SLOPPY CUBANOS - RACHAEL RAY

Sloppy Cubanos - Rachael Ray image

Another one from Rachael Ray. I've tried other sloppy joe-type recipes from her and I've always enjoyed them, so I thought I would post this latest one for safekeeping.

A palm full grill seasoning blend (recommended: McCormick Montreal Steak Seasoning
4 crusty rolls, split (if available to you, look for Cuban rolls or Portuguese rolls, they are slightly sweet, but good ole keisers work fine, too)

2 beefsteak tomatoes, sliced

Steps:

  • Make the mojo sauce: put the garlic and onion in a food processor with cumin, lemon zest and juice. Turn processor on and stream in about 1 cup of extra-virgin olive oil and 1/4 cup of water. Turn off processor and reserve.

  • Split Cuban rolls and pile the bottoms with hefty spoonfuls of Sloppy Ropa Vieja Jose mix. Cover meat with sliced dill pickles and bun tops. Serve the plantain chips and sliced tomatoes along side to finish your plates and drizzle tiny spoonfuls of raw mojo sauce over the chips when passing out the plates. Season the tomato slices with a pinch of salt as well.

SLOPPY VEG-HEAD JOE

Sloppy Veg-Head Joe image

Over the last several years I've probably typed up and taught dozens of takes on the American classic, good ole sloppy Joes. I am stupefied that it took me this long to come up with a meat-free buddy. Here ya go, meet Sloppy Veg-head Joe.

Provided by Rachael Ray : Food Network

Categories     main-dish

Time 40m

Yield 4 servings

Number Of Ingredients 16

1 tablespoon canola or vegetable oil
2 jalapeno peppers, seeded and finely chopped
1 red, green, or yellow bell pepper, seeded and chopped
1 red onion, chopped
2 large garlic cloves, chopped
One 21-ounce can black beans, drained and rinsed
1 teaspoon ground cumin
1 teaspoon ground coriander
Salt and pepper
One 15-ounce can diced fire roasted or chunky-style crushed tomatoes
1 rounded tablespoon brown sugar
1 tablespoon Worcestershire sauce (see Cook's Note) or vinegar, any kind
1 lime
4 crusty rolls, split and lightly toasted
2 large dill pickles, chopped
A handful of fresh cilantro leaves, chopped

  • Heat the oil in a skillet over medium-high heat. To the hot oil, add the jalapenos, bell peppers, onions, and garlic and cook until tender, 7 to 8 minutes. Fold in the black beans, cumin, and coriander and season to taste with salt and pepper. 1 1/4 pounds ground beef sirloin
1/4 cup brown sugar
2 teaspoons to 1 tablespoon steak seasoning blend, such as McCormick brand Montreal Seasoning
1 medium onion, chopped
1 small red bell pepper, chopped
1 tablespoon red wine vinegar
1 tablespoon Worcestershire sauce
2 cups tomato sauce
2 tablespoons tomato paste
4 crusty rolls, split, toasted, and lightly buttered

1/2 cup mayonnaise, eyeball the amount
1 teaspoon sweet paprika
1 teaspoon hot cayenne pepper sauce (recommended: Tabasco or Frank's Red Hot)
Salt and freshly ground black pepper
2 scallions, thinly sliced, for garnish

Steps:

  • Heat a large skillet over medium high heat. Add oil and meat to the pan. Spread the meat around the pan and begin to break it up. Combine brown sugar and steak seasoning. Add sugar and spice mixture to the skillet and combine. When the meat has browned, add onion and red peppers to the skillet. Reduce heat to medium and cook onions, peppers, red wine vinegar and Worcestershire sauce with meat for 5 minutes. Add tomato sauce and paste to pan. Stir to combine. Reduce heat to simmer and cook Sloppy Joe mixture 5 minutes longer. Using a large spoon or ice cream scoop, pile sloppy meat onto toasted, buttered bun bottoms and cover with bun tops. HOMEMADE " FRENCH" DRESSING (RACHAEL RAY)

Homemade

Ok -- since I'm always harping on you to buy that bag of salad, I thought I'd take you back to the basics with a garden salad. Now I know you're probably saying, "I don't need a recipe to tell me how to hack up a head of lettuce." You're right; you don't! But you just HAVE to try out that hacked up iceberg with a dressing you make from scratch. It's so much better than the bottled stuff and healthier too because you know EXACTLY what's in it! So today instead of a bag of salad, hack a leafy head. Trust me--tearing it apart is GREAT therapy after a hard day's work. Throw in some sliced cucumbers and radishes, and chopped scallions. Add some shredded carrots for color. Then stir up the dressing. This is VERY tasty! The only note I'll add is something Mom taught me years ago -- never ever ever cut lettuce with a metal utensil. It will make the leaves turn brown very quickly. Always chop lettuce with a plastic or plastic-like utensil or tear it up by hand.

RACHAEL RAY'S SUPER SCRUMPTIOUS SLOPPY JOES

Rachael Ray's Super Scrumptious Sloppy Joes image

This recipe is from Food Network's Rachael Ray. I like it b/c it uses tomato sauce instead of ketchup, and you can spice it up as you like. I add more onions as well as some garlic. * I like to use a little less brown sugar, as we like ours spicier rather than sweet.
