SMOKED SALMON FILO CUPS

45 frozen mini filo cups
8 ounces cream cheese, at room temperature
3/4 cup roughly chopped smoked salmon (about 4 ounces)
1/2 cup creme fraiche
1 tablespoon roughly chopped drained capers
1 tablespoon finely chopped shallot
1 teaspoon lemon zest plus 1 tablespoon lemon juice
2 tablespoons chopped fresh dill
2 tablespoons chopped chives

Steps:

  • Preheat the oven according to the package instructions for the filo cups. Put the filo cups on a baking sheet and bake until golden brown and crispy according to the package instructions. Let cool.
  • In a medium bowl, mix together the cream cheese, salmon, creme fraiche, capers, shallot, lemon zest and juice, 1 tablespoon of the dill and 1 tablespoon of the chives. Transfer the mixture to a ziptop bag. Cut an approximately 1-inch opening in the corner of the bag. Pipe the salmon mixture evenly among the filo cups, filling them to the top.
  • Mix together the remaining dill and chives, then sprinkle some of the herbs on top of each cup to garnish. Serve immediately.

¼ cup unsalted butter
2 tablespoons all-purpose flour
2 cups 1% milk
1 ½ cups Cheese, fontina
1 pinch garlic salt
ground black pepper to taste
1 (12 ounce) package fusilli pasta
6 ounces Finfish, salmon, chinook, smoked
¼ cup panko bread crumbs

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Grease a 9x13-inch baking dish.
  • Melt butter in a 2-quart saucepan over medium heat. Add flour and whisk until smooth, about 2 minutes. Gradually pour in milk and continue to whisk until sauce is smooth and creamy. Simmer until sauce is thick enough to coat the back of a spoon. Remove from the heat and stir in 1 cup fontina cheese, garlic salt, and pepper; set aside.
  • Bring 6 quarts of salted water to a boil in a large pot. Add fusilli and cook for about 5 minutes. Drain. Return pasta to the pot and pour in bechamel sauce. Mix with a wooden spoon until pasta is completely coated with sauce. Gently stir in flaked salmon.
  • Pour mixture into the prepared baking dish. Smooth out the top and sprinkle with remaining fontina cheese and panko.
  • Bake in the preheated oven until bubbling and golden brown on top, about 25 minutes.

6 ounces smoked salmon
1/2 cup sour cream
1/3 cup chopped fresh cilantro leaves
1 tablespoon lime zest
2 teaspoons fresh lime juice
salt
cayenne pepper

Steps:

  • Peel cucumber; cut into 3/4-inch slices; using tiny spoon or scoop, form cucumber cup by scooping out seeds, leaving some flesh in base of cup; set aside.
  • In medium-size bowl, flake smoked salmon, discarding skin and any bone; blend in sour cream, cilantro, lime zest, lime juice, salt, and cayenne pepper to taste.
  • Mound salmon into cucumber cups; sprinkle lightly with a few grains cayenne pepper; garnish with additional lime peel strips, if desired.

And it's a recipe that can easily be doubled. I found this recipe in the November 2005 issue of the Australian magazine 'Table: easy family food for everyday of the week', and I'm posting it for the 2005 Zaar World Tour.

Yield 24 Goat's Cheese, Avocado & Smoked Salmon Cups

24 slices white bread, crusts removed
1/4 cup light olive oil
150 g soft fresh goat cheese
3 slices smoked salmon, diced
1 firm avocado, cubed
lime juice (1 squeeze) or lemon juice (1 squeeze)
fresh ground black pepper, to taste

Steps:

  • Preheat the oven to 190°C, and grease 2 x 12-hole mini muffin pans.
  • Roll out the bread slices to flatten them slightly and, using a biscuit cutter, cut 1 x 7 cm circles from each slice. Brush the bread rounds with olive oil and gently press them into the lightly greased muffin pans; and bake them for 6-8 minutes, until they are crisp and golden; then cool them on wire racks.
  • Lightly mash the goat's cheese in a bowl and fold through the salmon, avocado, juice and pepper to taste; and spoon into the bread cups just before serving.

