BAKED CINNAMON FRENCH TOAST
"There's no last-minute preparation and you can serve several people at once with this casserole," reports bed-and-breakfast owner Lo Ann Brennock of Cloverdale, California. "My guests love the smooth custardy bottom layer topped with thick slices of cinnamon bread."

- Line the bottom of a greased 13x9-in. baking dish with six slices of bread. butter remaining bread; place with butter side up over bread in pan. In a bowl, beat eggs. Add milk, cream, sugar and vanilla; mix well. Pour over bread; let stand for 15 minutes. Place the dish in a larger baking pan. Pour boiling water into large pan to a depth of 1 in. Bake, uncovered, at 375° for 40 minutes or until a knife inserted in the center comes out clean. Let stand for 10 minutes before serving. Top with preserves and whipped cream if desired.

CINNAMON BAKED FRENCH TOAST
Steps:
- Grease a 9 x 13-inch baking pan with butter. Tear bread into chunks (or cut into cubes) and evenly distribute in the pan.
- In a medium sized bowl, mix together eggs, milk, cream, sugar, and vanilla. Pour evenly over the bread. Cover tightly and store in the fridge for several hours or overnight.
- In a separate bowl, mix flour, brown sugar, cinnamon, and salt. Add nutmeg if desired. Add butter pieces and cut them into the dry mixture until mixture resembles fine pebbles. Store in a Ziploc in the fridge.
- When you're ready to bake the casserole, preheat oven to 350° F. Remove casserole from the fridge and sprinkle crumb mixture over the top. (If you're using fruit, sprinkle on before the crumb mixture.) Bake for 45 minutes for a softer, more bread pudding texture. Bake 1 hour or more for a firmer, less liquid texture.
- Scoop out individual portions. Top with butter and drizzle with maple syrup.
BAKED CINNAMON SUGAR FRENCH TOAST
The butter is melted on a baking sheet and sprinkled with a mixture of cinnamon and sugar. French bread is then dipped into batter, placed on sugar mixture and baked. Serve sugar side up. Delicious!

- Preheat an oven to 200 degrees F, and place a rack on a sheet pan.
- Whisk the milk and eggs in a glass pie or casserole dish until evenly combined.
- Whisk the sugar and cinnamon in a small bowl.
- Heat a large skillet over medium heat. Add about 1/2 a tablespoon of butter to the skillet, swirling the pan to coat the surface.
