GRILLED LAMB WITH SALSA VERDE



Grilled Lamb with Salsa Verde image

1/4 cup salted capers, soaked for 30 minutes, drained, coarsely chopped
1/2 cup chopped fresh Italian flat leaf parsley
1/3 cup chopped scallions
1/2 cup chopped fresh mint leaves
1/2 cup fresh lemon juice
2 teaspoons grated lemon peel
1 cup olive oil, preferably extra-virgin
2 teaspoons dried crushed red pepper flakes
3 1/2 teaspoons coarse salt
1 1/2 teaspoons freshly ground black pepper
1 (4 1/2 to 5-pound) butterflied boned lamb shoulder
1 tablespoon minced garlic
Nonstick cooking spray

Steps:

  • Stir the first 7 ingredients and 1 teaspoon red pepper flakes in a large bowl to blend. Whisk in 1 1/2 teaspoons of salt and 1/2 teaspoon of black pepper. Set the salsa verde aside. Place the lamb in a 15 by 10 by 2-inch glass baking dish. Rub the minced garlic, remaining 2 teaspoons of salt, 1 teaspoon of black pepper, and remaining 1 teaspoon red pepper flakes all over lamb. Pour 1/2 cup of salsa verde over the lamb, turning the lamb to coat evenly. Use immediately, or cover the dish and remaining salsa verde separately with plastic wrap and refrigerate up to 1 day.
  • Spray the grill rack with nonstick spray and prepare the barbecue (medium-high heat). Grill the lamb until a meat thermometer inserted into the thicker parts registers 130 degrees F for medium-rare, turning occasionally, about 40 minutes. Transfer the lamb to a work surface and let rest 15 minutes.
  • Cut the lamb across grain into thin slices. Arrange the lamb slices on a platter. Serve the remaining salsa verde alongside.

250g ripe vine tomatoes
1 small red onion
1 red chilli
2 tbsp chopped fresh coriander
4 lamb leg steaks

Steps:

  • Make the salsa: Halve the tomatoes, then squeeze out and discard the seeds - this seems a bit wasteful, but it really intensifies the flavour of the salsa. Finely chop the tomato flesh and onion. Halve, seed and finely chop the chilli. Mix the tomato, onion and chilli in a bowl with the coriander and some salt and pepper. At this point the salsa can be covered and chilled for up to 2 days, but bring it back to room temperature before serving.
  • Cook the lamb: Season the lamb steaks on both sides and rub with a little olive oil. Barbecue or cook on a hot griddle for 3-4 minutes each side for medium, a little longer if you prefer your lamb well done. Serve each leg steak with a dollop of the salsa, new potatoes and a big crunchy salad.

1 medium red onion, diced
8 ounces lean ground lamb
1/4 teaspoon onion powder
1/3 teaspoon black pepper
1 (16-ounce) can pineapple chunks, roughly chopped
1 cup finely chopped green pepper
5 large tomatoes
1 cucumber peeled and diced
1/4 cup chopped cilantro leaves
12 tablespoons crumbled feta cheese
1 package pita bread triangles or chips

Steps:

  • Coat a large saute pan with oil and over medium heat, saute the onions until soft. Add the ground lamb and cook until browned, breaking up the chunks with a wooden spoon. Drain well and place in a serving bowl. Stir in the onion powder and black pepper. Allow to cool and then add pineapple, green pepper, tomatoes, cucumber, cilantro and feta cheese. Adjust the seasoning and serve with pita bread or crackers.

Butterflied Leg of Lamb With Lemon Salsa Verde image

One of the joys of a butterflied leg of lamb is that it satisfies lovers of rare and medium-well meat at the same time. This is because of its uneven thickness. When you spread the meat out and roast or grill it at high heat, the thicker parts stay pinker than the thinner bits. Everyone ends up happy. Here, the meat is seasoned with cumin, lemon, chiles and plenty of fresh herbs, and is served with a mixed-herb salsa verde perked up with preserved lemon. It makes a particularly zesty main course for any large gathering. If you would rather grill the lamb, go right ahead. It will take about 12 to 17 minutes per side when grilled directly over the coals or flames.

