GLAZED COUNTRY PORK RIBS

I'm the designated camp cook when my buddies and I go hunting and fishing. I started with a basic recipe, then modified it to suit my tastes. The ribs are melt-in-your-mouth tender and coated with a mild sweet sauce.-John Brink, Harrison, South Dakota

2 pounds bone-in country-style pork ribs
1-3/4 teaspoons salt, divided
1/4 teaspoon pepper, divided
3/4 cup orange juice
2 tablespoons lemon juice
1/2 cup packed brown sugar
1-1/2 teaspoons garlic powder
1 teaspoon grated lemon zest
3/4 teaspoon ground ginger
1/4 teaspoon ground cloves
1 bay leaf

Steps:

  • Place ribs on a rack in a foil-line shallow roasting pan; sprinkle with 3/4 teaspoon salt and 1/8 teaspoon pepper. Bake, uncovered, at 400° for 30 minutes. Turn ribs. Reduce temperature to 350°; bake 30 minutes longer., Meanwhile, in a saucepan, combine the orange juice, lemon juice, brown sugar, garlic powder, lemon zest, ginger, cloves, bay leaf and remaining salt and pepper; bring to a boil. Reduce heat; simmer, uncovered, for 15 minutes. Discard bay leaf., Remove ribs from rack; drain drippings. Return ribs to pan; brush with sauce. Bake, uncovered, for 45-60 minutes or until tender, turning and basting often.

2 tablespoons extra-virgin olive oil
3 garlic cloves, finely chopped
1½ teaspoons ground oregano, divided (preferably Mexican oregano)
½ medium yellow onion, peeled and quartered
3 plum tomatoes
3 tomatillos, husked then rinsed
Kosher salt
3 pounds baby back pork ribs
Freshly ground black pepper
4 cups water
2 dried ancho chiles, top removed and seeds discarded
1 dried guajillo chile, top removed and seeds discarded
¼ cup pepitas, toasted
½ cup chicken broth
2 tablespoons dark brown sugar
One 2-ounce tablet Mexican chocolate, coarsely chopped
1 teaspoon ground cinnamon
1 teaspoon ground allspice

Steps:

  • 1. Preheat the oven to 425°. In a medium bowl, toss together the olive oil, garlic, ½ teaspoon of the oregano, onion, tomatoes and tomatillos. Arrange on a baking sheet, season with salt and place in the oven. Roast until the tomatoes and tomatillos are soft, about 20 minutes. Remove from the oven and set aside to cool. 2. Lower the oven temperature to 250°. Season the ribs with salt, pepper and the remaining teaspoon oregano. Set a grill pan over high heat and sear the ribs until slightly browned, about 4 minutes on each side. Place the ribs on an aluminum-foil-lined rimmed baking sheet and cook for 1 hour and 30 minutes. 3. Meanwhile, make the mole: Bring the water to a boil. Place the chiles in a large bowl and pour boiling water over them until they are submerged. Top the bowl with a wet paper towel and set aside until the chiles are rehydrated, about 30 minutes. Drain the chiles. 4. In a food processor or blender, purée the cooled tomato-tomatillo mixture with the rehydrated chiles, toasted pepitas and chicken broth. Strain the mixture through a fine-mesh sieve and into a medium saucepan. Cook over medium heat for 10 minutes, then stir in the brown sugar, chocolate, cinnamon and allspice. Season with salt and black pepper and simmer for 10 minutes. Cover to keep warm. 5. Brush some of the mole over the ribs and return the ribs to the oven until tender, an additional 1 to 1½ hours. Brush with more sauce and serve hot with additional sauce on the side.

SPICED PORK RIBS WITH GUAVA GLAZE AND ORANGE-HABANERO MOJO



Spiced Pork Ribs with Guava Glaze and Orange-Habanero Mojo image

4 tablespoons ground cumin
4 tablespoons ancho chile powder
3 tablespoons kosher salt
1 tablespoon freshly ground black pepper
2 racks pork ribs, 12 ribs each, excess fat trimmed
Canola oil
Steaming Liquid, recipe follows
Guava Glaze, recipe follows
Orange-Habanero Mojo, recipe follows
1 cup soy sauce, plus more if needed
4 cups water, plus more if needed
3-inch piece fresh ginger, thinly sliced
2 cups guava jelly
1/4 cup Dijon mustard
1/2 cup fresh orange juice
Salt and freshly ground black pepper
2 tablespoons canola oil
1 small red onion, finely chopped
4 cloves garlic, finely chopped
1/2 cup fresh lime juice
2 cups freshly squeezed orange juice
1 teaspoon orange zest
1 teaspoon lime zest
1/2 habanero chile
Salt and freshly ground black pepper
4 sprigs cilantro, leaves chopped
1 teaspoon ground cumin

Steps:

  • Mix together the cumin, ancho, salt and pepper in a small bowl.
  • Heat grill to medium. Rub each rack with a few tablespoons of the spice mixture. Drizzle with oil and grill until golden brown and a crust as formed, about 10 minutes. Remove the ribs to a platter. Using side towels, lift the grate off the grill and place the roasting pan with the Steaming Liquid mixture on top of the coals or heat source. Return the grate to the grill.
  • Return the ribs to the grill, rub side up, brush with some of the Guava Glaze, close the lid and continue grilling the pork, brushing with the guava glaze every 10 minutes until tender, about 1 1/2 hours. (If the steaming liquid evaporates before ribs are tender, add more soy and water to the pan) Remove ribs from the grill to a cutting board, brush with more of the glaze and let rest for 10 minutes. Cut the ribs, place on a platter and drizzle with the Orange-Habanero Mojo.
  • Combine all ingredients in a heavy duty roasting pan.
  • Whisk the guava jelly, Dijon mustard and orange juice together in a medium bowl and season with salt and pepper, to taste.
  • Heat oil in a pan on the side burner of the grill or on the grates. Add onion and garlic and cook until soft. Stir in lime juice, orange juice, zests and habanero, and bring to a boil. Cook until reduced by half, remove habanero and season with salt and pepper. Stir in the cilantro and cumin.

  • Prep the ribs: Remove the membrane or silverskin from the bottom side of the ribs. Flip over the rib rack so you are looking at the bottom side (the side without the meat.) Go to one end of the rib rack, using a knife slide it under the silverskin and pull. It should peel right off in one swipe. Set aside.
  • Glaze: Preheat oven to 375 F degrees. Mix all of the glaze ingredients together in a large bowl. Place the ribs on a large roaster fitted with a rack and then brush the glaze all over the pork ribs thoroughly on both sides. If there's any of the glaze left over, just pour it over the ribs.
  • Cook: Add 1/2 inch of water to the bottom of the roasting pan and transfer the roasting pan to the oven. Bake in the oven for about 1 hour and a half. Every 20 minutes or so, baste the ribs with the drippings from the pan. If the ribs start to brown too much, cover them with foil and finish cooking them.
