CHEDDAR BACON RANCH CHICKEN SALAD
Chicken salad is a favorite low carb lunch in our house, because it's so simple to make ahead and then grab when you're hungry. We mixed in cheddar, bacon, and green onions and then combined it with a simple ranch dressing.

Steps:
- Add the chicken, bacon, green onions, and cheddar to a large mixing bowl.
- Add the ranch, mayonnaise, garlic powder, and onion powder to a small bowl and stir well to combine.
- Pour the ranch mixture over the chicken and stir well to combine.
- Cover and refrigerate for 2 hours to allow the flavors to meld together.
- Serve cold in a lettuce wrap or on our keto hamburger buns.

CHICKEN BACON RANCH LAYER SALAD
Steps:
- Make Avocado Lime Ranch Dressing per the recipe here.
- To assemble: In a large trifle or glass bowl layer in this order: 1/3 lettuce, 1/2 red pepper, 1/2 poblano pepper, 1/3 corn, 1/2 tomatoes, 1/2 red onion, 1 cup cheese, 1/3 bacon and 1/2 chicken. Drizzle with 1/2 cup prepared dressing.
- Repeat, 1/3 lettuce, 1/2 red pepper, 1/2 poblano pepper, 1/3 corn, 1/2 tomatoes, 1/2 red onion, 1 cup cheese, 1/3 bacon and 1/2 chicken. Drizzle with 1/2 cup prepared dressing. (I recommend using Homemade Avocado Lime Ranch Dressing)
- Top with the final 1/3 lettuce, 1/3 corn, 1/2 cup shredded cheese, 1/3 bacon and sliced green onion. Drizzle with 1/2 cup dressing drizzling around the edge. Arrange egg and tomato wedges on top to garnish.
- Chill for 4 hours, Serve with additional dressing on the side.

CHEDDAR BACON CHICKEN RANCH LAYERED SALAD

Steps:
- In 10-inch skillet, add chicken breasts and enchilada sauce. Cover and cook over medium heat 20 to 25 minutes or until juice of chicken is clear when center of thickest part is cut (at least 165° F).
- Using two forks, shred chicken; refrigerate to cool.
- Just before serving, in 6-quart trifle bowl or glass bowl, layer as follows: Gently transfer chicken mixture to bowl, being careful to keep sides of bowl clean. Top with romaine lettuce, then Chex™ mix, then cheese, bacon and finally green onions.
- Drizzle dressing on top, or place in bowl on side for people to take what they want.

Steps:
- 1. Cook pasta according to package directions in boiling salted water; drain, return to pot, and keep warm.
- 2. Meanwhile, cook bacon in a large skillet over medium heat until crisp. Drain on paper towels. Drain all but one tablespoon of bacon drippings from the pan.
- 3. Season the chicken with salt and pepper. Add the butter to the reserved bacon drippings, then add the chicken to the same skillet. Cook until tender, no longer pink, and slightly browned.
- 4. Sprinkle the flour and ranch dressing mix over the chicken, stirring to coat evenly. Stir in the milk, and cook, stirring occasionally, until thickened and bubbly. Stir in the cheddar cheese and half of the reserved bacon; cook and stir until the cheese is melted.
- 5. Serve each plate of pasta with more bacon sprinkled over the top.
