GREEN APPLE SPRING ROLLS

6 large Granny Smith apples (about 3 pounds)
1/2 teaspoon finely grated fresh lime zest
2 1/2 tablespoons fresh lime juice
2 tablespoons raw sugar (available at specialty food shops)
12 (7 or 8-inch square) spring roll wrappers (available at Asian markets or by mail order from Uwajimaya)
1 stick (1/2 cup) unsalted butter
1 large egg
Vanilla ice cream
Caramel sauce

Steps:

  • Using the 1/8-inch julienne blade of a mandoline or other manual slicer, cut unpeeled apples into julienne strips. In a bowl toss apples with zest, juice, and sugar and drain in a colander 20 minutes.
  • Let spring roll wrappers stand in package at room temperature 5 minutes. Melt butter and in a small bowl with a fork lightly beat egg. Remove wrappers from package and carefully peel off 1 wrapper, covering remaining stack with a dampened kitchen towel to prevent drying.
  • On a work surface arrange wrapper with a corner pointing toward you and lightly brush with some butter, leaving top corner dry. Arrange 1/4 cup shredded apple on wrapper in a 6-inch long loose pile from left to right corners. Turn bottom corner up to cover filling and gently tighten roll, pressing it toward you. Fold right and left corners toward center and roll away from you as tightly as possible without tearing wrapper. Seal dry corner to spring roll with some egg and cover loosely with plastic wrap. Make 11 more spring rolls in the same manner. Spring rolls may be prepared up to this point 4 hours ahead and chilled, covered.
  • Preheat oven to 200 degrees.
  • In a 2-quart saucepan heat oil over modertae heat to 360 degrees on a deep-fat thermometer and fry spring rolls, 2 or 3 at a time, turning occasionally, 5 minutes, or until golden brown. (Make sure oil returns to 360 degrees between batches.) With tongs transfer spring rolls as fried to brown paper or paper towels to drain and keep warm on a baking sheet in middle of oven.
  • To serve, cut 2 spring rolls in half diagonally and arrange, pointed ends up, in a ramekin or small cup on a plate. Repeat with remaining spring rolls. Add a scoop of vanilla ice cream to the center of each ramekin or cup and drizzle with caramel sauce

CONCH SPRING ROLLS

2 pounds fresh conch
1 large red pepper, finely diced
1 large yellow pepper, finely diced
1 large white onion, finely diced
4 ounces capers, chopped
1 bunch cilantro, leaves chopped
2 limes, juiced

Spring roll wrappers
1 egg, beaten
Vegetable oil, for frying
1 1/2 cups fresh orange juice
4 tablespoons rice vinegar
1/4 cup sugar
1/2 cup Sofrito, recipe follows:
4 tablespoons cornstarch
4 tablespoons water
1 medium onion
2 green Cubanella peppers
3 cloves garlic
1/4 cup cilantro leaves
1/4 cup olive oil

Steps:

  • In a large pot of boiling water, cook conch for 1 hour. Using a meat grinder, grind finely. In a large bowl, combine conch, peppers, onions, capers, chopped cilantro and lime juice. Season to taste with salt and pepper. Wrap small amounts of the conch mixture in the spring roll skins, roll, and brush on the beaten egg with a pastry brush to seal the rolls.
  • Add oil to a depth of 3 inches in a large pot and heat to 375 degrees F. Carefully add the spring rolls to the hot oil and fry for 3 to 5 minutes, turning once, or until the rolls float to the surface of the oil. Drain on paper towels and serve immediately with the Orange "Sofrito" Sauce.
  • To a medium saucepan, add orange juice and bring to a simmer. Add rice vinegar, sugar, and sofrito. In a small bowl, whisk cornstarch and water together and add slowly add to pan, whisking to blend. Let simmer for 2 to 3 more minutes and then remove from heat. Cover and chill in the refrigerator. Serve chilled with the spring rolls.
  • In a blender, combine all ingredients and puree until smooth.

STRAWBERRY-LYCHEE SORBET

This fruit makes for a sweet floral ice cream or sorbet - and it's a perfect match for strawberries.

1 20-ounce can lychees in syrup, drained, liquid reserved (about 1 1/2 cups)
2 pounds strawberries, hulled
1 cup sugar
2 teaspoons fresh lemon juice
1/4 teaspoon salt

Steps:

  • Put the lychee liquid in a small saucepan and bring to a simmer over medium heat. Reduce the heat to medium low and simmer until reduced to a syrupy consistency (about 1/2 cup), 8 to 12 minutes. Let cool completely.
  • Combine the lychees, strawberries, sugar, lemon juice, salt and cooled lychee syrup in a blender or food processor. Puree until smooth, then strain through a fine-mesh sieve into a metal bowl; you should have about 5 cups. Refrigerate until cold, at least 1 hour.
  • Churn in an ice cream maker according to the manufacturer's directions until the consistency of soft serve. Transfer to a freezer-safe container, cover and freeze until firm, at least 4 hours.

