EASTER RIVIERA PIE
A traditional vegetarian Mediterrannean dish with a rich pastry

Steps:
- Up to a day ahead, make the pastry by rubbing the flour and butter together with your fingers until you have achieved a crumbly texture. Mix the eggs, olive oil and 1⁄2 teaspoon salt with the flour - if the pastry is too crumbly, add 1 tablespoon warm water. Wrap the pastry in cling film and put in the fridge to chill for at least an hour and up to a day ahead.
- On the day, prepare the filling. Heat 1 tablespoon of the olive oil in a large frying pan or wok, tip in the onion and fry over a medium heat for 4-5 minutes until lightly coloured and softened. Stir in the garlic and continue cooking for a further 2 minutes. Tip this mixture into a large bowl.
- In the same pan, heat another tablespoon of the oil and cook the spinach in batches for 3-4 minutes until wilted, tipping each batch into a colander to drain (you may need to add a little more oil to the pan after the second batch).
- When all the spinach is cooked, heat another tablespoon of oil in the pan and fry the artichokes for 3-4 minutes until they begin to brown. Tip the artichokes and drained spinach into the bowl of onion and garlic, mix thoroughly and season generously. Cover and leave to cool.
- Boil and peel the eggs, then immerse in a bowl of cold water and keep in the fridge.
- In the afternoon, preheat your oven to 190C/Gas 5/fan oven 170C. Divide the pastry in two, one piece a little larger than the other. Roll out a 35cm/14in disc and a 30cm/12in disc and trim the edges. If you are feeling creative, use the trimmings to make decorative pastry leaves.
- Lightly oil a shallow, loose-bottomed 25cm/10in flan tin and line it with the larger pastry disc, making sure that you have an even rim protruding slightly above the side of the tin. If your pastry begins to crack, patch it up with some of the trimmings. Spoon the filling into the case. Remove the eggs from the water and dry gently. Cut in half and push them, cut side up, into the filling. Brush the protruding pastry rim with a little oil and use the remaining disc as a lid, crimping the edges together neatly. Decorate with pastry leaves if you've made them and brush with more olive oil.
- Bake the pie for about 30-35 minutes - the filling is fully cooked before baking, so it's only necessary to bake long enough for the pastry to be fully cooked. Allow the pie to cool and serve at room temperature.

ITALIAN EASTER PIE

- For the dough: In a medium bowl, whisk together the eggs and water; set aside. In the bowl of a food processor, combine the flour and salt and pulse a couple of times. Add the chilled butter and pulse about 10 times until pea-size pieces remain. Add the egg mixture and pulse 15 to 20 times until a dough ball forms. Place the dough ball on a floured surface and knead until smooth and elastic, about 1 minute. Divide into 2 balls, wrap each ball with plastic wrap and rest in the fridge for at least 1 hour.
- For the filling: While the dough is resting, whisk together the ricotta cheese, salt, some pepper and 6 of the eggs in a medium bowl and set aside. In a 10-inch skillet over medium heat, add the oil and brown the sausage, breaking up the pieces while it's cooking, 5 to 8 minutes. Drain the sausage on a paper towel-lined plate, leaving behind any fat. Add the asparagus and cook until beginning to soften, 4 to 5 minutes. Set aside.
- Preheat the oven to 375 degrees F. Grease a 9-inch cake pan with butter.
- On a well-floured counter, roll out each dough ball into a thin 14-inch circle. Cover one circle with plastic wrap until ready to use. Loosely roll the other dough circle around a rolling pin and unroll over the prepared cake pan, letting the excess hang over the side. Press the dough gently into the sides of the pan so there is no gap between the pan and the dough. Shingle the salami over the bottom of the dough, creating an even layer. Then, add the asparagus in an even layer on top of the salami. Next, add half of the egg mixture and spread it out evenly, then top with the capicola in an even layer. Layer in the sausage and top with the remaining egg mixture, then finally the provolone cheese.
- Whisk the remaining egg with 1 tablespoon water and brush the outside rim of the dough with the egg wash. Add the remaining dough circle to the top of the pie and cut off the excess dough. Press both circles together to create a seal. Brush the remaining egg wash over the entire top and slice a couple slits in the top of the pie. Bake until golden brown, 45 to 55 minutes. Let stand 10 minutes before slicing.
EASTER MEAT PIE
This meat pie is a winner every Easter. Stuffed full of ham, salami, and prosciutto, as well as ricotta, Parmesan, and mozzarella cheeses, this pie really satisfies!

