This hearty, spicy beef stew is only for those that can handle the heat. I prefer to make it in the slow cooker, but it can be made stove top also. Great served over mashed potatoes or rice.

1 tablespoon olive oil
1 pound beef stew meat
salt and pepper to taste
2 cloves garlic, minced
1 teaspoon chopped fresh ginger
1 fresh jalapeno peppers, diced
1 tablespoon curry powder
1 (14.5 ounce) can diced tomatoes with juice
1 onion, sliced and quartered
1 cup beef broth

Steps:

  • Heat the olive oil in a skillet over medium heat, and brown the beef on all sides. Remove from skillet, reserving juices, and season with salt and pepper. Cook and stir the garlic, ginger, and jalapeno in the skillet for 2 minutes, until tender, and season with curry powder. Mix in the diced tomatoes and juice.
  • Place the onion in the bottom of a slow cooker, and layer with the browned beef. Scoop the skillet mixture into the slow cooker, and mix in the beef broth.
  • Cover, and cook 6 to 8 hours on Low.

This spicy stew features Hunt's® petite diced tomatoes, seafood, and chorizo in one satisfying, Mexican-inspired bowl!

1 tablespoon olive oil
1 onion, chopped
2 each poblano peppers, seeded and chopped
3 cloves garlic, minced
8 ounces chorizo sausage
1 (32 ounce) container chicken stock or broth
2 (14.5 ounce) cans Hunt's® no salt added Petite Diced Tomatoes, drained
1 (11 ounce) can Mexican-style corn, drained
1 (7 ounce) can salsa verde
1 ½ teaspoons ground cumin
½ teaspoon ground chipotle chile pepper, or to taste
1 pound cod fillets (or other firm white fish like halibut), cut into chunks
1 pound large raw shrimp, peeled, deveined
1 Chopped green onions
1 bunch Chopped fresh cilantro
1 Lime wedges

Steps:

  • Heat olive oil in a large pan over medium heat. Add onion, peppers, and garlic; cook and stir until soft, 5 to 7 minutes. Transfer to a plate. Add ground chorizo to pan and cook and stir, crumbling, until browned and cooked through, 5 to 7 minutes. Remove from heat.
  • Pour chicken stock into a large soup pot. Add Hunt's tomatoes, Mexican corn, salsa verde, cumin, chipotle, and softened onion-peppers-garlic mixture. Stir to combine, then simmer for 10 minutes to blend flavors.
  • Stir in cod, shrimp, and reserved chorizo and continue to simmer until fish and shrimp are cooked, about 5 to 7 minutes.
  • Ladle into serving bowls. Serve with fresh chopped green onions, chopped cilantro, and lime wedges.

Slow-Cooked Spicy Beef, Tomato & Chorizo Stew image

You will need a slow cooker for this recipe, but its one that I have been doing for a while for the family, its really cheap but fulfilling and always guaranteed to warm those cockles!!

Number Of Ingredients 15

1/4 kg lean ground beef (or any lean mince to suit your budget)
1/4 kg stewing beef (or any stewing cuts of meat to suit your budget)
4 chorizo sausages, chopped into cm slices
1 (28 ounce) can chopped tomatoes, open and pour into a bowl (chopped plum tomatoes are nice, we will need the juice so don't throw it away)
6 carrots, chopped into inch size pieces
1/2 swede, chopped into inch size pieces
2 turnips, chopped into inch size pieces
6 large potatoes, chopped into inch size pieces
1/2 cup lentils (already soaked)
1/2 cup pearl barley (already soaked)
1 cup chickpeas (already soaked)
3 pints water, to cover the ingredients in the pot but leave at least 1 inch from the top of the pot
2 tablespoons Worcestershire sauce
2 tablespoons gravy, granules
1 pinch pepper (to season)

Steps:

  • Make sure you prepare this in the morning and leave it bubbling away for at least 8 hours (make sure you don't leave it unattended and follow the guidelines of your slow-cooker). You can do this even if you don't have a slow-cooker but use a fairly big deep-bottomed saucepan or casserole pot and leave on a low heat setting for at least 3 hours.
  • 1. Prepare all veggies and chop into about inch size pieces or bigger if you like (I prefer big chunks).
  • 2. Prepare the tomatoes as above.
  • 3. Chop the stewing beef into inch size pieces, you don't really want them much bigger as they will go chewy and not soft.
  • 4. Chop the chorizo sausages as above into cm size slices.
  • 5. place all ingredients (except the gravy granules and worcester sauce) into your slow cooker along with the water or vegetable stock and turn on as per guidelines. Leave until it comes to the boil and when it starts to simmer add the gravy granules and worcester sauce. Leave bubbling away for approx 8 hours (3 hours if not using a slow cooker) and then serve. be careful as can be very hot!

