This is a recipe that I got from the box that the can of smoked oysters came in - I am going to try it one of these days, but thought I'd pass the recipe on to you just to see if anyone would like to try it also...

1 (85 g) can clover leaf smoked oysters, drained
1/4 cup lime juice
1/4 cup lemon juice
1 dash chili powder
1 dash oregano
1/4 cup tomatoes, seeded, peeled, chopped
1/4 cup red pepper, diced
1/4 cup green pepper, diced
1 tablespoon green onion, chopped
1 cup English cucumber, seeded, diced
1 tablespoon parsley, chopped
salt and pepper
crisp lettuce leaf

Steps:

  • Drain oysters, cut in half. In a small bowl, combine lime and lemon juice, chili powder and oregano. Add oysters and gently coat with marinade. Marinate for 2-3 hours in the refrigerator. In a bowl, combine the rest of the ingredients, except the lettuce leaves. Keep well chilled.
  • An hour before serving, drain oysters, add to the vegetable mixture and toss gently. Return to the refrigerator until servng time. Serve on crisp lettuce leaves.
  • Makes approximately 3 side salads or could be used as an appetizer.

This is a different appetizer that most people ( those who like smoked oysters!) really enjoy!I've made this with the 1/3 fat and fat-free chream cheese and can't really tell the difference! Chill time is not included in prep time.

1 (8 ounce) package cream cheese, at room temperature
1 tablespoon mayonnaise
1 (4 ounce) can smoked oysters, drained and mashed with a fork
1 -2 dash Tabasco sauce
chopped parsley

Steps:

  • Combine all ingredients except the parsley in the bowl of a food processor and pulse until well blended.
  • Wrap mixture in plastic wrap and refrigerate until well chilled.
  • Remove from plastic wrap, roll in chopped parsley, and serve with your favorite crackers or pita chips ( the garlic ones are good with this!).

I love smoked oysters and I am addicted to this as a snack! You can increase the amounts to serve to a crowd.

1 (3 3/4 ounce) can smoked oysters
1 (3 ounce) package cream cheese, softened
1 teaspoon Worcestershire sauce
1 pinch lemon pepper (optional)
1 -2 dash hot sauce, to taste

Steps:

  • Roughly chop oysers and in a medium bowl mix with cream cheese, Worcestershire sauce,hot sauce and lemon pepper.
  • Chill at least one hour.
  • Serve with sliced baguette or crackers.

This recipe was given to me by a dear friend from Ecuador. This dish is also great with raw shrimp, scallops, or fish. If using canned oysters, cover the dish with plastic wrap and place in refrigerator for about 30 minutes. If using raw shrimp, scallops, or fish, cover with plastic wrap and place in refrigerator for at least 2 hours or until they are opaque in the middle.

2 large Spanish onions, sliced
1 large ripe tomato
½ cup olive oil
¾ cup fresh lemon juice
4 (8 ounce) cans oysters
1 large ripe tomato, diced
3 green onions, chopped
⅜ cup ketchup
½ teaspoon soy sauce
½ teaspoon garlic salt
2 tablespoons chopped fresh parsley
½ teaspoon granulated sugar
salt to taste

Steps:

  • In a saucepan over medium heat, add the sliced onions and add just enough water to cover. Bring to a simmer and cook just enough to soften. Remove from heat and drain. Rinse with cold water and drain.
  • Take one 1 large tomato and score an 'X' , skin deep, on the top and bottom. Place in the same saucepan used for the onions and add enough water to cover. Bring to a simmer and cook until soft and the skin starts to peel, about 5 minutes. Remove the tomato and rinse under cold water until it's cool enough to hold in your hand. Using your fingers or the blade of a knife, gently peel off the skin. Place the peeled tomato in a blender and puree.
  • In a large glass dish or bowl, combine the onions, olive oil and lemon juice. Stir in the oysters, pureed tomato, diced tomato, green onions, ketchup and soy sauce. Season with garlic salt, parsley, sugar, and salt to taste.

1 ounce (2 tablespoons) unsalted butter, softened
4 spelt or other multigrain bread slices
6 tablespoons Deviled Egg Spread
½ cup chopped egg whites (reserved from Deviled Egg Spread)
½ stalk blanched celery, diced (reserved from Deviled Egg Spread)
1 (3 ¾-ounce) can smoked oysters
1 ounce smoked trout roe
2 teaspoons chopped fresh chives
1 lemon, cut into 8 wedges
Hot sauce

Steps:

  • Preheat the broiler with oven rack 5 inches from the heat. Line a baking sheet with heavy-duty aluminum foil.
  • Spread the butter evenly on both sides of the bread, and place on the prepared pan. Broil in preheated oven until deep golden brown, about 2 minutes per side.
  • Spread 1 ½ tablespoons Deviled Egg Spread onto each toasted bread slice. Sprinkle evenly with chopped egg whites and diced celery. Cut each slice into 4 triangles.
  • Top each triangle with smoked oysters and about ¼ teaspoon of trout roe. Garnish with chopped chives, and serve with lemon wedges and hot sauce.
  • Serve with: Green salads; potato, tomato, or egg dishes; grilled vegetables
