BLACK BEANS AND PORK CHOPS
A hearty dinner, great with rice! It is one of family's favorite dinners given to me by my sister. You may adjust amounts of beans and salsa to your preference. I always seem to add more!

Steps:
- Season pork chops with pepper.
- Heat oil in a large skillet over medium-high heat. Cook pork chops in hot oil until browned, 3 to 5 minutes per side.
- Pour beans and salsa over pork chops and season with cilantro. Bring to a boil, reduce heat to medium-low, cover the skillet, and simmer until pork chops are cooked no longer pink in the center, 20 to 35 minutes. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C).

QUICK SKILLET KIELBASA PORK AND BEANS
Swap kielbasa into pork and beans, and top it with hot dog bun croutons and pickle relish.

- Preheat the broiler to high with a rack set 2-inches from the heat source.
- Heat the oil in a large skillet over medium-high heat. Add half of the kielbasa rounds, cut-side down, and cook until browned, about 2 minutes. Flip and cook for 1 minute more. Transfer to a paper-towel-lined plate. Cook the remaining rounds until both sides are browned. Add to the plate. Reduce the heat to medium, add the onion, and cook, stirring, until soft and slightly browned, about 5 minutes.
- Add the tomato paste, brown sugar, vinegar, and chipotle to the onion. Pour half a can of beans (including the bean liquid) into the skillet and mash with a fork until creamy. Then add the rest of the beans (including the bean liquid), the cooked kielbasa, 1/2 cup water, 1 teaspoon salt, and a few grinds of pepper. Simmer until thick and creamy, about 20 minutes.
- Toss the hot dog bun cubes with the melted butter on a baking sheet and sprinkle with salt and pepper. Broil until toasted and browned, flipping occasionally, about 2 minutes.
- Divide the kielbasa and beans among 4 bowls. Top evenly with the hot dog bun croutons and pickle relish.
PORK, BLACK BEAN, AND RICE CASSEROLE
Hubby and I go grocery shopping only once a week because of the stay-at-home order due to the Coronavirus. We got lucky and found a 25-pound pork shoulder roast for $0.59 per pound! Though it's only the 2 of us at home, we could not pass up such a great bargain. We cut the roast up into 2-pound chunks and individually vacuum packed them with our FoodSaver. I made this with items in my pantry and it is filling and delicious.

- Combine pork cubes, 1/2 cup water, and 1/2 teaspoon salt in a Dutch oven. Cover and cook over medium heat for 20 minutes, stirring every 5 minutes. Uncover, raise heat to medium-high, and cook, stirring constantly, until the water evaporates. Cook until pork starts to brown in its rendered fat, about 10 minutes. Add onion and cook for 5 to 10 minutes more. Add minced garlic and cook until fragrant, about 1 minute.
- Add black beans, cream of chicken soup, tomatoes, Hatch chiles, instant rice, corn, salsa, 1/4 cup water, 1/2 teaspoon salt, chili powder, cumin, black pepper, and 1/2 cup Cheddar cheese. Stir to combine.
- Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish.
- Pour pork mixture into the prepared baking dish and bake until thoroughly warmed, 20 to 25 minutes. Remove from oven and top with remaining cheese. Let sit until cheese has melted.

PORK STEW WITH BLACK BEANS

- Wash and drain the beans several times. Place in a large pot with 8 cups water, 1 teaspoon salt and the bay leaves, oregano, pepper and cumin seed. Cover, but keep the lid slightly ajar, and boil until tender, about 2 hours, stirring occasionally and adding more water if needed to keep the beans covered. Drain beans and reserve cooking liquid.
- Pulse the jalapeños and garlic in a food processor, add the onions and pulse again. Remove and set aside.
- Add the cayenne, paprika and cornmeal to the food processor. While processing, pour in about 1 cup cooking liquid from the beans to make a smooth paste.
- Heat the oil in a heavy 6-quart pot. Brown the pork cubes in 4 to 5 batches over medium-high heat, removing them as they brown. When the last batch is browned, add the other pork cubes and their juices and the honey, cumin and cinnamon. Stir to scrape up brown bits from the bottom of the pan.
- Lower the heat and add the onion mixture. Cook, stirring, until heated through, then add the cornmeal paste and 4 cups bean cooking liquid (if there is not enough, add some water) and stir. Bring to a simmer, cover and simmer for 30 minutes, stirring frequently to keep the mixture from sticking. Add the beans and salt to taste, stir and simmer another 30 minutes. Serve over rice.

- To ensure that the dish has the richest taste, first brown the pork. In a very large (12-inch) skillet or the removable, stove-top-safe insert to a slow-cooker, heat 2 tablespoons of the oil over medium-high. When hot, add pork shoulder in a single, uncrowded layer. Sprinkle it generously with 1 teaspoon of salt and, as the cubes brown, turn them until they’re browned on all sides, about 10 minutes. Either scrape the meat into the slow-cooker or transfer the slow-cooker insert to its base, then add water, black beans, 1 of the white onions, and epazote. Cover the slow cooker and turn it on to low. The beans and meat will be done in about 6 hours, though you can hold it for longer.
- While the meat and beans are cooking, make the tomato-green chile sauce. In a very large (12-inch) skillet, heat the remaining 2 tablespoons of oil over medium-high. Add the remaining white onion and stir until it begins to brown. While the onion is cooking, scoop the canned tomato into a blender and pulse it a few times until coarsely pureed. Pour the puree into the pan with the onions. Then add the serranos and cook, stirring regularly, until the mixture is thick enough that it will hold its shape in a spoon.
- Season the sauce with salt (it usually takes a ½ teaspoon) and stir half the tomato mixture into the beans. Then season the meat and beans—it usually takes 1 ½ teaspoons more salt. After a few minutes of simmering, the dish is ready to serve. Ladle it into bowls, spoon a little of the remaining sauce on top and dot with avocado, cilantro, and radish.

- Make a quick rub for the pork by combining the garlic powder, cumin and salt in a small bowl. Rub it on the pork chops and set aside while you start the other prep.
- Heat the olive oil in a large skillet on medium heat, then add the onions. Sauté for a few minutes, then add the peppers. Sauté for about 5 minutes more, and the onions and peppers should start to soften. Add the garlic and cook for 1 more minute.
- Slice the pork chops about 1/2 inch thick. Push the onions and peppers to the edge of the pan to make room for the pork. Add the pork to the center of the pan. Cook the pork slices for 3 minutes on one side so they start to brown, then turn the pieces to cook on the other side.