3 tablespoons dry bread crumbs
5 tablespoons grated Parmesan cheese, divided
1/2 cup chopped onion
1/2 cup chopped green pepper
3 tablespoons butter
4 packages (three 8 ounces, one 3 ounces) cream cheese, softened
1/2 cup heavy whipping cream
1/4 teaspoon pepper
4 eggs
5 ounces smoked salmon, diced
1/2 cup shredded Swiss cheese
Assorted crackers

Steps:

  • Grease the bottom and sides of a 9-in. springform pan. Combine the bread crumbs and 2 tablespoons Parmesan cheese; sprinkle into pan, coating bottom and sides. Set aside., In a skillet, saute onion and green pepper in butter until tender; set aside. In a bowl, beat cream cheese until fluffy. Beat in the cream, pepper and remaining Parmesan cheese. add eggs; beat on low speed just until combined. Fold in the onion mixture, salmon and Swiss cheese., Wrap a double thickness of heavy-duty foil around bottom of prepared pan. Pour salmon mixture into pan. Place in a large baking pan. Fill larger pan with hot water to a depth of 1-1/2 in. Bake at 325° for 35-40 minutes or until center is almost set. Cool on a wire rack for 1 hour. Refrigerate overnight., Remove foil and sides of pan. Serve with crackers.

2 pounds corkscrew or elbow macaroni, cooked
1/2 cup basil leaves, chopped
6 ounces smoked salmon
1/2 cup bread crumbs plus 1/2 to 2/3 cup
1 cup heavy cream
3 tablespoons Dijon mustard
1 box cream cheese, at room temperature
Salt and pepper, to taste
1/2 cup Parmesan cheese, freshly grated
1/2 stick melted butter
3 tablespoons parsley leaves, chopped
2 tomatoes, sliced

Steps:

  • Preheat oven to 420 degrees. In a bowl, mix together macaroni, basil, smoked salmon, and bread crumbs. In a blender combine cream, mustard and cream cheese, season with a pinch salt and pepper. A little additional water may be added if mixture is too thick. When thoroughly combined, toss into macaroni mixture. In a separate bowl, combine Parmesan cheese, 1/2 cup bread crumbs, butter and parsley. If mixture is too wet add additional breadcrumbs. In a gratin dish, arrange tomato slices to cover the bottom of pan. Spoon macaroni mixture into gratin dish. Top with bread crumb/ Parmesan topping. Bake in oven for 20 minutes, if top has not yet browned, the dish may be put under a broiler for a few minutes to finish.;

This came from TOH. DH loves this recipe. Actually it is 2 recipes, salmon and sauce. I have frozen the patties, uncooked. I have also used leftover salmon instead of canned. This goes great with a raisin pilaf and the one I use has a matching oven temperature of 375 degrees.

1/3 cup skim milk
2 eggs, slightly beaten
3 tablespoons butter, melted

2 tablespoons flour
1 1/4 cups skim milk
1/2 cup cheddar cheese, shredded

  • Preheat oven to 375 degrees and start your water boiling for step 6.
  • In a bowl, combine the cornflakes, milk, eggs, butter, onion, garlic salt, pepper, and salmon.
  • Divide into 4 equal portions.
  • Place four greased 8 ounce custard cups in a 11 X 7 X 2 inch baking dish.
  • Fill cups with salmon mixture; gently press down with a spoon until flattened.
  • Fill baking dish with boiling water to a depth of 1 inch.
  • Bake, uncovered, for 30 minutes or until a meat thermometer reads 160 degrees.
  • For cheese sauce: in a medium sized saucepan, melt butter over medium heat.
  • Stir in flour until smooth; gradually add the milk.
  • Bring to a boil; cook and stir for one minute or until thickened.
  • Add cheese, pimentos, salt, garlic, and pepper; cook and stir until cheese is melted.
  • Pour over salmon.
