Southwestern Corn Dip - super quick and delicious no-bake dip! Southwestern corn, mayonnaise, sour cream, Rotel tomatoes, green onions, lime juice, sugar, and shredded cheese. People go CRAZY over this easy dip recipe! It is my most requested dip recipe! I can't go to a party without bringing this Mexican dip! Make it ASAP! It is SO good!!

1 (8-oz) container sour cream
1 cup mayonnaise
2 cups shredded cheddar cheese
1 (10-oz) can Rotel diced tomatoes and green chilies (drained)
2 (11-oz) cans Southwestern Style Corn, (drained)
½ tsp sugar
2 tsp lime juice
2 green onions (sliced)

Steps:

  • Mix together all ingredients and refrigerate for several hours. Serve with corn chips or tortilla chips.

Steps:

  • Drain liquid from corn into 2-quart saucepan. Add cheese; cook over medium-low heat, stirring constantly, until melted.
  • Stir in corn. Cook until thoroughly heated. Spoon into serving bowl. Sprinkle with cilantro. Serve with tortilla chips.

1 (4 ounce) can diced green chiles, drained
5 green onions, chopped
1 (8 ounce) container sour cream
1 jalapeno pepper, chopped
¾ cup mayonnaise

  • In a medium-size mixing bowl, combine Mexican-style corn, green chilis, green onions, sour cream, jalapeno pepper, mayonnaise, and cheddar cheese. Mix well. Cover and refrigerate until ready to serve.

8 ounces cream cheese, at room temperature
1/2 cup sour cream
1/2 cup mayonnaise
Two 10-ounce packages frozen fire-roasted corn
Two 4.5-ounce cans chopped green chiles
1/2 cup jarred jalapenos, chopped
1/2 cup jarred salsa
Kosher salt and freshly ground black pepper
3 cups grated Monterey Jack cheese
1/4 cup fresh cilantro leaves
Corn chips, for serving

Steps:

  • Preheat the oven to 375 degrees F.
  • Stir together the cream cheese, sour cream and mayonnaise in a large bowl until combined. Add the corn, chiles, jalapenos, salsa, salt, pepper and half the grated cheese, then stir.
  • Spread the mixture into a 9-by-13-inch casserole dish and sprinkle the top with the remaining cheese. Bake until bubbly and golden, about 20 minutes.
  • Top with the cilantro and serve warm with the corn chips on the side.

1 medium ear sweet corn, husk removed
1 can (15 ounces) garbanzo beans or chickpeas, rinsed and drained
2 tablespoons minced fresh cilantro

1/2 teaspoon chili powder
1/4 teaspoon salt
1/4 teaspoon pepper
1/2 cup chopped roasted sweet red peppers
1/4 cup canned fire-roasted diced tomatoes
Baked pita chips or assorted fresh vegetables

Steps:

  • Grill corn, covered, over medium heat for 10-12 minutes or until tender, turning occasionally. Meanwhile, in a food processor, combine the beans, cilantro, cumin, chili powder, salt and pepper.
