SMOKED HAM PIE - SWEDISH QUICHE (SKINKPAJ)
Another Swedish recipe that I am posting for ZWT6. On Herrgårdsost Herrgårdsost is a semi-hard yellow cheese made from cow's milk with a mild nuttiness similar to Gruyere or aged cheddar. It has a few small holes (like Swiss cheese does) and is produced in large wheels coated with yellow wax. The name means "manor house cheese."

Steps:
- Press pastry dough into baking pan.
- Set oven to 350°F
- Combine egg yolks, sour cream, ham, and cheese. Pour over dough, like a pizza.
- Bake at 350°F for 40-60 minutes, depends on oven as they vary.

SMOKED HAM PIE (SKINKPAJ)
On a search for some Swedish recipes I came across this. It is basically a quiche but a super easy recipe! And super tasty!

Steps:
- 1. Heat oven to 350 degrees F.
- 2. Mix together ham, eggs, sour cream, cheese and spices. Pour into prepared crust.
- 3. Bake for 30 - 40 minutes.
SMOKED TROUT PIE
This recipe is from Justine Schofield Everyday Gourmet show and the finished dish looked delicious and hoping to try it soon, it was cooked up by guest chef Andy Allen the 2012 Australian Master Chef. Times are estimated. The only change I would make is to use cheddar cheese instead of parmesan mainly because my family does not like parmesan.

Steps:
- Remove the trout flesh from the bones, and set aside in a bowl.
- Place the bones into a medium sized saucepan and pour over cold water to half-fill the pan and bring to the boil for 10 minutes to make stock.
- Meanwhile, heat butter and boil in a frying pan over low heat and sauté the capsicum/bell pepper and fennel bulb until soft.
- Strain the stock into a jug, you need approximately 300 ml.
- Add the stock to the capsicum/bell pepper and fennel and simmer until it has reduced by half.
- Add the cream and trout and simmer for 10 minutes.
- Add the dill, lime zest and juice and cook a further 2 minutes.
- Place the trout mixture into one pie dish or two individual dishes.
- Tear the bread into pieces and place on a baking tray and place in the oven until golden brown on a low heat (about 150C) until they are dried out and scatter the toasted bread pieces on top of the pie and sprinkle with parmesan.
- Cook under a preheat grill/broiler for 2 minutes until golden and cheese is melted.
- Top with dill and fennel fronds.

Steps:
- In a large skillet, sauté mushrooms in butter for about 5 minutes until most of the liquid is gone. Add grated zucchini and diced sweet red pepper; sauté 3 minutes. Add garlic, ham and green onions to the pan, and stir well. Stir in spinach and remove pan from heat to cool slightly.
- In a large bowl, mix eggs and ricotta. Stir in parmesan, olive oil, dill, salt and pepper. Add the vegetable mixture and stir to combine.
- Pour into a greased 12x8 inch pan and bake at 350F for 35 minutes, until set in the center. Alternatively, you can use a large quiche dish; it will be thicker so allow an extra 10 minutes of baking. Cool 5 minutes before cutting.

Steps:
- In a large pan, boil ham and carrots for approximately 30-45 minutes, or until carrots are tender.
- Reduce heat to medium high.
- I usually make sure I have at 1/2 pan of water left once carrots are done.
- Depending on how"soupy" you want the dish to be, you can have more or less.
- In a mixing bowl, stir together 2 cups self rising flour, 1/2 tsp salt and about 3-4 tablespoons Crisco until blended. Add 3/4 cup milk and stir until doughy.
- Drop this mixture into water a small spoonful at a time to make dumplings.
- Add sweet peas and diced eggs.
- Add milk as desired to turn the broth white.
- Salt and pepper to taste, Cook an additional 5 minutes until dumplings are done.