100 g chorizo sausage, sliced (or other dry, spicy sausage)
4 slices parma ham, chopped
1 red onion, chopped
3 garlic cloves, minced
1 sweet pepper, chopped
6 button mushrooms, sliced
1 (14 ounce) can chopped tomatoes
1/2 cup water
1 teaspoon paprika
salt and pepper
1 cup frozen peas
1 cup parsley, chopped
4 fresh eggs

Steps:

  • In a large and deep frying pan, fry the chorizo and ham without any oil.
  • After a couple minutes, add the onion, garlic, mushrooms and peppers and cook for another few minutes.
  • Then add the tomatoes, water, salt, pepper and paprika.
  • Cook for about five minutes.
  • Add peas and cook for another couple minutes.
  • Roughly chop parsley and throw that inches.
  • Make four indentations in the stew and crack the eggs directly into them.
  • Now, either cover the pan and cook for about five minutes until the eggs are set or cook the eggs by grilling them in your oven.
  • Serve immediately with crusty bread and more parsley on top.

My favorite stew recipe, from "Cold Weather Cooking, " by Sarah Leah Chase (one of the authors of Silver Palate) has a tomato based sauce, rounded out with mustard, spices, and a touch of brown sugar. You don't brown the meat first, so it's fast and doesn't make a mess! The secret is baking for several hours at a very low temperature.

2 1/2 lbs lean stewing beef, cut into 1-1/2 inch pieces
12 ounces baby carrots
3 large potatoes, peeled and cut into 1 inch cubes
2 medium turnips, peeled and cut into 3/4 inch pieces (I sometimes use sweet potatoes instead of turnips)
4 small onions, peeled and quartered (about 2 inches in diameter)
3 garlic cloves, minced
1 teaspoon celery seed
1 teaspoon dried thyme
2 teaspoons salt
2 teaspoons fresh ground black pepper
2 1/2 cups V8 vegetable juice (spicy V-8 is good, too)
1/2 cup dry red wine
1 tablespoon Dijon mustard
2 tablespoons light brown sugar
3 1/2 tablespoons tapioca

Steps:

  • Preheat the oven to 275 degrees.
  • In a large mixing bowl combine the beef with all the vegetables.
  • Season with the garlic, celery seeds, thyme, salt, and pepper.
  • In a small bowl whisk together the V-8 juice, wine, mustard, brown sugar, and tapioca, making sure the tapioca dissolves.
  • Add this mixture to the meat and vegetables and stir to blend.
  • Transfer the stew to a dutch oven or large casserole.
  • Cover lightly and cook 5 hours without peeking or disturbing.
  • Makes 6 servings.

2 1/3 cups dried red kidney beans, picked over and rinsed
2 tablespoons canola oil
1 large yellow onion, finely chopped
3 celery ribs, finely chopped
1 green bell pepper, seeded and chopped

4 cups beef broth or 4 cups chicken broth
2 teaspoons red wine vinegar
1/2-3/4 teaspoon red pepper flakes
3 bay leaves
1 lb cured spanish-style chorizo sausage, cut into slices 1/4 inch thick
hot pepper sauce, such as Tabasco
cooked white rice, for serving

Steps:

  • Place the beans in a large bowl with cold water to cover and soak for at least 4 hours or overnight; drain and rinse the beans.
  • In a large, heavy frying pan, heat the oil over med-high heat.
  • Add the onions, celery, and bell pepper and saute until softened and just beginning to brown, about 6 minutes.
  • Add the garlic, season with salt and pepper, and cook for 1 minute.
  • Pour in 1 cup of the broth and stir to scrape up any browned bits on the pan bottom.
  • Transfer the contents of the pan to a slow cooker and stir in the drained beans, remaining 3 cups broth, the vinegar, pepper flakes to taste, bay leaves, and chorizo.
  • Cover and cook on LOW setting for 6-8 hours, stirring once or twice.
  • The beans should be very tender.
  • Discard the bay leaves; season with salt, pepper, and Tabasco.
  • If desired, using the back of a spoon, mash some of the beans against the inside of the cooker to thicken the stew.
  • Spoon rice into shallow bowls, top with the stew and serve.

I love chorizo and quite often whip up a stew like this for supper. It is very adaptable to whatever you happen to have around the house.

2 tablespoons oil
2 bay leaves
1 small onion, thinly sliced into half-moons
1 green pepper, seeded and sliced
2 fresh chorizo sausages, cut into 1 cm thick slices
1 potato, peeled and diced
1 (400 g) can white beans, drained and rinsed
2 (400 g) cans chopped tomatoes
1 tablespoon tomato paste
1 tablespoon paprika (preferably smoked paprika)
1 teaspoon chili powder
1 spring onion, sliced
salt and pepper, to taste

Steps:

  • Heat the oil in a large saucepan and add in the bay leaves, onion, green pepper and chorizo.
  • Saute for 2-3 minutes over a medium-high heat, then add the potato, beans, tomatoes, paste and spices.
  • Bring to a boil, then turn the heat down very low and let simmer covered for 20 minutes.
  • Stir the stew, then leave partially covered for another 20 minutes or until the stew is as thick as you like and the potatoes are cooked.
  • Season to taste.
  • Ladle into bowls and top with the spring onion.
