Ginger molasses cookies are a classic holiday cookie that has been enjoyed by generations of home cooks, and now you! We took that classic spiced cookie recipe, with ginger, cinnamon and cloves and perfected it to make the best ginger molasses cookies we have ever tasted. These are baked with a soft center and a slightly crispy crunch on the outside, and dipped in sugar to give it a sweet finish. Enjoy making memories with family and friends while devouring a batch of these soft molasses cookies during the holidays or bake them whenever you just need a batch of cozy and sweet spiced cookies regardless of the season.

1 cup packed brown sugar
3/4 cup shortening
1/4 cup molasses
1 egg
2 1/4 cups Gold Medal™ all-purpose flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1/4 teaspoon salt
3 tablespoons granulated sugar

Steps:

  • Heat oven to 325°F. In large bowl, beat brown sugar, shortening, molasses and egg with electric mixer on medium speed, or mix with spoon. Stir in remaining ingredients except granulated sugar.
  • Shape dough by rounded tablespoonfuls into 1 1/2-inch balls. Dip tops into granulated sugar. On ungreased cookie sheet, place balls, sugared sides up, about 2 inches apart.
  • Bake 13 to 16 minutes or just until set and cookies appear dry. Immediately remove from cookie sheet to cooling rack.

1/2 cup butter, softened
1 cup dark molasses
1/2 cup water
4 cups Gold Medal™ all-purpose flour
1 1/2 teaspoons salt
1 1/2 teaspoons ground ginger
1 teaspoon baking soda
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1/4 teaspoon ground allspice

Steps:

  • Beat 1 cup sugar and the butter in large bowl with electric mixer on medium speed, or mix with spoon. Stir in remaining ingredients except sugar. Cover and refrigerate at least 3 hours until dough is firm.
  • Heat oven to 375°. Generously grease cookie sheet with shortening. Roll dough 1/4 inch thick on generously floured cloth-covered surface. Cut into 3-inch circles. Sprinkle with sugar. Place about 1 1/2 inches apart on cookie sheet.
  • Bake 10 to 12 minutes or until almost no indentation remains when touched lightly in center. Cool 2 minutes; remove from cookie sheet to wire rack.

These cookies are very old-fashioned. Eating them is like eating a bit of history, or so my partner tells me. There was a time when molasses was the main sweetener for many people.

1/2 cup butter
1/2 cup brown sugar
1 cup molasses (you can use any kind of molasses you prefer. Light molasses makes a brown, delicate flavored cookie;)
1 egg
2 teaspoons powdered ginger (optional)
1 tablespoon baking soda
1/2 cup sour milk

Steps:

  • Preheat oven to 375 degrees F.
  • Bring the butter to room temperature so that it is soft.
  • Cream the butter with the brown sugar.
  • Stir in the molasses.
  • Add the egg.
  • Measure out the flour and add to the butter/molasses mixture.
  • Stir until partially blended.
  • Add the milk and blend well.
  • Drop by teaspoonfuls onto a lightly greased baking sheet.
  • Bake 10 min.
  • or until set in the center (no imprint remains when lighty touched with a finger).

1 cup shortening, melted
1/2 cup baking cocoa
1 cup molasses
1 cup sugar
2 large eggs, room temperature
1/2 cup strong brewed coffee
4 cups all-purpose flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground cloves
Confectioners' sugar

Steps:

  • Beat shortening and cocoa until blended. Beat in molasses, sugar and eggs. Beat in coffee. In another bowl, whisk flour, baking soda, cinnamon, salt and cloves; gradually beat into molasses mixture. Dough will be very soft. Divide dough in half. Shape each into a disk. Cover and refrigerate 1 hour or until firm enough to roll., Preheat oven to 350°. On a well floured surface, roll each portion of dough to 1/4-in. thickness. Cut with a floured 3-1/2-in. round cookie cutter. Place 2 in. apart on ungreased baking sheets., Bake until edges are set, 14-16 minutes. Cool on pans 2 minutes. Remove to wire racks to cool completely. Decorate as desired with confectioners' sugar.

1 cup sugar
1/2 cup vegetable shortening (such as Crisco)
1 cup dark molasses
1/2 cup water
4 cups flour
1 1/2 teaspoons salt
1 teaspoon baking soda
1 1/2 teaspoons ground ginger
1/2 teaspoon ground cloves
1/2 teaspoon ground allspice

Steps:

  • Mix all ingredients in the order given.
  • Chill for 3-4 hours.
  • Roll dough 1/4" thick.
  • Cut in 3" circles.
  • Place on cookie sheet.
  • Bake at 375 degF for 10-12 minutes.
  • Let cool 2 minutes before removing from pan.

1 cup molasses
4 eggs
8 cups all-purpose flour

Steps:

  • In a large bowl, cream shortening and sugar. Beat in molasses and eggs. Combine the flour, baking soda, cinnamon, salt, cloves and ginger; gradually add to creamed mixture.
