14 lg, hard-boiled eggs
1/2 C mayonnaise
1/2 C sour cream
1 1/2 tsp Dijon mustard
1 tsp fresh lemon juice
1/4 tsp ground pepper
1/3 C crumbled cooked bacon
1/4 C finely shredded sharp Cheddar cheese (1 oz)
2 Tbsp chopped fresh chives
Paprika

Steps:

  • Cut eggs lengthwise in half. Remove yolks to medium bowl. Reserve 24 white halves. Fine chop remaining 4 white halves and set aside. Mash yolks with fork. Add mayo, sour cream, mustard, lemon juice and pepper; mix well. Add chopped egg whites, bacon, cheese and chives; mix well. Spoon 1 heaping Tbsp of yolk mixture into each reserved egg white half. Refrigerate covered, to blend flavors. Sprinkle with paprika just before serving. -Louisiana Cookin'

6 hard-boiled large eggs
3 tablespoons reduced-fat mayonnaise
1 tablespoon reduced-sodium tomato juice
3/4 teaspoon prepared horseradish
1/4 teaspoon hot pepper sauce
1/8 teaspoon salt
1/8 teaspoon pepper
Crumbled cooked bacon, optional

Steps:

  • Cut eggs in half lengthwise. Remove yolks; set aside egg whites and 4 yolks (discard remaining yolks or save for another use)., In a large bowl, mash reserved yolks. Stir in mayonnaise, tomato juice, horseradish, pepper sauce, salt and pepper. Stuff or pipe into egg whites. If desired, garnish with bacon. Chill until serving.

I always plan for a "tester" or two...my husband likes a early sampling before everyone else partakes! A creamy egg filling with just a little kick - hope you like them, too!

1 dozen egg, hard-boiled
1/2 cup mayonnaise
1 tablespoon yellow mustard
1/2 teaspoon Dijon mustard
1/4 teaspoon louisiana hot sauce
1/2 tablespoon white vinegar
1/2 teaspoon salt
1/8 teaspoon white pepper
paprika
fresh dill

Steps:

  • Place eggs in large saucepan and cover with lukewarm water. Bring to hard boil; turn off heat, cover and let stand for 20 minutes. Drain, rinse eggs under cold water and allow to cool to room temperature. Peel, halve, place the yolks in a mixing bowl and mash with a fork. Mix together the remaining ingredients and add to mashed egg yolks. Place in small food processor and blend until smooth.
  • Using a piping bag (or similar filling tool)with a medium-to-large tip, fill egg halves. Or, if you don't want to use a piping bag, just spoon in egg mixture. I love fresh dill, my husband doesn't, so half the eggs get dill and paprika for every one!

1 tablespoon creamy salad dressing (such as Miracle Whip®), or as needed
salt and pepper to taste
1 pinch paprika

Steps:

  • Place eggs in saucepan and cover with water. Bring to boil. Cover, remove from heat, and let eggs sit in hot water for 10 to 12 minutes. Remove from hot water and cool in ice water.
  • Peel and cut in half lengthwise. Remove yolks and combine with mustard, salad dressing and salt and pepper. Mix together until smooth.
  • Refill each egg half with the yolk mixture and sprinkle with paprika.
