CABBAGE AND BEEF SOUP
When I was a little girl, I helped my parents work the fields of their small farm. Lunchtime was always a treat when Mother picked fresh vegetables from the garden and simmered them in her big soup pot. We loved making this delicious recipe. -Ethel Ledbetter, Canton, North Carolina

- In a Dutch oven, cook beef over medium heat until no longer pink, breaking it into crumbles; drain. Stir in the remaining ingredients except parsley. , Bring to a boil. Reduce heat; cover and simmer for 1 hour. Garnish with parsley.

Steps:
- in a large non-stick pot over medium heat cook onion and garlic with 2 tbsp water until soft. Add beef chiles, cilantro, red pepper flakes, and pepper. Stir until beef is coated with spices.
- Pour in broths and water. Increase heat to high. When soup boils, reduce to medium. Add cabbage and salt. Stirring occasionally, simmer one hour.
- You can also throw everything in the crock pot and cook on low for 6-8 hours.

This soup is really good but a little spicy. If you think it will be too hot for you substitute stewed tomatoes for the ones with chilies. It is good served with cheese and sour cream. It is from the Six Ingredients or Less Slow Cooker cookbook.

- 2. Add remaining ingredients and 3 cups of water.
- 3.Cover and cook on low 4-5 hours.(Check at about 3 hours to make sure it isn't cooked some slow cookers are hotter than others.).
