CHICKEN SCALOPPINE

2 chicken breasts, halved lengthwise
1 teaspoon poultry seasoning
Kosher salt and freshly ground black pepper
1/2 cup all-purpose flour
2 tablespoons canola oil
2 tablespoons unsalted butter
1 (14.5-ounce) can chicken broth
2 tablespoons lemon juice
1 tablespoon chopped fresh parsley leaves
1 tablespoon chopped fresh basil leaves
Serving suggestion: Roasted Garlic and Mushroom Risotto, recipe follows
1 head garlic
2 1/2 teaspoons extra-virgin olive oil
2 (14.5-ounce) cans chicken broth
3 cans water
1 medium onion, chopped
1 (8-ounce) package sliced mushrooms
Salt and freshly ground black pepper
2 1/2 cups long-grain rice
2 tablespoons unsalted butter
1/2 cup grated Parmesan

Steps:

  • Pound the 4 pieces of chicken between sheets of plastic wrap to flatten them, about 1/4-inch thick. Sprinkle with poultry seasoning and season with salt and pepper, to taste. Coat the chicken with the flour, shaking off any excess.
  • In a large skillet over medium-high heat, add the oil and butter. Mix together and when the butter has melted add the chicken, working in batches, until they are golden brown, about 4 to 6 minutes per side. Remove the chicken, to a serving platter, cover and keep warm. Add the chicken broth to the pan and cook it over high heat until it reduces by half and thickens slightly, about 5 minutes. Stir in the lemon juice, parsley and basil. Taste, and adjust the seasoning with salt and pepper, if needed. Pour the sauce over the cooked chicken serve with the Roasted Garlic and Mushroom Risotto.
  • Preheat the oven to 350 degrees F.
  • Slice the top off the head of garlic. Put it on a large square of aluminum foil and drizzle 1 teaspoon of the extra-virgin olive oil over the exposed cloves. Wrap the foil around and over the garlic. Roast until it is soft, about 50 minutes to 1 hour. Remove from the oven and let cool.
  • Pour the 2 cans of broth into a saucepan, over low heat, and add 3 cans of water. Bring to a simmer.
  • In a large, heavy bottomed skillet, heat the remaining olive oil over medium-high heat. Add the onion and saute for 3 minutes. Add the mushrooms, season with salt and pepper, to taste, and cook until the mushrooms release their juices, about 5 minutes. Add the rice and cook for 1 minute to toast.
  • Add 2 ladles full of hot broth to the pan and gently stir the rice. Cook until most of the liquid has been absorbed. Adjust the heat so that the pan is just gently bubbling. Continue adding broth and stirring until all the broth is used and the rice is cooked but not mushy, about 20 to 25 minutes. Once the rice has absorbed all the liquid and is nice and creamy, stir in the butter, Parmesan and the garlic pulp. Cover and let rest for 2 minutes. Transfer to a serving dish and serve hot.
  • Reserve 3 cups for another use.

ESCABECHE OF CHICKEN

One 3-pound chicken, cut in pieces
4 tablespoons olive oil
12 large cloves garlic, peeled
12 peppercorns
12 small white onions, peeled
2 carrots, sliced
3 cups red wine vinegar
3 bay leaves
1 cup dry white wine
3 peppers, red, green and yellow, cut in strips

Steps:

  • Brown the chicken pieces in the olive oil over moderate heat, about 7 to 10 minutes. Transfer chicken to a platter and pour off all but I tablespoon of olive oil.
  • To the pan add the garlic, peppercorns, and onions. Cook 4 minutes, then add the carrots, red wine vinegar, bay leaves, and dry white wine. Bring to a boil and simmer 35 to 40 minutes, until vegetables are tender. Add chicken pieces and simmer 3 minutes.
  • Remove pan from heat and add the pepper strips. Let the chicken and vegetables cool to room temperature and then chill them overnight in the refrigerator. Bring the mixture to room temperature before serving.