- Preheat oven to 325 degrees F (165 degrees C).
- Place ricotta in a large mixing bowl and add eggs one at a time while mixing on low speed. Stir in mozzarella, ham, salami, and prosciutto until all ingredients are well combined. Line two 9 inch pans with pastry. Spoon half of mixture into each pan. Sprinkle half of the Parmesan cheese over each pie, then cover with top pastry. Crimp edges and cut steam vents in tops.
- Bake in preheated oven for 1 hour, until crust is golden brown. Cool on racks.

ITALIAN EASTER PIE | PIZZA RUSTICA
This Italian Easter meat pie is also know as pizza rustica. This hearty ricotta and meat pie is customarily served at Easter, but it is a delicious meal anytime of the year.

- In a food processor fitted with the blade attachment, combine the flour, cold cubed butter, olive oil, egg, and salt. Pulse just until the mixture is combined; it should resemble coarse sand. With the food processor running, pour 4 tablespoons of cold water in and mix until the dough comes together and forms a ball.
- Lay out a piece of plastic wrap. Dump the dough on to the plastic wrap and press together into a disk shape. Wrap in plastic wrap and refrigerate for at least an hour or overnight.
- In a large bowl, combine all of the filling ingredients, and mix until combined. Set aside.
- Preheat oven to 425 degrees. Divide the dough into two pieces: two-thirds for the bottom crust and one-third for the top crust. On a lightly floured surface, roll out the larger piece of dough into a circular shape. Carefully place the dough in a greased springform pan and line the insides and bottom with it. You can use any scrap pieces to fill in the gaps in the pan.
- Pour the ricotta filling into the crust. Use a spatula to smooth and even it out.
- Roll out the remaining pie crust into a circle. Place it over top of the ricotta filling. Trim any excess overhang and use the side crust to roll over the top crust of the pie. Brush the pie with a beaten egg and make a small "x" shape in the middle of the pie to allow steam to escape.
- Place the pie on the middle rack of the preheated oven and immediately reduce the temperature to 350 degrees. Bake for about 75 minutes or until the crust is golden brown. Let cool for five minutes before removing the collar; let sit for another 10 minutes before slicing and serving.

RIVIERA EGG PIE
Steps:
- Preheat oven to 425 degrees F.
- Heat oil in large skillet over medium-high heat. Add onion and saute until translucent and just golden, about 8 minutes. Remove from heat, transfer to a large bowl and allow to cool while preparing crust.
- Remove 1 of the prepared pie crusts from the refrigerator, and place in an ungreased, 9-inch pie plate. Shape the crust to fit the form of the pan with a 1/2-inch overlap around the edge.
- To the onion mixture, add the ham, spinach, cheeses, 4 eggs plus 1 yolk, salt, and pepper, and mix well. Spread mixture into prepared crust. Cover with remaining pie crust; crimp edges and score to vent. Brush with egg white and bake until golden brown, about 40 to 45 minutes. Let stand at least 15 minutes and serve warm or at room temperature.

- Blend 3/4 cup of powdered sugar, eggs, vanilla, orange zest and ricotta in a food processor until smooth. Stir in the rice and pine nuts. Set the ricotta mixture aside.
- Preheat the oven to 375 degrees F.
- Lightly butter a 9-inch glass pie dish. Lay 1 phyllo sheet over the bottom and up the sides of the dish, allowing the phyllo to hang over the sides. Brush the phyllo with the melted butter. Top with a second sheet of phyllo dough, laying it in the opposite direction as the first phyllo sheet. Continue layering the remaining sheets of phyllo sheets, alternating after each layer and buttering each sheet. Spoon the ricotta mixture into the dish. Fold the overhanging phyllo dough over the top of the filling to enclose it completely. Brush completely with melted butter.
- Bake the pie until the phyllo is golden brown and the filling is set, about 35 minutes. Transfer the pan to a rack and cool completely. Sift powdered sugar over the pie and serve.
