FROSTY SMOKED SALMON SPREAD
Absolutely irresistible! This do-ahead appetizer is a holiday hit!

Steps:
- Mix 8-ounce package cream cheese, the salmon and onions thoroughly. Shape mixture into a ball. Frost with whipped cream cheese. Sprinkle with nuts.
- Cover and refrigerate at least 2 hours until chilled. Serve with crackers. Store tightly covered in refrigerator up to 2 weeks or in freezer up to 4 weeks.

Steps:
- 1. Mix 8 ounce & 3 ounce packages cream cheese, the salmon, onions, lemon juice, mustard and horseradish. Cover and refrigerate at least 2 hours but no longer than 3 days.
- 2. Shape two-thirds of the salmon mixture into a ball; place on serving plate. Shape remaining salmon mixture into a ball; place on top of larger ball. Cover loosely and refrigerate about 1 hour or until firm.
- 3. Frost snowman with whipped cream cheese before serving. Garnish as desired with decorations. Serve with crackers, bagels or vegetables. About 3 cups spread.
- 4. Decorate with fresh rosemary, dried cranberries (crown); chopped olive pieces or raisings (eyes and buttons); carrot (nose); pimento or rred bell peppers (mouth); radiccio or carrot ribbon (scarf); asparagus or celery (arms).

- In a small bowl, beat cream cheese and butter until smooth. Add the dressing mix, mustard and garlic; mix well. Shape into two balls, one slightly larger than the other. Cover and refrigerate for at least 4 hours., Remove from the refrigerator 15 minutes before serving. On a serving plate, stack the small cheese ball on top of the larger ball to make a snowman. , Cut ends from olives to make small circles; attach to snowman for eyes and buttons. Insert pretzel sticks for arms. Cut top hat from pepper; place on top of snowman. Trim pepper to make a nose; insert into face. Serve with crackers and vegetables.

- Cream the cheese in an electric mixer fitted with a paddle attachment until just smooth. Add the sour cream, lemon juice, dill, horseradish, salt, and pepper, and mix. Add the smoked salmon and mix well. Chill and serve with crudites or crackers.
- If you can find it, I prefer Norwegian salmon; it's drier and less salty than other smoked salmon.

- Line 2-cup bowl or mold with plastic wrap. Beat cream cheese in medium bowl with electric mixer on medium speed until smooth. Stir in salmon, 2 tablespoons of the red onion, 1 tablespoon of the dill weed and the mustard.
- Spoon into bowl lined with plastic wrap, pressing firmly. Cover and refrigerate at least 2 hours but no longer than 24 hours.
- Turn bowl upside down onto serving plate; remove bowl and plastic wrap. Garnish spread with remaining 1 tablespoon red onion, 1 tablespoon dill weed and the capers. Serve with crackers.