TURKEY PICATTA ON PUMPKIN PUREE

2 pounds fresh pumpkin, seeds removed and cut into chunks
1 cup water
4 tablespoons unsalted butter, cut into pieces
2 tablespoons dark brown sugar
1 teaspoon ground allspice
1 teaspoon ground cinnamon
1 teaspoon ground ginger
12 sage leaves
1 tablespoon chopped fresh sage
2 pounds turkey breast, cut into 12 slices, each 1/3-inch thick
Freshly ground pepper
1/4 pound prosciutto (6 long, thin slices, cut in half)
Salt
All-purpose flour
2 tablespoons vegetable oil
1/2 cup port
1 cup chicken or turkey stock
1 1emon, juiced
2 tablespoons unsalted butter
Cranberry Catsup, recipe follows
1 pound fresh cranberries, rinsed
1/2 small onion, diced
1/4 cup plus 1 tablespoon packed brown sugar
1/2 cup cider vinegar
Zest of 1 medium orange, chopped fine
1 large garlic clove
1 1/2 teaspoons salt
1 teaspoon pickling spice

Steps:

  • Preheat the oven to 400 degrees F. Prepare the Pumpkin Puree: In a small baking tray, combine the pumpkin chunks with the water. Cover and bake until tender, about 1 hour. Drain excess water. Scoop out the flesh of the chunks of pumpkin, transfer to a bowl, and mash. Stir in the remaining ingredients and mix well.
  • Puree in a food mill and correct seasonings, to taste. Keep warm over simmering water, stirring when ready to serve.
  • Prepare the Piccata: Place 1 sage leaf in the center of each slice of turkey and season with pepper. Top with a slice of prosciutto and press together with the palm of your hand. Season the other side with salt and pepper and dust both sides lightly with flour.
  • Heat a large, heavy saute pan and add the vegetable oil. Sear the turkey scallops, prosciutto-side down, until golden. Turn and sear the other side. As the turkey scallops are cooked, remove from the pan and keep warm. Pour out the oil, add the chopped sage, and deglaze the pan with the port. Add stock and lemon juice and reduce by half. Whisk in the butter and keep warm.
  • Divide the pumpkin puree and mound in the center of each of 4 warm plates. Surround with 3 turkey scallops and spoon a little of the sauce over. Serve with Cranberry Catsup.
  • In a medium stainless steel or enamel saucepan, combine all of the ingredients. Cook over a low flame, stirring often, until thick and almost smooth, 25 to 30 minutes. There is very little liquid, so you must be careful of scorching. Strain through a food mill. Cool and refrigerate in a covered container until needed.

2 tablespoons olive oil, plus more if needed
1/2 pound ground beef
1 small Vidalia onion, diced
2 celery stalks, diced
1 carrot, diced
1/2 cup chicken broth
1(8-ounce) can tomato puree
1/4 teaspoon ground cumin
1/4 teaspoon ground cinnamon
1/2 cup canned black beans, rinsed and drained
1/2 box dried spaghetti pasta (about 8 ounces)
Red chile pepper flakes, for garnish
Grated pecorino, for garnish
Grated Cheddar cheese, for garnish
Fresh basil, sage and parsley, chopped, for garnish

Steps:

  • Heat a large saute pan over medium heat and add the olive oil. Brown the ground beef, using a wooden spoon to break it up, then remove the browned beef from the pan. In the same pan, add the onion, celery, and carrot. Add more olive oil, if needed. Add the ground beef back in the pan and add the broth. Stir to deglaze the pan. Add the tomato puree and let it simmer until reduced by 1/3. Add the cumin and cinnamon, and then the beans. Cook the mixture for 2 minutes.
  • While the sauce is cooking, bring a large pot of salted water to a boil and cook the pasta according to package directions, or until al dente. Drain the pasta and mix with the meat sauce. Top with the grated pecorino, Cheddar cheese, and a sprinkle of red pepper flakes, basil, sage, and parsley.

1 cup chicken broth
1 (4 pound) whole chicken, rinsed and patted dry
½ cup butter, cut into 1 tablespoon sized pieces
2 navel oranges, halved
salt and pepper to taste
2 cloves garlic, minced
½ cup butter, melted
2 sprigs fresh rosemary
2 sprigs fresh thyme
2 sprigs fresh sage

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Pour the chicken broth into a small roasting pan, and set aside.
  • Loosen the skin from the breasts and thighs of the chicken. Stuff the butter pieces evenly underneath the skin of the chicken, and place into the roasting pan. Squeeze the orange halves over the chicken, and stuff the orange halves into the chicken cavity. Tie the legs together with kitchen twine. Sprinkle the chicken with salt and pepper to taste, then rub in the minced garlic. Drizzle the melted butter all over the chicken, then lay the herb sprigs onto the breast and around the legs.
  • Cover the dish with aluminum foil, and bake in the preheated oven for 20 minutes. Uncover and baste the chicken with the pan juices. Continue cooking until the chicken is no longer pink, or until a meat thermometer inserted into the thickest part of the thigh reads 165 degrees F (74 degrees C), 1 to 2 hours. Baste the chicken every 10 to 15 minutes after you uncover it. Once cooked, allow the chicken to rest out of the oven for 10 minutes before slicing.