SWEET AND SOUR CURRY SPRING ROLLS



Sweet and Sour Curry Spring Rolls image

1 pound shrimp
1 pound minced turkey or minced pork
8 scallions
1 red pepper
4 ounces Chinese mushrooms, soaked in water 20 minutes
1 small piece ginger
8-ounce can water chestnuts
1/2 Chinese medium sized cabbage
1 tablespoon dry sherry
3/4 tablespoon white vinegar
1 tablespoons soy sauce
1 teaspoon sugar
1/2 teaspoon salt
1 1/2 teaspoons curry powder, or to taste
2 teaspoons molasses
1/2 teaspoon chili powder, or Chinese chili paste (optional)
1 tablespoon oil
Oil, for deep frying
100 spring roll wrappers
2 tablespoons cornflour
1 bowl of water, half full
1 damp clean hand or kitchen towel

Steps:

  • Shell and de-vein shrimp, and put into food processor. Add minced meat, finely chopped scallions, finely chopped red pepper, finely chopped mushrooms, grated ginger, chopped water chestnuts, shredded cabbage, sherry, vinegar, soy sauce, sugar, salt, curry powder, molasses, chili powder and process slowly only until shrimp is coarsely chopped in the food processor and watching closely not to over process shrimp. In a wok, or heated saute pan, add tablespoon of oil and saute mixture until 3/4 cooked, on high heat about 3 to 4 minutes, tossing mixture around in pan constantly.
  • Prepare work area. Clean a surface and place bowl of water with cornflour mixed in, damp towel, spring roll wrappers, and partially cooked turkey mixture in work area. Start wrapping spring rolls by placing one wrapper at a time down on flat surface in at a diamond angle to you. Fill about 2 tablespoons of mixture starting a little above the bottom point of the wrapper. Dip fingers in the water bowl and moisten the top and sides of the wrapper. Start at the bottom tip and fold wrapper over turkey mix, rolling the mix into the wrapper half way. Then fold sides inward and continue rolling, sealing with more water if necessary on top. Continue to fold one at a time, keeping the finished ones moist under the moist clean towel (the towel should not be dripping wet, just moist to the touch).
  • Time to Fry! In a deep frying pot, fill halfway with corn or vegetable oil. Heat until when wood chopsticks are placed in to touch the bottom, there are fast streams of bubbles streaming to the top (yes, that's the way my mother taught me!). Very important: before placing spring rolls in oil, make sure they are dry on the outside (if your towel was too damp, you must dry off the rolls in paper towel first, otherwise the oil will pop). Place spring rolls in a few at a time making sure to keep them separated while frying. If the oil is too hot, the outside will cook too quickly, leaving the inside undercooked -- adjust the temperature so that each spring roll takes about 5 to 7 minutes each to cook through and are golden brown. Drain and serve immediately.
  • Excellent when served with your favorite dipping sauce. Try a sweeter sauce with spring rolls such as a plum or duck sauce.

3 Tbsp crystal decorating sugar or regular sugar
1 Tbsp cornstarch
8 canned, lychees, drained and quartered lengthwise
8 large ripe strawberries, hulled and quartered
1 Tbsp ground cinnamon
12 6-inch square spring roll wrappers
4 Tbsp unsalted butter, melted
ice cream, your favorite flavor, for serving

Steps:

  • 1. Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  • 2. Toss 1 tablespoon of the sugar and the cornstarch with the lychees and strawberries in a large bowl until combined.
  • 3. Mix together the remaining 2 tablespoons sugar and the cinnamon in a small bowl.
  • 4. Lay a spring roll wrapper on a work surface with a corner pointing toward you and brush the surface lightly with melted butter.
  • 5. Put 1 heaping tablespoon of the lychee mixture into the center of the wrapper.
  • 6. Bring the two side corners together so they meet over the filling.
  • 7. Bring the bottom corner up over the filling and roll the wrapper tightly around the fruit.
  • 8. Set the spring roll on the baking sheet with the exposed corner down; continue rolling with the remaining fruit and wrappers.
  • 9. Brush butter all over the surface of the rolls and sprinkle each with a little of the cinnamon sugar.
  • 10. Bake until light golden brown and crisp, about 10 minutes.
  • 11. Do not overbake - the fruit will begin to break down as it cooks and can ooze out of the wrappers.
  • 12. Let cool for at least 10 minutes before serving with a scoop of ice cream alongside.

8 rice paper wrappers
1 kiwi, sliced
¼ cup strawberry, sliced
½ mango, sliced
¼ cup raspberry
½ green apple, sliced
½ cup vanilla greek yogurt
½ cup strawberry, sliced
3 sprigs fresh mint leaf
1 tablespoon honey
1 tablespoon lemon juice
¼ tablespoon lemon zest, plus more for garnish

Steps:

  • Make the Strawberry Lemonade Dip: Add the Greek yogurt, strawberries, mint, honey, lemon juice, and lemon zest to a blender. Blend until smooth.
  • Transfer the dip to a small bowl and garnish with more lemon zest. Chill in the fridge while you assemble the rolls.
  • Fill a medium shallow bowl with warm water and set near your work station.
  • Dip a rice paper wrapper in the warm water for a few seconds, submerging completely. Remove and lay flat on a smooth, clean surface, such as a plate.
  • Add your desired combination of sliced kiwi, sliced strawberries, sliced mango, raspberries, and sliced green apple to the middle of the wrapper. Be careful not to overfill, or rolling it will become difficult.
  • Working quickly, before the rice paper dries out, fold both sides of the rice paper over the fruit to secure.
  • Lift the bottom edge of the rice paper and carefully fold it over the top of the fruit, tucking it under on the other side, then gently roll until the fruit is completely covered and the top edge of the wrapper adheres to the spring roll. Repeat with the other ingredients.
  • Set the spring roll aside and cover with a damp paper towel to keep fresh while you repeat with the remaining ingredients.
  • Serve with the chilled dip.
  • Enjoy!
