Great on cold nights. Add crushed saltines into your bowl before putting the chili in if you like it thicker.

2 pounds ground beef
1 onion, diced
1 (29 ounce) can tomato sauce
1 (29 ounce) can kidney beans, undrained
1 (29 ounce) can pinto beans, undrained
2 cups beer
1 (14.5 ounce) can diced tomatoes
1 (4.5 ounce) can chopped green chilies
2 tablespoons chili powder
1 tablespoon ground cumin
2 teaspoons salt
2 teaspoons ground black pepper

Steps:

  • Heat a large skillet over medium-high heat. Crumble ground beef into the skillet; add onion. Cook and stir until the beef is crumbly and completely browned, 7 to 10 minutes. Drain and discard any excess grease. Transfer beef and onion to a slow cooker.
  • Stir tomato sauce, kidney beans, pinto beans, beer, diced tomatoes, green chilies, chili powder, cumin, salt, and black pepper into the beef and onion.
  • Cook on High 4 to 5 hours.

2 large onions, chopped
2 green bell peppers, cored, seeded and chopped
2 tablespoons minced (3 large cloves) garlic
3 tablespoons vegetable oil
1/4 cup chili powder, or to taste
1 tablespoon ground cumin
1 tablespoon dried oregano
2 tablespoons tomato paste (recommend getting tube)
3 pounds boneless beef chuck, ground coarse
1 (28-ounce) can whole tomatoes, including liquid
1 to 1 1/2 cups beef broth
4 tablespoons cider vinegar
1-ounce unsweetened chocolate, chopped
1 (19-ounce) can kidney beans, rinsed and drained
Rice, as an accompaniment
Toppings: Tortilla chips; sour cream; grated cheddar; chopped red onions; chopped jalapenos; diced avocado; minced cilantro; etc.

Steps:

  • In a casserole cook the onions, peppers and garlic in the oil over moderate heat, stirring occasionally, for 5 minutes. Add the chili powder, cumin and oregano and cook, stirring, for 3 minutes. Add the tomato paste and cook, stirring, for 2 minutes more. Add the beef and cook, stirring occasionally, until no longer pink. Add the tomatoes, 1 cup of the broth, the vinegar and chocolate and bring the mixture to a boil, crushing the tomatoes with the back of a spoon. Simmer the chili, covered, for 1 hour, adding additional broth, if necessary. Add the kidney beans and simmer, uncovered, for 15 minutes more. Ladle into bowls and serve with rice and desired toppings.

1 large onion, chopped (1 cup)
2 medium celery stalks, cut into 1/2-inch pieces
1 can (28 oz) Muir Glen™ organic diced tomatoes, undrained
1 can (15 oz) Muir Glen™ organic tomato sauce
3 teaspoons chili powder
2 teaspoons ground cumin
1/4 teaspoon dried oregano leaves
1/4 teaspoon ground cinnamon
1 medium bell pepper, cut into 1-inch pieces (1 cup)
1 can (19 oz) Progresso™ red kidney beans, drained, rinsed
Shredded Cheddar cheese, if desired

Steps:

  • In 3 1/2- to 4-quart slow cooker, mix all ingredients except bell pepper, beans and cheese.
  • Cover; cook on Low heat setting 6 to 7 hours.
  • Stir in bell pepper and beans. Increase heat setting to High; uncover and cook about 15 minutes longer or until slightly thickened. Serve with cheese. Note: This recipe was tested in slow cookers with heating elements in the side and bottom of the cooker, not in cookers that stand only on a heated base. For slow cookers with just a heated base, follow the manufacturer's directions for layering ingredients and choosing a temperature.

1 (12 ounce) bottle lager beer (Sam Adams works very well)
1 cup beef broth
1 tablespoon molasses
2 (15 ounce) cans kidney beans, drained and rinsed
4 small jalapeno peppers, seeded, stemmed and diced
2 arbol bell peppers, seeded, stemmed and diced
3 teaspoons minced chipotle chiles in adobo

Steps:

  • In a large skillet over medium-high heat, cook and break apart the ground beef and sausage. Cook until beef is evenly browned and sausage is cooked (about 8-10 minutes). Drain and discard any excess grease.
  • Combined meat mixture and all remaining ingredients in a slow cooker. Cover and cook on low for 10 hours or on high for 4 hours. Before serving, add more salt if needed.
  • Serve with garnishes of shredded cheese and sour cream.

1 bottle (12 oz) dark beer, room temperature
1 large onion, chopped (1 cup)
3 cloves garlic, finely chopped
2 cans (14.5 oz each) Muir Glen™ organic fire roasted diced tomatoes, undrained
1 can (16 oz) pinto beans, drained, rinsed
1 can (15 oz) Progresso™ red kidney beans, drained, rinsed
2 tablespoons tomato paste
2 tablespoons chili powder
1 tablespoon unsweetened baking cocoa
1 teaspoon salt
1 cup shredded sharp Cheddar cheese (4 oz)

Steps:

  • Spray 5- to 6-quart slow cooker with cooking spray. In large resealable food-storage plastic bag, place beef and flour; seal bag and shake to coat. In 12-inch skillet, heat oil over medium-high heat. Cook beef in oil, stirring occasionally, until browned on all sides. Place beef in slow cooker.
  • Add beer to skillet, stirring and scraping to loosen brown particles. Cook 1 minute. Pour over beef in slow cooker. Add remaining ingredients except cheese.
