Lemon, Garlic and Basil Shrimp Skewers image

Use this recipe as a template for other shrimp skewers. If you don't have honey mustard, stir a little honey into Dijon. Limes would also work well instead of lemons. And if you're finding your home-grown chives or parsley getting out of hand, substitute them for the basil. These need to marinate for 45 minutes before cooking. Recipe developed for Food and Drink by Heather Trim.

1/4 cup lemon juice
2 tablespoons olive oil
1 tablespoon honey mustard
2 garlic cloves, minced
1 1/2 teaspoons finely grated lemon peel
1 lb peeled extra-large shrimp
salt
6 basil leaves, cut into julienne strips

Steps:

  • In a medium bowl, whisk lemon juice with oil, mustard, garlic and lemon peel.
  • Add shrimp and stir to coat.
  • Marinate, covered and refrigerated, for about 45 minutes.
  • Grease grill and preheat barbecue to high.
  • Thread shrimp onto skewers and sprinkle both sides lightly with salt.
  • Place on grill and barbecue until shrimp are pink, about 1½ to 2 minutes a side.
  • Remove, place on a platter and sprinkle with basil.

6 shrimp, heads removed
6 pieces lemongrass, core only cut in 3-inch pieces
Metal or wooden skewers soaked in water for 20 minutes
1 clove garlic, chopped
10 Thai basil leaves, chopped
Pinch sea salt
Fresh ground black pepper
Chopped cilantro leaves

Steps:

  • Skewer shrimp and lemongrass. Mix garlic, Thai basil leaves, salt, pepper and cilantro together in a large bowl. Brush skewered shrimp with marinade. Marinate covered for 4 hours in the refrigerator. Grill skewers for about 2 minutes on each side.

2 ½ tablespoons olive oil
¼ cup butter, melted
1 ½ lemons, juiced
3 tablespoons Dijon mustard (such as Grey Poupon Country Mustard™)
½ cup minced fresh basil leaves
3 cloves garlic, minced
salt to taste
white pepper
3 pounds fresh shrimp, peeled and deveined

Steps:

  • In a shallow, non-porous dish or bowl, mix together olive oil and melted butter. Stir in lemon juice, mustard, basil, and garlic, and season with salt and white pepper. Add shrimp, and toss to coat. Cover, and refrigerate for 1 hour.
  • Preheat grill to high heat. Remove shrimp from marinade, and thread onto skewers. Discard marinade.
  • Lightly oil grill grate, and arrange skewers on preheated grill. Cook for 4 minutes, turning once, or until opaque.

1/3 cup lemon juice
1/4 cup olive oil
2 tablespoons Dijon mustard

2 pounds uncooked large shrimp, peeled and deveined
2 teaspoons grated lemon zest

Steps:

  • Cook couscous according to package directions; remove from heat. Meanwhile, in a large bowl, whisk lemon juice, oil, mustard, garlic, salt and pepper until blended; stir in 1/4 cup basil. Stir 1/4 cup dressing into cooked couscous; reserve remaining dressing., Thread shrimp onto metal or soaked wooden skewers. Grill shrimp, covered, on an oiled rack over medium-high heat until pink, 2-3 minutes on each side., Remove shrimp from skewers; toss with reserved dressing. Serve with couscous. Steps:

  • Fill a dish with water and soak skewers for 30 minutes.
  • Preheat an outdoor grill for medium heat and lightly oil the grate.
  • Thread shrimp onto skewers; place on a large serving dish. Brush skewers with 1 ounce pesto.

1 pound uncooked medium shrimp, peeled and deveined
salt and ground black pepper to taste
2 tablespoons finely chopped shallots
1 tablespoon crushed garlic
¼ cup chicken broth
1 medium lemon, zested and juiced
½ cup heavy cream
5 large basil leaves, chopped
1 pinch red pepper flakes

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook spaghetti in the boiling water, stirring occasionally, until tender yet firm to the bite, about 12 minutes.
  • While the pasta is cooking, heat oil in a large skillet over medium heat. Season shrimp with salt and pepper; add to the pan and cook 30 seconds per side. Remove to a plate.
  • Add shallots to the skillet and cook for 2 minutes. Add garlic and cook until fragrant, about 1 minute. Stir in chicken broth, lemon zest, and 1/2 of the lemon juice; heat for 2 minutes. Reserve remaining lemon juice for another use.
  • Add cream and bring to a simmer. Return shrimp to the skillet and cook until heated through and pink, 2 to 3 minutes. Add basil.
  • Drain spaghetti, reserving 1/4 to 1/2 cup pasta water.

1 tablespoon Dijon mustard
2 ounces melted butter

Steps:

  • For mint pesto:
  • Combine first 7 ingredients in processor. Using on/off turns, process until mixture is smooth. Add mint leaves and lemon juice; process until smooth, stopping occasionally to scrape down sides of bowl. Gradually add oil and process until mint pesto is smooth and creamy. (Can be made 1 day ahead; cover and refrigerate.)
  • For shrimp:
  • Preheat broiler. Sprinkle shrimp with salt and pepper. Whisk oil, garlic, and parsley in medium bowl to blend. Add shrimp; toss to coat. Let stand at room temperature 15 minutes. Arrange shrimp in single layer on broiler pan. Broil until opaque in center, about 2 minutes per side. Transfer to large bowl; sprinkle with lemon juice and toss with 1/2 cup mint pesto. Starting at base end of rosemary, skewer 1 shrimp on each sprig. Arrange on platter and serve.

  • Make the lemon-basil butter: Heat 1 tablespoon butter in a small pot over medium heat. Once melted, remove from the heat and stir in half the basil and a squeeze of lemon juice. Season with salt and pepper.
  • Drain the tomatoes. Halve, pit and cube the avocado. Once the orzo is ready, toss it into a large bowl with the tomatoes, half of the avocado, the remaining basil, a large drizzle of olive oil, and a squeeze of lemon juice (to taste). Season with salt and butter.
