Categories     main-dish

Time 45m

Yield 4 servings

Number Of Ingredients 14

One 1-pound skirt steak or flank steak
1 teaspoon kosher salt
1 tablespoon olive oil
1/2 lemon
1 shallot, minced
1/3 cup packed fresh basil leaves, chopped
1/3 cup packed fresh mint leaves, chopped
1/3 cup packed fresh Italian parsley leaves, chopped
1/2 cup extra-virgin olive oil
3/4 teaspoon kosher salt
1 teaspoon grated lemon zest
1 tablespoon lemon juice
1/4 cup sliced almonds, toasted and chopped
3/4 teaspoon smoked paprika

Steps:

  • For the steak: Preheat a grill or grill pan to medium high.
  • Sprinkle the skirt steak with the salt and drizzle with the olive oil. Place on the grill and cook to the desired doneness, 4 to 6 minutes per side, depending on the thickness. (The outside of the steak should have a golden-brown char.) Remove to a platter and squeeze the lemon half over the steak. Let rest for 10 minutes.
  • For the herb sauce: Meanwhile, put the shallot, basil, mint, parsley, olive oil, salt, lemon zest, lemon juice, almonds and paprika in a medium bowl. Mix together until combined.
  • Cut the steak on the bias into 1/2-inch-thick slices, against the grain. Serve with the herb sauce.

GRILLED HOISIN BEEF

Grilled Hoisin Beef image

The (underrated) hoisin sauce is a thickened, fermented soy-sauce-like substance, flavored with chilies, garlic, vinegar, sugar, and, of course, exotic spices. It makes a great marinade. And unless you horribly overcook it, this skirt steak is juicy and tender.

Categories     World Cuisine Recipes     Asian     Chinese

Time 2h18m

Yield 2

Number Of Ingredients 13

1 (1 pound) beef skirt steak
⅓ cup hoisin sauce
3 tablespoons Chinese vinegar (or sherry vinegar)
1 tablespoon soy sauce
2 teaspoons hot sauce
2 teaspoons sesame oil
1 tablespoon grated fresh ginger root
4 cloves garlic, finely minced
1 tablespoon packed brown sugar
1 teaspoon salt
½ teaspoon freshly ground black pepper
1 green onion, light parts only, minced
Toasted sesame seeds

Steps:

  • Whisk hoisin sauce, vinegar, soy sauce, hot sauce, sesame oil, grated ginger, garlic, brown sugar, salt, and pepper together in a large mixing bowl.
  • Cut skirt steak crosswise into about 4 or 5 smaller pieces. Transfer steak into marinade and toss until all pieces are evenly coated. Cover with plastic wrap. Refrigerate; marinate at least 2 hours and up to 12 hours.
  • Line a baking pan with paper towels. Transfer pieces of steak to the paper towels and mop off some of the marinade.
  • Preheat an outdoor grill for high heat and lightly oil the grate.
  • Transfer steak pieces to grill. Cook to medium rare or medium, 4 to 5 minutes per side. An instant-read thermometer inserted into the center should read between 130 and 135 degrees F (about 54 degrees C). Thinner pieces might finish earlier. Transfer steak to a warm plate. Let rest for a few minutes.
  • Transfer steak to a warm serving platter and pour any accumulated juices over skirt steak. Sprinkle with sesame seeds and sliced green onions.

ASIAN SKIRT STEAK

This is a great and very easy to make skirt steak that you just have to marinad, throw on the grill, and then reduce the marinade to use as a dipping sauce. Tons of flavor. Makes sure the grill is very hot, because cooking time is not very long and you want some color on the steak.

  • While I love traditional steak house cuts of beef…New York Strip, Filet, Ribeye, simply treated and perfectly cooked, I also love making “lesser” cuts of meat, bathed in sweet and tangy marinades, that are packed with all kinds of additional flavors. That’s exactly the type of recipe, I show you here with an Asian Marinated Skirt Steak. Skirt, is cut of steak, not nearly as tender as some of the aforementioned cuts, but when treated and cut right, it has a great texture, and frankly the natural beef flavor is even better than some of the more traditional cuts. It also makes a great steak for marinating. Here, I use some Asian themed ingredients, like soy sauce and Hoisin to give the steak another layer of flavor, and when cooked, a really nice charred crust. It’s one of my all time favorite steak recipes. Hope you enjoy it as much as I do! Recipe Overview and Keys to Success To make the best Asian Marinated Skirt Steak, just follow these few simple steps:
  • The measurements for the marinade don’t matter a whole lot. Just make sure you use enough to coat the whole steak (which is why I use a plastic bag) and don’t add any salt, which will dry out the steak. I like to marinate mine for 8 – 24 hours. While there’s not salt in the marinade itself, you still need to salt and pepper the steak right before you cook it When cooking the steak, marinades like this one, that have a good amount of sugar, tend to char pretty quickly, so where I would generally use an insanely hot pan (one that’s smoking slightly), tone the heat down, and just get it “normal” hot While I like just about all my steaks cooked med-rare, this one I take up to medium. I actually like the texture of skirt steak better when cooked medium; less done tends to be a bit chewy Finally, to ensure the steak it tender, identify which way the grain of the meat is running (it should be obvious) and when eating cut the steak against the grain. That shortens, very long meat fibers, that
