GRANDMA BEA'S PECAN FINGERS
These are usually in my Christmas cookie repertoire. This recipe is based on one from Grandma's Pantry Cookbook by Alan Robbins and Trudy Smoke.

Steps:
- Preheat oven to 350 degrees farenheit.
- Beat butter and sugar together, in bowl, until creamy and fluffy.
- Gradually add the flour until well mixed in, then salt, vanilla and pecans.
- Shape level teaspoons of dough into 2-inch-long fingers.
- Place on ungreased cookie sheet.
- Bake for 15 to 20 minutes or until lightly browned.
- Cool before eating.
GRANDMA'S CHEESY PECAN BITES
My grandmother made these every Christmas. They're quick and easy and a great addition for any party!

Steps:
- Preheat oven to 350.
- Mix together first three ingredients to make a dough. I just use my hands.
- Roll dough into approximately 1" size balls. Place balls on ungreased, non-stick cookie sheet and flatten slightly. Press a pecan half onto top of each cheesy snack.
- Bake 12 to 15 minutes, until slightly golden brown. Let cool on baking sheet for five minutes then transfer to wire rack to cool completely. Serve immediately or store in air-tight container until ready to serve. The cheesy bites will keep at room temperature for two days or in the refrigerator for up to a week.
PECAN FINGERS
You can't go wrong with the combination of butter and pecans in this recipe. I never serve these cookies without receiving requests for it.

- In a large bowl, cream butter and sugar until light and fluffy. Combine flour and salt; gradually add to creamed mixture and mix well. Stir in pecans. , Shape tablespoonfuls into 2-in. fingers. Place 2 in. apart on ungreased baking sheets. Bake at 350° for 15-18 minutes or until lightly browned. Roll warm cookies in confectioners' sugar; cool on wire racks.

- Make finger shapes by taking 1 large tsp of dough and rolling it into an oblong in the palms of your hands. Place on ungreased cookie sheet. May be placed close together as cookies do not raise. Bake for 12-15 minutes or until slightly brown on edges Immediately roll warm cookies in powdered sugar and place on wire rack to cool Makes 5-8 dozen depending on size.

Steps:
- Peheat oven to 375*.
- Combine Bisquick, butter, pecans sugar & vanilla in a medium size mixing bowl.
- Add water & stir vigorously with a fork until dough forms a ball & cleans the bowl.
- Shape dough into 24- 2 !/2" long fingers.
- Place on ungreased cookie sheet.
- Bake 10-12 minutes at 375*.
- While still warm roll each finger in granulated sugar.
- Makes 2 dozen cookies.

GRANDMA'S COMPLETELY DIFFERENT PECAN PIE
This wonderful recipe has been passed down from my Grandma, to my Mother and now to me. This is not like your typical pecan pie, more of a softened macaroon.

Steps:
- Beat egg whites until very fluffy.
- Add baking powder.
- Very slowly add sugar while mixer beats (will become thick and heavy).
- With rubber spatula, fold in cracker crumbs (you can roller crackers in a plastic bag to make fine crumbs).
- Fold in nuts and vanilla.
- Pour into greased 8" or 9" round pie pan. Bake in a preheated 350 degree oven for 30 minutes. Do not under-bake, will puff up and then settle and crack.
- Cool, then chill in refrigerator.
- Night before or early morning, seal to edge with whipped cream.
- Decorate with fine graham cracker crumbs. This is even better the longer it sits with the whipped cream on it to soften it all the way through.
