MEAT LOAF FROM THE SLOW COOKER
This simple, easy-to-make meat loaf is one of my personal favorites. I'm often asked for the recipe. -Laura Burgess, Mount Vernon, South Dakota

Steps:
- Cut three 25x3-in. strips of heavy-duty foil; crisscross so they resemble spokes of a wheel. Place strips on the bottom and up the sides of a 4- or 5-qt. slow cooker. Coat strips with cooking spray., In a large bowl, combine the first nine ingredients. Crumble beef and sausage over mixture and mix well (mixture will be moist). Shape into a loaf. Place meat loaf in the center of the strips., In a small bowl, combine sauce ingredients. Spoon over meat loaf. Cover and cook on low 3-4 hours or until no pink remains and a thermometer reads 160°. Using foil strips as handles, remove the meat loaf to a platter.

Top with potatoes., In a large bowl, combine eggs, onion, tomato sauce, saltines, ketchup, garlic, Worcestershire sauce, seasoned salt and seasoned pepper. Add beef and sausage; mix lightly but thoroughly. Shape into a loaf; transfer to slow cooker. Combine sauce ingredients; pour over top., Cook, covered, on low until a thermometer inserted into meat loaf reads at least 160° and potatoes are tender, 6 to 6-1/2 hours. Using foil strips as handles, remove meat loaf to a platter.

When my husband and I moved down South, we discovered our love for pimiento cheese! It adds southern flair to this meat loaf recipe. - Preheat oven to 350°. In a large skillet, heat oil over medium-high heat. Add onion and celery; cook and stir until crisp-tender, 4-5 minutes. Add carrots and garlic; cook and stir until tender, 1-2 minutes longer. Transfer vegetable mixture to a large bowl. Add eggs, crackers and seasonings.
