout, 2 to 3 minutes per side; transfer to a paper-towel-lined plate to drain.
- In a small bowl, mash avocado, lime juice, and chiles with a fork; season with salt and pepper.
- Spread avocado mixture on one side of each slice of toast. Layer turkey, bacon, tomato, and toast to form four triple-decker sandwiches. To serve, skewer with toothpicks; slice in half with a serrated knife.

- Heat the oven to 250°F Wrap the tortillas in aluminum foil and warm them in the oven for about 10 minutes to soften. This will make them easier to roll. Alternately, heat each tortilla in the microwave for 10 seconds.
- Make the sauce by combining the ranch dressing and barbecue sauce in a small bowl and stir until blended.
- Working with one wrapper at a time, layer each ingredient on half of the tortilla. Start with a bit of sauce (there'll be plenty left to serve on the side as well), then add the lettuce, tomatoes, cheese, avocado, olives, and peppers, using as much of each as you like. End with a piece of the turkey. Fold in each side of the tortilla and begin rolling the wrap from the end with the filling. Tuck in the filling as you roll.
- Slice each sandwich in the center, on the bias, with a sharp serrated knife and serve (with the extra sauce in a bowl). Makes 4 to 6 wraps.
