SLOW-COOKER GREEK BEEF STEW

Steps:
- Remove excess fat from beef. Cut beef into 1-inch pieces. Toss beef, flour and cinnamon. Rinse frozen onions in cold water to separate; drain. Place beef and onions in 3 1/2- to 4-quart slow cooker.
- Mix water, tomato paste, wine, vinegar and honey. Pour over beef mixture.
- Cover and cook on low heat setting 9 to 10 hours or until beef is tender. Serve over pasta. Sprinkle with cheese.

Create an appetizer surprise in your slow cooker: these beef bites, simmered in garlic and herbs, and served with a Greek-inspired cucumber-yogurt dipping sauce.

- Cut beef into 1- to 1 1/2-inch pieces. Heat oil in 12-inch skillet over medium-high heat. Cook beef in oil, in batches if necessary, 8 to 10 minutes, turning occasionally, until brown on all sides.
- Place beef in 3- to 4-quart slow cooker. Sprinkle with garlic, oregano, 1 1/2 teaspoons salt, the pepper and 3 tablespoons of the lemon peel; toss to mix.
- Cover and cook on Low heat setting 4 to 5 hours.
- Stir together yogurt, cucumber, 1/2 teaspoon salt and remaining 1 tablespoon lemon peel in small bowl. Serve beef with toothpicks for dipping into yogurt sauce. Beef bites will hold on Low heat setting up to 2 hours; stir occasionally.

BEEF STIFADO IN THE SLOW COOKER
Stifado is a Greek beef stew and my all-time favorite Greek dish. Chunks of tender beef are cooked with shallots in a rich aromatic tomato sauce. Serve with boiled rice and a good supply of crusty bread to mop up the rich sauce!

- Heat 2 tablespoons olive oil in a large skillet over high heat and cook beef, onion, and garlic until meat is browned on all sides and onions are soft, 6 to 8 minutes. Add tomatoes, nutmeg, cinnamon stick, bay leaves, rosemary, salt and a good pinch of black pepper. Cook over medium heat, stirring occasionally, until ingredients blend, about 3 minutes. Add wine and vinegar and stir to combine.
- Turn slow cooker to Low setting. Pour beef mixture into slow cooker and stir in ketchup.
- Cook on Low until beef is tender, 6 to 8 hours.
- Meanwhile, heat remaining olive oil in a skillet and cook shallots until soft, 3 to 4 minutes. Add cooked shallots to stew for the last 1 to 2 hours of cooking.
- Remove and discard cinnamon stick, bay leaves, and rosemary sprig before serving.

- Trim any excess fat from roast and slice into 1-inch slices. Combine spices (salt through dill) in a small bowl. Drizzle meat with 1 tablespoon of oil from the jar of sun-dried tomatoes and then sprinkle with spice mix, rubbing in all over.
- If using a pressure cooker, turn on to saute mode, (or place on stove top) to medium heat. Once hot, add another 1 tablespoon oil from tomato jar and add onion. Cook for 4-5 minutes, until tender and then add garlic and saute for about 30 seconds. Nestle beef into pot and place some of the onions on top of it. Add tomatoes and pour beef broth in.
- Secure lid on top and cook on high pressure for 30 minutes. Let rest for 10 minutes and then release steam from pot and remove lid.
- Use tongs to remove meat and place on a cutting board. Pour all pan juices into a fat separator (or if you don’t have one simply let juices settle in pan and skim off any fat with a ladle.) Gently break up meat into chunks and place back in pan. Pour as much of the juices back into pan as desired. Add vinegar and toss. If you like, season with additional salt and pepper.
