Steps:
- In a small bowl, beat sugar and oil until blended. Beat in egg and molasses. Combine the flour, baking soda, cinnamon, salt, ginger and cloves; gradually add to sugar mixture and mix well. Cover and refrigerate at least 2 hours., Preheat oven to 350°. Shape dough into 1-in. balls; roll in confectioners' sugar. Place 2 in. apart on baking sheets coated with cooking spray; flatten slightly. Bake 7-9 minutes or until set. Remove to wire racks to cool.

MOLASSES KRACKLE COOKIES
Steps:
- Preheat the oven to 375 degrees F. Line a baking sheet with parchment paper.
- In a stand mixer fitted with the paddle attachment, cream together the sugar, shortening and butter until light and fluffy. Add the molasses and egg, and mix to combine.
- In a separate bowl, mix together the flour, baking soda, cloves, ginger and salt. With the mixer set to low speed, add the dry ingredients to the sugar mixture, and mix until combined. Chill the dough for 1 hour.
- Use a 2-tablespoon cookie scoop to portion the dough, and then roll the portions into balls. Then roll in the sanding sugar and place on the prepared baking sheet. Bake for 10 to 12 minutes.
SOFT COFFEE MOLASSES CRACKLE COOKIES
I have not tried this recipe yet, but my mom makes it often. She got it from a cookbook that was given as a gift to her.

Steps:
- Combine flour, soda,ginger,salt and nutmeg in bowl;set aside.
- Using medium speed of an electric mixer, beat together brown sugar and shortening until fluffy.
- Beat in molasses just till blended.
- Dissolve coffee in water and add to brown sugar mixture.
- Add egg and vanilla;beat just till blended.
- Stir in flour mixture just till combined.
- Cover and refrigerate dough until firm, about 4 hrs.
- Shape dough into balls, using 1 tbsp dough.
- Roll balls in sugar.
- Place balls 2 inches apart on lightly greased sheet.
- Bake at 350 for 12-14 minutes or till they are crackled on top.
- Cookies will be soft to the touch;do not overbake.
- let cookies stand for 1 minute on sheets.
- Place on rack to cool.
- Store in airtight container.
- May be frozen.

- Heat oven to 325°F. In large bowl, beat brown sugar, shortening, molasses and egg with electric mixer on medium speed, or mix with spoon. Stir in remaining ingredients except granulated sugar.
- Shape dough by rounded tablespoonfuls into 1 1/2-inch balls. Dip tops into granulated sugar. On ungreased cookie sheet, place balls, sugared sides up, about 2 inches apart.
- Bake 13 to 16 minutes or just until set and cookies appear dry. Immediately remove from cookie sheet to cooling rack.

I've tried a lot of molasses cookies since I was a girl on the farm, and as far as I'm concerned, these are simply the best. To keep them soft and chewy, store in a tightly covered container along with a slice of raw apple. These cookies freeze beautifully, too...if you can keep them away from "snitchers" long enough to get them in the freezer!
