SODA JERK BEANS
I got this recipe out of the July 2006 issue of Bon Appetit. I haven't made this yet but it looked so easy to do...basically just dump some cans of beans into a pot and add a few more ingredients. We love bean dishes as a side when we grill out and I thought this looked like a great one.

Steps:
- Place all ingredients in a heavy large pot.
- Bring to a boil over medium-high heat, stirring until sugar dissolves.
- Reduce heat to medium and simmer uncovered until juices are thick, stirring gently and frequently to prevent burning, about 20 minutes.
- Season with salt and pepper.

COCA-COLA BAKED BEANS

Steps:
- Preheat the oven to 325 degrees.
- In a large bowl, combine the beans, onion, sugar, ketchup, Coke, dry mustard, and salt and pepper; stir till well blended. Scrape the mixture into a large, shallow baking dish.
- Drape the bacon slices evenly over the top and bake uncovered till the bacon is thoroughly cooked and the beans are bubbling, 1 to 1 1/4 hours.

Steps:
- Soak beans overnight in cold water (enough to cover the beans).
- In the morning, pour off water and boil beans with baking soda in water until skins crack when blown upon.
- Cut onion in quarters and put in bottom of large casserole dish.
- Add beans.
- Put bacon on top of beans.
- Mix together sugar, molasses, mustard and salt with a pint of water.
- Pour over beans.
- Bake at 300 degrees for 6 hours or more.
- Can be frozen!

BOSTON BAKED BEANS
A wonderful old-fashioned baked bean flavor. This recipe has served by family for 29 years and originally came from my mother-in-law. It tastes great served with fresh cornbread or biscuits and honey. Although you need to allow time for soaking and simmering the beans, this recipe is still quite easy.

Steps:
- Soak beans overnight in cold water. Simmer the beans in the same water until tender, approximately 1 to 2 hours. Drain and reserve the liquid.
- Preheat oven to 325 degrees F (165 degrees C).
- Arrange the beans in a 2 quart bean pot or casserole dish by placing a portion of the beans in the bottom of dish, and layering them with bacon and onion.
- In a saucepan, combine molasses, salt, pepper, dry mustard, ketchup, Worcestershire sauce and brown sugar. Bring the mixture to a boil and pour over beans. Pour in just enough of the reserved bean water to cover the beans. Cover the dish with a lid or aluminum foil.
- Bake for 3 to 4 hours in the preheated oven, until beans are tender. Remove the lid about halfway through cooking, and add more liquid if necessary to prevent the beans from getting too dry.

SODA BAKED BEANS
This recipe can also be done in a crockpot, or it can be cooked in the oven! Don't use the sugar-free soda for this. The fresh garlic can be replaced with 1 teaspoon garlic powder if desired, this is best if made a day ahead to blend the flavors, refrigerate then warm over low heat on top of the stove.

- In a large pot heat oil over medium heat; add in the onions, garlic, jalapeno pepper, curry powder and cayenne; saute for about 4 minutes.
- Add in the chopped smoked sausage; saute for about 2-3 minutes.
- Add in all the remaining ingredients; bring to a boil, stirring until the brown sugar dissolves.
- Reduce the heat to medium-low and simmer uncovered until thickened, stirring occasionally for about 1 hour (or you can simmer for more time if desired).
