1-1/2 pounds beef top round steak, cut into strips
1/3 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon pepper
1 large onion, sliced
1 large green pepper, sliced
1 can (14-1/2 ounces) diced tomatoes, undrained
1 jar (4 ounces) sliced mushrooms, drained
3 tablespoons reduced-sodium soy sauce
2 tablespoons molasses
Hot cooked egg noodles, optional

Steps:

  • In a 3-qt. slow cooker, toss beef with flour, salt and pepper. Stir in all remaining ingredients except noodles., Cook, covered, on low until meat is tender, 6-8 hours. If desired, serve with noodles.

1 pound ground beef
1 egg
¼ cup bread crumbs
⅛ teaspoon ground black pepper
½ teaspoon seasoned salt
½ teaspoon onion powder
½ teaspoon garlic powder
1 teaspoon Worcestershire sauce
1 tablespoon vegetable oil
1 cup thinly sliced onion
2 tablespoons all-purpose flour
1 cup beef broth
1 tablespoon cooking sherry
½ teaspoon seasoned salt

Steps:

  • In a large bowl, mix together the ground beef, egg, bread crumbs, pepper, salt, onion powder, garlic powder, and Worcestershire sauce. Form into 8 balls, and flatten into patties.
  • Heat the oil in a large skillet over medium heat. Fry the patties and onion in the oil until patties are nicely browned, about 4 minutes per side. Remove the beef patties to a plate, and keep warm.
  • Sprinkle flour over the onions and drippings in the skillet. Stir in flour with a fork, scraping bits of beef off of the bottom as you stir. Gradually mix in the beef broth and sherry. Season with seasoned salt. Simmer and stir over medium-low heat for about 5 minutes, until the gravy thickens. Turn heat to low, return patties to the gravy, cover, and simmer for another 15 minutes.

Tender steak smothered in a rich brown gravy with onions and peppers

1 pound round steak (thin (less than 1"inch thick))
⅓ cup oil
2 cups beef broth
1 medium yellow onion (cut into thin slices)
1 medium bell pepper (cut into thin slices)
1 cup flour (all-purpose)
½ teaspoon salt (kosher)
½ teaspoon garlic powder
½ teaspoon ground thyme
1 tablespoon Worcestershire
water

Steps:

  • In a flat pan or pie dish, combine flour, salt, ground thyme and garlic powder; set aside
  • Thinly slice onion and bell pepper; set aside
  • Heat oil on medium in stockpot
  • Slice beef into 4 pieces; lightly salt and pepper
  • Dredge beef through flour mixture and place in hot oil; cook 5 minutes on each side; remove beef and set aside
  • Use a wooden spoon to scrape up remnants in stockpot; stir in beef broth; continue to scrape bottom of pan
  • Add Worcestershire sauce and 3 tablespoons of the reserved dredging flour to the broth; whisk till smooth
  • Add browned beef back to stockpot; top with sliced onions and sliced peppers; add enough water to barely cover the meat;reduce heat to simmer and cover; cook until meat is tender (about 1 hour)
  • Serve over prepared rice

1 lb ground sirloin
1 (7 ounce) can chipotle chiles in adobo
cooking spray or olive oil
2 cups thinly sliced onions
1/3 cup beef consomme or 1/3 cup broth
1 teaspoon low sodium soy sauce
1/2 teaspoon cornstarch

Steps:

  • Divide sirloin into 4 equal portions, shaping each into a 1/2 inch thick patty.
  • Drain chipotles through a sieve over a bowl to catch sauce.
  • Reserve 1/4 cup sauce.
  • Save the chipotle peppers for another use.
  • Heat a large nonstick skillet coated with cooking spray over medium high heat.
  • Add patties and onion; cook 5 minutes on each side.
  • Add adobo sauce and consomme; bring to a boil.
  • Cover, reduce heat, and simmer 10 minutes.
  • Combine soy sauce and cornstarch, stir well.
  • Add to pan; bring to boil.
  • Cook 1 minute or until thick.