1 boneless butterflied leg of lamb, 5 to 6 pounds, well trimmed
2 1/2 teaspoons coarse kosher salt, more as needed
1 1/2 teaspoons black pepper
7 garlic cloves, grated on a Microplane or minced
1/4 cup chopped fresh thyme leaves
1/4 cup chopped fresh oregano or marjoram leaves
2 teaspoons ground cumin
1 teaspoon Turkish chile such as Marash or Urfa (or use crushed red pepper flakes)
Finely grated zest of 2 lemons
2 1/2 tablespoons fresh lemon juice, more as needed
5 tablespoons extra-virgin olive oil
3 to 4 tablespoons minced preserved lemon, to taste
3/4 cup chopped parsley
1/2 cup chopped cilantro
1/2 cup chopped mint
2 scallions, white and green parts, thinly sliced

Steps:

  • Pat lamb dry with paper towels and place on a rimmed baking sheet. Season all over with salt and pepper.
  • Set aside 1 teaspoon of the garlic. In a bowl, combine remaining garlic with thyme, oregano or marjoram, cumin, chile, lemon zest and 2 tablespoons lemon juice. Drizzle in about 1 tablespoon oil, just enough to create a sandy paste. Rub mixture all over lamb. Cover with plastic wrap and let marinate for at least 1 hour or, even better, overnight in the refrigerator.
  • Prepare the salsa verde: In a small bowl, combine a pinch of salt, the remaining teaspoon garlic, remaining 1/2 tablespoon lemon juice, 3 tablespoons preserved lemon, parsley, cilantro, mint and scallion and stir well. Drizzle in remaining oil. Season with more preserved lemon, lemon juice, salt and pepper to taste. Let the mixture sit for at least 30 minutes before serving to allow the flavors to meld and mellow.
  • Heat oven to 450 degrees. Roast lamb without turning for 22 to 35 minutes, until a thermometer inserted into the thickest part reads 120 degrees for rare and 130 for medium. Let rest for 10 minutes before slicing and serving with the salsa verde.

12-18 lamb chops , depending on size
2 garlic cloves , thinly sliced
rosemary sprigs
290g jar roasted red peppers
1 garlic clove , roughly chopped
1 red chilli , roughly chopped
generous handful mint
1 tbsp lemon juice
3 tbsp olive oil

Steps:

  • Season the chops all over with salt and pepper. Make a slit between the bone and meat in each chop, then push a sliver of garlic and small sprig of rosemary into each.
  • For the salsa, put the peppers in a mini chopper or food processor with the garlic, chilli, mint and lemon. Blitz until finely chopped, but not puréed. Add the oil and blitz briefly to mix. Tip into a bowl and leave at room temperature until serving time.
  • Grill or barbecue the chops for 5-7 mins each side until brown, then serve on a platter with the salsa (stir before serving).

Lamb Chops with Greens and Sorrel Salsa Verde image

8 1 1/2-2"-thick lamb loin chops (about 3 pounds)
Kosher salt, freshly ground pepper
2/3 cup sorrel or spinach leaves
1/3 cup mint leaves
1/3 cup parsley leaves
1 tablespoon finely grated lemon zest
1 teaspoon crushed red pepper flakes
5 garlic cloves, thinly sliced, divided
1/3 cup plus 2 tablespoons olive oil
4 ounces king oyster or maitake mushrooms, cut into 1/2" pieces
1 shallot, thinly sliced
1 bunch mustard greens, ribs and stems removed, leaves torn into pieces
1 tablespoon white balsamic vinegar
1 tablespoon fresh lemon juice (add up to 3 tablespoons total if using spinach)

Steps:

  • Pat lamb dry; season with salt and pepper. Let sit at room temperature 1 hour.
  • Meanwhile, puree sorrel, mint, parsley, lemon zest, red pepper flakes, about 1 garlic clove, and 1/3 cup oil in a blender, scraping down sides as needed, until mixture is smooth. Season salsa verde with salt and pepper; set aside.
  • Prepare grill for high heat (or heat a grill pan over high). Grill chops, turning every 2 minutes or so, until well browned and beginning to char and a thermometer inserted into the thickest part registers 125°, 8-10 minutes. Let lamb rest at least 10 minutes.
  • While lamb is resting, heat remaining 2 tablespoons oil in a large skillet over medium-high. Cook mushrooms, tossing occasionally, until well browned, about 4 minutes. Transfer to a large plate.
  • Reduce heat to medium and add shallot and remaining garlic to skillet. Cook, stirring occasionally, until shallot is softened and starting to brown, about 2 minutes. Add greens; season with salt and pepper. Cook, stirring occasionally, until wilted and bright green, about 2 minutes. Return mushrooms to skillet and toss to combine. Stir in vinegar; season with salt and pepper.
  • Stir lemon juice into salsa verde; taste and adjust seasoning with salt and pepper. Serve lamb chops over mustard greens with salsa verde.
  • Do ahead: Salsa verde (without lemon juice) can be made 1 day ahead. Cover and chill. Add lemon juice before serving.

LAMB CHOPS WITH PISTACHIO SALSA VERDE

This recipe was inspired by my dad, Mark Boone, who loves lamb chops and pistachios. In this dish, the nuts add richness to a riff on a classic salsa verde. The bright, herby sauce is the perfect accompaniment to grilled lamb chops.

2 medium shallots, coarsely chopped
1 garlic clove, coarsely chopped
1 cup (packed) fresh parsley leaves with tender stems
1/2 cup (packed) fresh mint leaves with tender stems
1/2 cup unsalted, toasted pistachios
1/4 cup fresh lemon juice
2 tablespoons capers
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon kosher salt
1/2 cup extra-virgin olive oil
For the lamb chops:
12 (1-inch-thick) lamb rib or loin chops (about 2 pounds)
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Make the Pistachio Salsa Verde:
  • Pulse shallots, garlic, parsley, mint, pistachios, lemon juice, capers, red pepper flakes, and salt in a food processor until coarsely chopped. Scrape into a medium bowl and stir in oil.
  • Cook the lamb chops:
  • Season lamb chops with salt and pepper; allow to come to room temperature.
  • Prepare a grill or grill pan for medium-high heat. Grill chops, working in batches if needed, until an instant-read thermometer inserted into the thickest part of the lamb registers 125°F for medium-rare, 2-3 minutes per side. Serve with Pistachio Salsa Verde.

  • Pistachio Salsa Verde can be stored and chilled in an airtight container for up to 3 days.

3/4 cup Marsala wine or 1/2 cup chicken broth, 1/4 cup white grape juice and 1 tablespoon white wine vinegar
1 garlic clove, minced
1 tablespoon dried oregano
1 tablespoon olive oil
1 boneless leg of lamb (2-1/2 pounds), rolled and tied
1/2 teaspoon salt
1/4 teaspoon pepper
1 pound fresh mushrooms, quartered

Steps:

  • In a small bowl, combine the wine, garlic and oregano; set aside. Rub oil over lamb, then sprinkle with salt and pepper. Place roast on a rack in a shallow roasting pan; spoon some wine mixture over roast. Set aside remaining wine mixture., Bake, uncovered, at 325° for 1 to 1-1/2 hours or until meat reaches desired doneness (for medium-rare, a thermometer should read 135°; medium, 140°; medium-well, 145°), basting occasionally with some remaining wine mixture. Remove from the oven; cover loosely with foil for 10-15 minutes., Meanwhile, pour pan drippings into a measuring cup; skim fat. In a large skillet coated with cooking spray, saute mushrooms until tender. Add pan drippings and any remaining wine mixture; heat through. Slice lamb and serve with mushroom sauce.
