Snowball cookies are buttery and nutty with an airy, melt-in-your-mouth texture.

2 ¼ cups flour
¾ cup walnuts (finely chopped)
½ teaspoon salt
1 cup butter (unsalted, softened)
1 teaspoon vanilla
½ cup powdered sugar (plus extra for dusting)

Steps:

  • Preheat oven to 400°F. Line a baking sheet with parchment paper.
  • Combine flour, walnuts and salt in a small bowl. Set aside.
  • Beat butter, vanilla, and powdered sugar with a mixer until creamy.
  • Turn the mixer to low and add flour mixture until combined.
  • Form dough into 1" balls and place on prepared pan.
  • Bake 8-10 minutes or until bottom edges of cookies are lightly browned.
  • Cool a few minutes until you're able to handle the cookes. Roll in powdered sugar and place on a rack to cool completely.

These are technically Mexican Wedding Cakes or Russian Teacakes, but my grandmother gave up on us calling them that years ago!

1 cup butter
½ cup confectioners' sugar
¼ teaspoon salt
1 teaspoon vanilla extract
2 ¼ cups all-purpose flour
1 cup chopped pecans
⅓ cup confectioners' sugar for dusting, or as needed
¼ cup finely crushed peppermint candy canes

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Cream the butter with 1/2 cup of the confectioners' sugar and the vanilla. Mix in the flour, pecans, and salt. Roll about 1 tablespoon or so of dough into balls and place on an ungreased cookie sheet.
  • Bake in preheated oven until bottoms are golden, about 15 minutes. Do not allow these cookies to get too brown: it's better to undercook them than to overcook them. While cookies are still hot, roll them in confectioners' sugar. Once they have cooled, roll them in confectioners' sugar once more.

1 cup butter
½ cup white sugar
1 tablespoon vanilla extract
2 cups sifted all-purpose flour
¾ teaspoon salt
1 cup chopped pecans
¾ cup sifted confectioners' sugar

Steps:

  • Preheat oven to 325 degrees F (165 degrees C.) Lightly butter 2 baking sheets, or line with parchment paper.
  • Cream the butter, sugar, and vanilla until light and fluffy. Sift together the flour and salt; mix into the butter mixture. Stir in the pecans. Dust your hands with a little of the confectioners' sugar and roll the dough into 1 inch balls.
  • Place 2 inches apart on the baking sheets and bake for 25 minutes or just until brown. Put on racks to cool for 15 minutes, then roll in the confectioners sugar.

A no-bake dessert using a ready-made angel food cake and ingredients that can be easily found in any store. It looks like a large snowball when finished.

1 (10 inch tube pan) angel food cake
6 cups frozen whipped topping, thawed
1 (20 ounce) can crushed pineapple in heavy syrup, drained with syrup reserved
2 tablespoons lemon juice
1 cup white sugar
1 (10 ounce) package flaked coconut
2 (.25 ounce) packages unflavored gelatin
4 tablespoons water
1 cup boiling water

Steps:

  • Line a 4 quart round mixing bowl with parchment paper.
  • Break cake up into small bite-sized pieces.
  • Drain the crushed pineapple, reserve the syrup. You should have 1 cup of syrup if not add enough water to make 1 cup.
  • Dissolve the gelatin in the 4 tablespoons of cold water. Add the boiling water, pineapple syrup, sugar and lemon juice. Mix well and place in the refrigerator until mixture just starts to thicken.
  • Add the crushed pineapple to the gelatin mix and then fold in 4 cups of the whipped topping.
  • Place a layer of cake pieces, then a layer of the pineapple mixture in the prepared bowl. Continue until all the cake and pineapple mixture is used up. Refrigerate for at least 12 hours or overnight.
  • Turn the chilled cake out onto a serving platter and frost it with the remaining whipped topping and sprinkle with the coconut.

1 cup chopped pecans

Steps:

  • In a large bowl, mix the thawed frozen whipped topping, sour cream, sugar, lemon juice, pineapple, maraschino cherries, bananas and pecans. Chill in the refrigerator approximately 2 hours before serving.

1/4 c softened butter
2 tsp vanilla extract
1 1/4 c sugar
2 can(s) crushed pineapple, 20 oz each
1 c walnuts
2 box vanilla wafers
2 box Dream Whip
2 bag(s) coconut

Steps:

  • 1. Create the filling: Mix 1/4 cup of softened butter, 1 tsp of vanilla extract, 1 cup of sugar, walnuts, and crushed pineapple (well-drained).
  • 2. Stack each snowball 4 wafers-high putting filling in between.
  • 3. Mix the frosting: Prepare 2 boxes of Dream Whip according to directions on the box and add in 1/4 cup sugar and 1 tsp vanilla extract. You may need less frosting given that vanilla wafers are made so small these days (they were a lot bigger when I first made this recipe 55 yrs. ago!).
  • 4. Spread the frosting generously over each snowball. Roll them in coconut. Crown with a cherry on top. Refrigerate for 24 hrs. Then, they can be frozen.