1/2 teaspoon cayenne
2 1/4 pounds thin top round steak, sliced into strips about 1/4-inch thick
1 1/2 tablespoons Essence, recipe follows
1/2 teaspoon freshly ground black pepper
1 tablespoon freshly chopped parsley leaves
1/4 cup vegetable oil
3 tablespoons all-purpose flour
White rice, for serving, optional
3 cups chicken broth, divided
6 cups sliced onions
2 cups sliced red and green bell peppers
3 teaspoons salt
1 tablespoon dried oregano
2 1/2 tablespoons paprika
1 tablespoon dried thyme
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper

Steps:

  • Combine the meat with the Essence and flour in a mixing bowl and toss to combine.
  • Heat the oil in a large cast iron Dutch oven or high-sided skillet over medium-high heat and brown the meat, in batches, until browned on all sides, 4 to 5 minutes. Add 2 cups of the chicken broth and stir, scraping the bottom and sides of the pan to loosen any browned particles. Add the onions, bell peppers, salt, cayenne, and black pepper. Cook, stirring frequently, for 6 to 8 minutes, or until the vegetables are wilted. Reduce the heat to medium. Cover and cook, stirring occasionally, for 15 minutes. Add the remaining cup of broth and continue to cook, uncovered, for about 1 hour longer, or until the meat is very tender and the gravy is thickened and flavorful. Add the parsley and serve immediately over white rice, if using.

Steps:

  • Season round steak with salt, black pepper and garlic powder. Brown steak in oil until very brown on both sides, be patient, this step is very important to the success of your gravy. When very brown, take steak out and put onion in to brown. Add steak back to the pot, add mushrooms and cover with water. Cook on medium heat until steak is very very tender, you may need to add water as you go. If you want to thicken the gravy, sprinkle some wondra at the end and boil.

ground beef (can use lean ground round)
1 (8 ounce) can cream of mushroom soup
1 cup water (1/2 to 1 cup) or 1 cup milk (1/2 to 1 cup)
1 (1 ounce) package brown gravy mix (packet size varies)

Steps:

  • Dice onion and add to the ground beef. (If using onion soup mix, blend well in ground beef.).
  • Mix and form into patties.
  • Fry the patties in skillet on medium heat until cooked to your liking.
  • I usually fry until they are medium-well to well done.
  • While patties are cooking, mix 1 can cream of mushroom soup, 1/2 to 1 cup water or milk, and brown gravy packet/mix in a bowl, stirring well.
  • After patties are browned and ready, add the soup mixture to the skillet. Reduce heat to simmer; spread the mixture over the patties and turn them once or twice as the mixture warms.
  • Stir mixture occasionally.
  • Simmer for 5 to 10 minutes or until gravy is good and hot.
  • Serve with mashed potatoes, your choice of veggies, a good salad, hot rolls or bread, and a cold glass of iced tea.
  • Of course, this recipe can be doubled. Serving size depends on how hungry your family or company is! ;).
  • Kind of a "blue-plate" special!

2 teaspoons salt
1/2 teaspoon black pepper, Ground
1 teaspoon red pepper, Ground

1/2 cup vegetable oil
3 medium onions, chopped
2 bell peppers, chopped
1 celery rib, chopped
1 cup beef stock or 1 cup water

Steps:

  • Season the meat with one half of the salt and peppers.
  • Dust with flour on all sides.
  • Heat the oil in a Dutch oven or other large heavy pot over medium-high heat, add the meat, and brown well on all sides.
  • Remove the meat and pour off all but 1 teaspoon of the oil.
  • Add half the onions, bell peppers, celery, and the other half of the seasonings, and the stock or water.
  • Stir well and reduce the heat to the lowest possible point.
  • Return the meat to the pot and cover with the remaining vegetables.
  • Cover and let cook until the meat is very tender, about 1 hour and 15 minutes.
  • Serve the meat in slices, with rice alongside and the gravy over all.
  • When you try this recipe with other kinds of meat, be sure to adjust the cooking times accordingly--let tenderness be your guide.
  • For extra flavorful meat, try larding with slivers of garlic before smothering.

2 tablespoons minced onion
1 tablespoon beef base
½ teaspoon black pepper
3 slices white bread
2 pounds lean ground beef
1 (10.75 ounce) can condensed cream of mushroom soup
1 (10.75 ounce) can water
1 dash Worcestershire sauce

Steps:

  • Whisk together the eggs, onion, beef base, and pepper in a bowl. Tear the bread into large pieces, and place into the bowl. Let the bread soak for a few seconds and add the ground beef. Mix the meat into the egg-bread mixture, and form into 8 patties.
  • Heat a large heavy skillet over medium-high heat, and fry the patties until they are browned and the meat is no longer pink in the center, about 8 minutes per side. Set the patties aside.
  • Remove the excess grease from the skillet, and whisk the mushroom soup, water, and Worcestershire sauce together in the skillet until smooth.
