Slow-cooked tomatoes image

This summery side dish, from Gordon Ramsay, is perfect served with lamb and can be made up to 2 days in advance

Number Of Ingredients 6

6medium-sized vine tomatoes
2 garlic cloves
thyme or rosemary leaves
sherry vinegar
balsamic vinegar
olive oil

Steps:

  • Can be made up to 2 days ahead. Heat oven to 120C/fan 100C/gas ½. Halve the tomatoes widthways and place, cut-side up, in a roasting pan. Peel the garlic cloves and slice very thinly into slivers. Put a sliver on each tomato, season and scatter over thyme or rosemary leaves. Sprinkle each with sherry vinegar, then with balsamic vinegar and finally with olive oil. Bake for 2-3 hrs until soft and slightly shrivelled. Remove and cool.

This tangy, zesty sauce instantly became a family favorite. I created it when my family came in from out of town; everyone raved about it and my husband begs me to make it all the time.

10 roma (plum) tomatoes - peeled, seeded and crushed
½ small onion, chopped
1 teaspoon minced garlic
¼ cup olive oil
1 teaspoon dried oregano
1 teaspoon dried basil
1 teaspoon ground cayenne pepper
1 teaspoon salt
1 teaspoon ground black pepper
1 pinch cinnamon

Steps:

  • Place tomatoes, onion, garlic, and olive oil in a slow cooker. Season with oregano, basil, cayenne pepper, salt, black pepper, and cinnamon.
  • Cover, and cook 10 to 15 hours on Low. The longer you simmer it the more flavorful it becomes. At 10 hours it's really good, but at 15 its even better.

8 large ripe tomatoes, homegrown is best
2 tablespoons butter
1 cup chopped sweet onion
1/2 cup chopped celery
1/2 cup chopped green pepper
3 tablespoons sugar
1 teaspoon salt
1/4 teaspoon white pepper
1/2 teaspoon thyme
1 bay leaf

Steps:

  • Wash and core the tomatoes; place in boiling water for about 15 to 20 seconds, then immediately into ice water to cool quickly. Peel (they should peel easily after the boil/quick-cool).
  • Cut tomatoes in wedges.
  • Place tomato wedges in slow cooker. Top with all remaining ingredients; stir lightly to mix.
  • Cover and cook on low for about 8 hours.
  • Remove the bay leaf when cooking is done.

12 medium-size ripe tomatoes
2 tablespoons olive oil
1 tablespoon sugar
Salt and freshly ground pepper to taste

Steps:

  • Preheat oven to 250 degrees.
  • Without coring, cut the tomatoes in half horizontally. Brush a sheet pan with the olive oil. Set the tomatoes on the pan skin side down
  • Sprinkle the cut faces of the tomatoes with sugar, salt and pepper.
  • Place the tomatoes in the oven, and bake for 3 1/2 to 4 hours, or until their skins are shriveled and the pulp appears somewhat dry. The tomatoes should have a jamlike consistency. Serve warm as a condiment for grilled meats.

300g cherry vine tomatoes
1 or 2 small garlic bulbs, cut in half to expose the flesh
150ml olive oil
crusty bread, to serve (optional)

Steps:

  • Heat the oven to 150C/130C fan/gas 2. Put the tomatoes and garlic in a baking dish that provides a snug fit. Season well. Pour over the olive oil and cover with foil. Bake for 1¼ hrs, then squash the garlic and stir into the oil. Eat warm with crusty bread. Will keep in an airtight container in the fridge for up to two weeks. Leave to cool first.
