SHEPHERD'S PIE

Steps:
- Preheat oven to 400ºF. Brown beef in a large nonstick skillet over medium-high heat, stirring often, 10 minutes or until meat crumbles and is no longer pink. Remove ground beef from skillet using a slotted spoon; reserve 2 Tbsp. drippings in skillet. Reduce heat to medium.
- Sauté onion, mushrooms, and garlic in hot drippings over medium heat 10 to 11 minutes or until tender. Stir in ground beef, peas, and next 4 ingredients. Sprinkle flour over meat mixture. Increase heat to medium-high, and cook, stirring constantly, 1 minute. Stir in tomatoes, bay leaf, and vinegar, breaking up large tomato pieces with a spoon. Reduce heat to medium, and cook, stirring often, 3 minutes or until slightly thickened. Remove bay leaf. Transfer mixture to a lightly greased 3-qt. baking dish or pan. Spoon Cheese-and-Carrot Mashed Potatoes evenly over meat mixture, smoothing with back of spoon.
- Bake at 400°F for 15 minutes or until thoroughly heated. Let stand 5 minutes before serving.
SOUTHERN STEAKHOUSE SHEPHERD'S PIE
My own twist on a recipe I found. The family enjoyed it very much. Serve with dinner rolls and enjoy!

- 1. Place potatoes in a pot, cover with water and bring up to a boil. Season water with salt and boil potatoes until tender. Heat a skillet over medium high heat. Add ground beef to the pan and caramelize the meat. Add in the mushrooms and onions and cook until tender,then season with salt and pepper. While meat cooks heat a small sauce pot over medium heat and melt butter, whisk the flour into butter, cook 2 minutes then whisk beef stock into flour, add Worcestershire and season sauce with salt and pepper, to taste. Thicken. Pour gravy over meat and turn on broiler. Place drained potatoes back into the pot you cooked them in to dry them out a little. Mash potatoes with egg yolk, Parmesan cheese, milk and 2 tablespoons of butter. Season the potatoes with salt and pepper and spread across the top of the meat in an even layer. Garnish the potatoes with bacon and place under broiler to crisp and brown the potatoes, 2 to 3 minutes.
SIRLOIN SHEPHERD'S PIE

- To make the potato topping: Boil the yams and russet potatoes in salted water until fork tender, about 15 minutes. Strain the potatoes and transfer to a large bowl. Add the butter, milk, sea salt, freshly ground black pepper and mash together.
- To make the meat: In a pan, heat the extra-virgin olive oil over medium heat. Add the red onion and saute for 8 minutes. Add the ground sirloin, parsley, smoked paprika, smoked cayenne, sea salt, and freshly ground pepper to the pan. Mix and saute for 10 minutes. Turn the heat up to medium-high and saute for a few more minutes, until some crispy bits develop.
- To make the creamed corn: Boil the corn in salted water for about 5 minutes. Remove from the water and slice off the corn niblets. Heat the unsalted butter in a pan over medium heat. Add the corn niblets, sea salt, pepper, and saute for a few minutes. Pour in the heavy cream and bring to a boil. Once it begins to boil, cover the pan and reduce on low heat for about 10 minutes. Transfer the creamed corn to a food processor, add a handful of minced chives and pulse.
- Evenly distribute the crisped beef into the bottom of a baking dish. Cover it with a layer of creamed corn. Top the pie off with the yam and russet mash. Sprinkle with a handful of crumbled potato chips and pinch of smoked paprika. Broil for a few minutes, until edges are golden and crispy.
STEAKHOUSE SHEPHERD'S PIE

- Place potatoes in a pot, cover with cold water and bring up to a boil. Season water with salt and boil potatoes until tender, 12 to15 minutes. Heads up: save a ladle of starchy cooking water just before draining.
- Heat a skillet with high sides over medium high heat. Add extra-virgin olive oil, half a turn of the pan and the bacon. Crisp bacon and remove to paper towel lined plate. Add sirloin to the pan and caramelize the meat, 4 to 5 minutes. Add in the mushrooms and onions and cook until tender, 6 to 7 minutes more then season with salt and pepper.
- While meat cooks heat a small sauce pot over medium heat and melt butter, whisk the flour into butter, cook 2 minutes then whisk beef stock into flour, add Worcestershire and season sauce with salt and pepper, to taste. Thicken 6 to 7 minutes.
- Pour gravy over meat and turn on broiler.
- Temper egg yolk by beating it with the starchy potato cooking water. Place drained potatoes back into the pot you cooked them in to dry them out a little. Mash potatoes with egg yolk and sour cream then fold in crumbled blue cheese and chives. Season the potatoes with salt and pepper and spread across the top of the meat in an even layer. Garnish the potatoes with paprika and place under broiler to crisp and brown the potatoes, 2 to 3 minutes. Crumble reserved bacon over top. Serve immediately right from the hot skillet.

- Preheat oven to 350°. In a large bowl, mash potatoes with sour cream. Add salt and pepper; set aside. In a large skillet, cook beef with onion and red pepper until meat is no longer pink and vegetables are tender; drain. Stir garlic salt into meat mixture. Stir in the soup, corn and milk. , Spread meat mixture into a 13x9-in. baking dish. Top with mashed potatoes; drizzle with butter. , Bake, uncovered, until heated through, 30-35 minutes. STEAK SHEPHERDS PIE
Your traditional meat and veg mix with mashed potatoes on top. I took a few different recipes and combined them to make this one that we love! My advice is always to pre-chop everything. It makes it so much easier. This way also you can enjoy a glass of the wine you're cooking with while you're cooking!

Steps:
- heat oil and cook steak in large saucepan for ten min on medium heat stirring occasionally.
- The goal is to cook the meat slowly to seal in the flavor.
- In a separate saucepan cube all potatoes, cover with water and boil until soft - usually 15 to 20 min if you cube small enough.
- Add all onions, carrots and scallions to the steak and saute about 5-10 minute.
- Add Herbs, corn to the meat/veg mixture and saute another 5 minutes.
- Add 1 cup wine and saute on med low heat 10-15 minute.
- Meanwhile drain the potatoes, mash (by hand - it tastes better) and add butter and milk to soften.
- Set aside.
- Pour Meat mixture into a casserole dish, add mashed potatoes on top and cover the entire thing with cheese.
- Cook at 350F for 30 minutes or until potatoes look crispy.
- Enjoy.

- Heat 2 tablespoons olive oil in a large skillet over medium-high. Sprinkle lamb with 2 1/2 teaspoons kosher salt and 1 teaspoon black pepper. Cook until browned, about 3 minutes per side. Remove lamb from skillet. Add onions, carrots, and garlic; cook, stirring occasionally, until slightly softened, about 4 minutes. Add 1/2 cup dry red wine; cook, until mostly evaporated, about 3 minutes. Transfer mixture to a 6-quart slow-cooker. Stir in tomatoes, chicken broth, and ground cumin. Add tomato paste, rosemary, chopped garlic, thyme, 1 1/2 teaspoon kosher salt, and 3/4 teaspoon black pepper. Cook until fragrant, about 2 minutes. Add 1/2 cup dry red wine; cook until completely evaporated, about 2 minutes. Sprinkle with 3 tablespoons all-purpose flour; cook 1 minute. Gradually add beef stock, stirring until completely incorporated. Cook until thickened, 6 to 7 minutes. Stir in 12 oz. shredded reserved lamb shank meat and green peas. Remove from heat.
- Stir heavy cream into prepared mashed potatoes. Spread potatoes over lamb mixture, covering surface completely. Broil on HIGH 6 inches from heat until lightly browned, 4 to 6 minutes. Garnish with chopped parsley.
