3 boneless skinless chicken breasts
1 teaspoon salt
1 teaspoon pepper
(2) 28 oz cans crushed tomatoes
1/2 onion (diced)
1 Tablespoon Italian seasoning
2 cups shredded mozzarella cheese
1 pound penne (cooked)
1/2 cup parmesan cheese
1/2 cup bread crumbs
1 Tablespoon butter

Steps:

  • Place the chicken salt pepper, tomatoes, onion, and italian seasoning in the crock pot. I used a 6 quart slow cooker.
  • Cook on low for 8-10 hours.
  • Shred the chicken and stir back in the crock pot
  • Stir in the cooked pasta, and mozarella cheese
  • Top with parmesan cheese.
  • Cover and cook until cheese is melted.
  • Then melt the butter in a saucepan and sauté the bread crumbs until they are a dark brown color.
  • Sprinkle the sautéd bread crumbs over the pasta. Serve and enjoy!

2 pounds chicken breasts (boneless, skinless )
1 medium onion (finely chopped)
30 ounce tomato sauce (2 (15-ounce) cans)
2 tbsp tomato paste
1 tbsp basil (dried)
1 tsp parsley (dried)
1 tsp oregano (dried)
2 tbsp garlic powder
1/2 tsp red pepper flakes
16 ounces penne pasta (dry)
2 cups low-sodium chicken broth (divided)
salt and pepper
1-1/2 cups mozzarella cheese (shredded)
1/3 cup parmesan cheese
2 tbsp chopped parsley (optional)

Steps:

  • In the slow cooker combine onion, tomato sauce, tomato paste, basil, oregano, garlic, and red pepper flakes.
  • Season chicken with salt and pepper as desired, place in the slow cooker, pushing down so chicken is covered with tomato mixture. Cover slow cooker and cook on Low for 3 to 4 hours.
  • When chicken is cooked (165°F on meat thermometer), remove chicken breasts and allow to cool. Shred chicken into bite size pieces..
  • Turn slow cooker to High. Stir in 1 cup of broth and pasta. Cook pasta until tender, about 20 to 30 minutes. Add additional broth in 1/2 cup increments if the sauce becomes too thick.
  • Add the chicken back into the slow cooker and stir to coat with sauce. Sprinkle mozzarella and parmesan cheese over the pasta mixture. Turn the slow cooker back to Low and cook additional 15 - 20 minutes until the cheese is melted.

4 boneless, skinless chicken breasts
Kosher salt and freshly ground black pepper
2 (28-ounce) cans crushed tomatoes
1 onion, diced
1 tablespoon dried basil
1 teaspoon dried oregano
1 teaspoon dried parsley
1/2 teaspoon crushed red pepper flakes, optional
1 pound penne
1 1/2 cups shredded mozzarella cheese
1/4 cup freshly grated Parmesan cheese
2 tablespoons chopped fresh parsley leaves

Steps:

  • Season chicken with salt and pepper, to taste. Place chicken into a 6-qt slow cooker. In a large bowl, combine crushed tomatoes, onion, basil, oregano, parsley and red pepper flakes, if using. Stir into the slow cooker and gently toss to combine. Cover and cook on low heat for 4 hours. Remove chicken from the slow cooker and shred, using two forks. In a large pot of boiling salted water, cook pasta according to package instructions; drain well. Stir pasta and chicken into the slow cooker; top with cheeses. Cover and cook on low heat for an additional 10-20 minutes, or until the cheeses have melted. Serve immediately, garnished with parsley, if desired.

1 jar (26 oz) tomato pasta sauce
1/2 cup shredded Italian cheese blend (2 oz)
2 2/3 cups uncooked penne pasta (8 oz)

Steps:

  • Spray 2- to 3-quart slow cooker with cooking spray.
  • In small shallow bowl, beat egg until foamy. In separate shallow bowl, mix bread crumbs, Parmesan cheese, Italian seasoning, salt and pepper. Dip chicken into egg, then coat evenly with bread crumb mixture; place in cooker. Spread pasta sauce evenly over chicken.
  • Cover; cook on Low heat setting 5 to 6 hours.
  • Sprinkle Italian cheese blend over top. Cover; cook on Low heat setting 10 minutes longer. Meanwhile, cook and drain pasta as directed on package. Serve chicken with pasta.

1/2 cup seasoned bread crumbs
1/2 cup grated Parmesan cheese
1/2 teaspoon Italian seasoning
1/2 teaspoon pepper
1/4 teaspoon salt
1 large egg, lightly beaten
1 tablespoon water
4 (6 ounces each ) boneless skinless chicken breast halves
1 jar (24 ounces) marinara sauce
4 slices part-skim mozzarella cheese
Hot cooked pasta, optional

Steps:

  • In a shallow bowl, combine bread crumbs, Parmesan cheese, Italian seasoning, pepper and salt. In another bowl, combine egg and water. Dip chicken in egg mixture, then in crumb mixture to coat both sides, patting to help coating adhere., Transfer chicken to a 4- or 5-qt. slow cooker. Pour sauce over chicken. Cook, covered, on low for 4-6 hours or until a thermometer inserted in chicken reads 165°. Top with cheese, recover, and cook for 10-15 minutes, until cheese is melted. If desired, serve with hot cooked pasta.
