- Grate 1 head cauliflower on the large holes of a box grater. Cook in butter in an ovenproof skillet over medium-high heat, stirring, until golden, 8 minutes. Add 1 cup heavy cream; season with nutmeg, salt and pepper. Cook until thickened, 3 to 5 minutes. Top with 1 cup shredded gouda. Broil until browned, about 3 minutes.

Steps:
- Preheat the oven to 425 degrees F (220 degrees C).
- Heat olive oil in a skillet over medium heat. Add onion and salt. Cook for 15 minutes; add garlic, basil, thyme, and parsley. Add cauliflower and toss together.
- Place skillet in preheated oven and roast for 35 minutes, stirring halfway through roasting time.
- Sprinkle cauliflower with Parmesan cheese and serve.

- Preheat broiler. Meanwhile, in a large skillet, heat butter over medium heat. Add ham and garlic; saute for 2 minutes. Add cauliflower, and cook just until crisp-tender. Combine cream and flour; stir into skillet, and blend well. Add salt, pepper and cayenne pepper. Cook and stir until thickened and bubbly; cook and stir 1 minute longer. , Pour into a 2-qt. baking dish. Sprinkle with cheese. Broil until lightly browned, 2-4 minutes. Sprinkle with parsley. Serve immediately.
