PAN-FRIED TROUT WITH LEMON AND PARSLEY SERVED WITH GARDEN ROOT VEGETABLES



Pan-fried Trout with Lemon and Parsley Served with Garden Root Vegetables image

Number Of Ingredients 14

1 pound assorted root vegetables (4 ounces each: red potatoes, baby carrots, spring onions, and turnips or any other combination of root vegetables)
2 tablespoons olive oil
1 sprig thyme
Salt and pepper
2 tablespoons butter
1 teaspoon minced parsley leaves, for garnish
Lemon wedges, for garnish
2 whole trout
Salt and pepper
Flour
3 ounces unsalted butter
1 sprig sage
1/2 lemon, juiced
1 teaspoon minced parsley

Steps:

  • Preheat the oven to 350 degrees F.
  • Prepare the vegetables. Cut the red potatoes in quarters. Peel and trim the baby carrots. Trim and cut the spring onions in half lengthwise. Peel and quarter the turnips.
  • In a medium saute pan, over high heat, add the olive oil. Add the prepared vegetables, sprig of thyme and saute for about 2 minutes. Season with salt and pepper and add butter. Continue to saute until lightly golden, another 2 to 3 minutes. Transfer to a preheated oven and roast for about 10 minutes or until caramelized.
  • Meanwhile, make 3 diagonal slices on each side of the trout. Season with salt and pepper inside and outside. Dredge in flour. In a large saute pan, over high heat, add 2 ounces of butter. Pan-fry the prepared trout until golden, about 5 minutes. Turn and add a sprig of sage and the remaining 1-ounce of butter. Continue to pan-fry until golden on both sides, basting the topside of the fish with the cooking butter, another 5 minutes.
  • Add lemon juice and parsley. Add the cooked vegetables to the trout and serve on pan for an informal al fresco dining, or on heated serving plates, place a pan-fried trout and surround with half of the caramelized vegetables. Sprinkle with parsley. Serve with lemon wedges on the side and serve immediately.

About 4 cups vegetable oil for frying
1 bunch curly parsley, coarse stems discarded
1 small lemon, thinly sliced crosswise
8 (6-inch) corn tortillas, warmed
a deep-fat thermometer
lemon wedges

Steps:

  • Heat 1 1/2 inches oil to 375°F in a 2 1/2- to 3-quart saucepan, then fry parsley (use caution; oil will spatter) until leaves are dark green, about 45 seconds. Transfer with a slotted spoon to several layers of paper towels and season with salt.
  • Return oil to 375°F, then fry lemon slices, stirring occasionally, until golden in spots, 1 to 2 minutes. Transfer to paper towels and season with salt. Serve parsley and lemon wrapped in tortillas.

1/4 cup extra-virgin olive oil
2 tablespoons capers, rinsed, drained, and patted dry
1 1/4 lb. chicken cutlets
1/4 cup chopped fresh flat-leaf parsley
1 1/2 tablespoons fresh lemon juice, or to taste

Steps:

  • Heat oil in a 12-inch heavy skillet over moderate heat until hot but not smoking, then fry capers, stirring, until slightly crisp and a shade darker, about 2 minutes. Transfer capers with a slotted spoon to paper towels to drain.
  • Pat chicken dry and season well with salt and black pepper. Heat oil remaining in skillet over moderately high heat until hot but not smoking, then sauté chicken in batches, turning once, until golden brown, 1 to 1 1/2 minutes per side. Transfer to a platter and keep warm, covered.
  • Remove skillet from heat. Add parsley and lemon juice to skillet and simmer over moderately high heat, stirring and scraping up any brown bits from bottom of skillet, 1 minute. Pour sauce over chicken and top with fried capers.

1 lb ground beef
1 (1 1/4 ounce) package taco seasoning mix
3/4 cup water
6 fajita-size flour tortillas, 6-inch diameter
3 cups canola oil, enough to fill a large skillet about 1 inch high
1 tablespoon red pepper (cayenne)
1 1/2 cups Mexican blend cheese, four cheese blend
1/2 cup lettuce, chopped
1/2 cup taco sauce, from a jar

Steps:

  • In a medium skillet, brown meat on medium-high heat. Drain fat.
  • Stir in Taco Seasoning Mix, red pepper and water.
  • Bring to a boil. Reduce heat and simmer for approximately 5 minutes.
  • While meat is simmering, add oil to a separate large skillet on low until oil is hot.
  • Using tongs, immerse one tortilla at a time completely in oil. Cook tortilla for approximately one minute, turning it over several times in the oil.
  • Remove tortilla from oil and place on paper towel.
  • Plate each tortilla and add a couple spoons of seasoned meat, cheese and lettuce. Fold tortilla over and serve. Top with taco sauce, sour cream, salsa if desired.
