Ingredients

1 12 oz package smoked sausage (cut into bite sized pieces)
2 lbs Yukon Gold potatoes (or red bliss potatoes, 8 small, peeled or unpeeled)
3 cloves garlic (minced)
2 medium onions (sliced)
1 red bell pepper (seeded and sliced)
1 green bell pepper (seeded and sliced)
1 tsp salt
1/2 tsp oregano
1 tsp basil
3 tsp fresh thyme (sprigs, or 1/2 tsp dried)
1/2 cup chicken broth
1/4 cup white wine (optional)

Steps:

Scrub potatoes well and cut into 2" pieces. Place potatoes into slow cooker and add garlic, sliced onions and bell peppers. Season with salt, oregano, basil and thyme. Add chicken broth and wine (if not using wine, replace with ¼ cup additional chicken broth). Stir ingredients to distribute seasonings.
Add smoked sausage to top of vegetables. Cover and cook 4 hours (high) or 8 hours (low) then turn off heat.
Dish potatoes and sausage into individual bowls and spoon broth over sausage and vegetables. Serve and enjoy!

A great side dish, or a simple sausage and sweet potato main dish, all done in your slow cooker! Toss a package of prewashed salad greens with your favorite dressing, and dinner is served.

Ingredients

12 oz bulk pork sausage, thawed if frozen
2 large leeks, sliced (about 2 cups)
1 teaspoon dried thyme leaves
3 lb dark orange sweet potatoes, peeled, cut into 1/4-inch slices (8 cups)
1 cup freshly shredded Parmesan cheese
1/4 cup apple juice or chicken broth

Steps:

Spray 4- to 4 1/2-quart slow cooker with cooking spray. In 10-inch skillet, cook sausage over medium-high heat until no longer pink; drain. Stir in leeks and thyme.
In slow cooker, layer half the sweet potatoes, sausage mixture and cheese. Repeat with remaining sweet potatoes and sausage mixture. Pour apple juice over top; sprinkle with remaining cheese.
Cover; cook on High heat setting 2 1/2 to 3 hours or until sweet potatoes are tender.

Since I never seem to open up my crockpot recipe book (Fix It and Forget It Recipes for Entertaining), I decided to post this here as a reminder that I need to try this one. This recipe was credited in the book to Ruth Hershey of Paradise, PA.

1 lb bulk pork sausage, browned in skillet
2 sweet potatoes, peeled and sliced
3 apples, peeled and sliced
2 tablespoons brown sugar
1 tablespoon flour
1/4 teaspoon cinnamon
1/4 teaspoon salt
1/4 cup water

Steps:

Layer sausage, sweet potatoes and apples in slow cooker.
Combine remaining ingredients and pour on top.
Cover and cook on low for 8-10 hours, or on high for 4 hours.

1/2 lb ground mild Italian sausage
8 -10 large potatoes, peeled and cut into chunks
1 -1 1/2 cup corn
1/2 red bell pepper, diced
1 teaspoon ground cumin
1/2 teaspoon dried oregano
1/2 teaspoon dried thyme
3 -4 garlic cloves, peeled and minced
1/2 large onion, peeled and diced
1 lime, juice of
fresh cilantro, chopped
5 cups chicken stock (or 5 cups water and 5 chicken bouillon cubes)
1 -1 1/2 cup heavy cream
salt and pepper, as needed

Steps:

Brown sausage in a skillet set to medium-high heat until fully cooked through and slightly crisp. Drain.
Add all ingredients except for the heavy cream into slow cooker. Stir to combine.
Cook on high for about 4 hours or on low for about 6 hours.
Blend about half the soup using an immersion blender (or just scoop it into your upright blender, then return to slow cooker).
Add in the heavy cream. Stir to combine. Lid and allow chowder to return to temperature - this takes about fifteen minutes.
Check for seasoning - add salt and/or pepper, as needed.
Serve topped with additional fresh cilantro for garnish and/or shredded cheddar cheese, if desired.
