SAUSAGE CHEESE STRATA
An overnight breakfast casserole, Sausage Cheese Strata is comfort food at its finest! It comes together quickly and is easy to customize for specific tastes!

Steps:
- Grease a 13x9 pan and set aside.
- In a large skillet, cook sausage over medium high heat until no pink remains. Remove sausage to a plate. Drain fat from pan, leaving about 1/2 tablespoon.
- Add diced onions to skillet and saute for about 5 minutes until translucent. Return sausage to skillet and stir into onions for a minute or two. Remove from heat.
- In a large bowl, combine eggs, milk, dijon, salt, garlic powder and pepper. Whisk until well combined. Stir in cheese to egg mixture.
- Add bread cubes to prepared pan. Evenly spread sausage mixture over bread crumbs. Pour egg mixture over the entire dish.
- Cover and place in fridge overnight or for a minimum of 8 hours.
- When ready to make, remove dish from fridge and let sit at room temperature for 20 minutes.
- Preheat oven to 350 degrees. Bake for 40-50 minutes, uncovered, until the eggs are set and a knife inserted in the center comes out clean. Let sit for 5-10 minutes before cutting.

EASY SAUSAGE STRATA
This strata is really easy to make. Put it together the day before, then just remove from the refrigerator and bake. Ham or bacon can be substituted for the sausage. Sometimes I add cooked chopped broccoli for a change of pace.

- Place sausage in a large, deep skillet. Cook over medium-high heat until evenly brown. Drain, and set aside.
- Layer bread cubes, sausage, and Cheddar cheese in a lightly greased 7x11 inch baking dish. In a bowl, beat together the eggs, milk, salt, and mustard. Pour the egg mixture over the bread cube mixture. Cover, and refrigerate at least 8 hours or overnight.
- Remove the casserole from the refrigerator 30 minutes before baking. Preheat oven to 350 degrees F (175 degrees C).
- Bake 50 to 60 minutes in the preheated oven, or until a knife inserted in the center comes out clean. Let stand 10 minutes before serving.

Steps:
- 1. Lightly mist a 13 x 9" pan or baking dish with cooking spray. Tear up the bread into bite-size pieces.
- 2. Fry sausage until it's browned & crumbled. Remove from skillet & drain on paper towels. Set aside. (If you're using Bob Evans or Jimmy Dean Sausage Crumbles, just open the package.)
- 3. In a bowl, whisk together milk & eggs.
- 4. Add the salt, pepper, and dry mustard.
- 5. Pour egg mixture over bread cubes.
- 6. Using the end of the whisk, press the bread pieces down into the egg mixture.
- 7. Top with sausage crumbles...
- 8. ...then cheese.
- 9. Cover with wrap & place in refrigerator overnight, or at least 4 hours.
- 10. In the morning, remove strata from the refrigerator & UNCOVER. Preheat oven to 350 degrees F. Allow strata dish to lose most of its chill (about 20 minutes) before placing in oven. If you're using a metal pan, toss it right in when the oven is preheated.
- 11. Bake UNCOVERED at 350 degrees F. for 30-35 minutes, checking early the first time you make it. A knife put in the middle should come out clean & the cheese should be melted & bubbly. Remove from oven & let stand for 5 minutes before serving.
- 12. NOTE: The strata should come out of the oven rather puffy, but will lose that puffiness as it starts to cool. This is just the nature of stratas so you did it all right. It's going to be delicious! =^..^=

- Generously grease a 9x13-inch casserole dish.
- Heat a skillet over medium heat; cook and stir sausage until crumbly and completely browned, about 10 minutes. Transfer cooked sausage to the prepared casserole dish.

BREAKFAST STRATA WITH COUNTRY SAUSAGE
Steps:
- Brush a large gratin dish with some of the oil.
- To cook the sausage, in a large skillet, heat the remaining 1 tablespoon of oil over medium heat. Add the sausage and cook until it begins to brown, 3 to 5 minutes. Add the onion and red and yellow bell peppers and saute until the onion is golden, about 5 minutes. Add the garlic and cook until fragrant, 45 to 60 seconds.
- To assemble the strata, place half of the bread cubes in the prepared gratin dish and top with half of the sausage mixture. Sprinkle 1/4 cup of the grated cheese over the sausage mixture and top with the remaining bread cubes and sausage.
- Whisk together the eggs, milk, sage, and parsley in a medium bowl. Season with salt and pepper. Pour the custard over the strata. Cover with plastic wrap and refrigerate for at least 3 hours and up to 12 hours.
- Preheat the oven to 350°F. Let the chilled strata stand at room temperature for 20 minutes.
- Bake the strata for 30 minutes. Remove from the oven and sprinkle with the remaining 1/4 cup cheese; continue baking until the strata is puffed and golden brown, an additional 20 to 25 minutes. (If the top of the strata starts to get too brown, cover it with aluminum foil.) Remove to a rack to cool slightly. Serve hot or warm.
