SNICKERDOODLE CHEX MIX
Make it Gluten Free! Each serving is 1/2 cup. I found this recipe in the Sunday coupons. I have not tried this recipe, but I'm posting it for safe keeping. I thought this would be great for the kids.

Steps:
- In small bowl, mix sugar and cinnamon; set aside. In large microwavable bowl, mix cereals and popcorn.
- In 1-cup microwavable measuring cup, microwave butter uncovered on High about 40 seconds or until melted. Pour over cereal mixture, stirring until evenly coated.
- Microwave uncovered on High 2 minutes, stirring after 1 minute. Sprinkle half of the sugar mixture evenly over cereal mixture; stir. Sprinkle with remaining sugar mixture; stitr. Microwave 1 minute longer. Spread on waxed paper or paper towels to cool. Store in airtight container.

- Measure cereal in large microwaveable bowl. Line a cookie sheet with waxed paper or foil.
- In 2-cup microwavable measuring cup, microwave butter uncovered on High 30 seconds or until melted. Add sugar and corn syrup; microwave uncovered on High 30 seconds until mixture is heated and can be stirred smooth. Stir in vanilla. Pour over cereal, stirring until evenly coated.
- Microwave uncovered on High 2 minutes, stirring after1 minute. Sprinkle with powdered sugar; mix well.
- Spread on waxed paper or foil. Microwave white chocolate on High 30 seconds or until it can be stirred smooth; drizzle over top; sprinkle with edible glitter or colored candies.

- Place rice chex into a large bowl. Set aside. In a small bowl, stir together granulated sugar and cinnamon.
- In a double boiler, melt butter and chocolate together until completely smooth. Pour over cereal and stir to coat as evenly as possible. Do your best to work quickly so everything gets coated as evenly as possible.
- Sprinkle cinnamon sugar overtop the coated chex and toss to coat. Spread onto a parchment paper lined baking sheet to harden. Refrigerate 5 minutes. Store in airtight container for up to 5 days at room temperature or 10 days in the refrigerator.
