This Neiman Marcus Cake recipe is a gooey butter cake with a tangy cream cheese layer for a short-cut dessert recipe.

1 15.25 oz box yellow or white cake mix
1/2 cup butter (melted)
2 large eggs
3-1/2 cup powdered sugar (plus more for serving)
8 ounces cream cheese (room temperature)
2 large eggs
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350°F. Spray a 9x13 cake pan with non-stick spray or line it with foil.
  • In a large mixing bowl, mix cake mix, melted butter, and eggs with a sturdy spoon until well blended. (It will be thick like a cookie dough.)
  • Use your fingers or a bench scraper to press dough into the prepared pan.
  • Make cream cheese topping: In a mixing bowl, beat cream cheese and two cups of powdered sugar on low speed until smooth. Add eggs and vanilla and beat on low speed until blended. Add remaining 1 1/2 cups powdered sugar and beat until blended. Pour over cake bottom and spread to the edges of the pan.
  • Bake for 35 to 40 minutes or until topping is set and golden brown and it's pulling away from the sides of the pan. Cool completely in the pan.
  • To serve, cut into squares and sprinkle top with additional powdered sugar if desired.

1 18.25 ounce package yellow cake mix
1/2 cup butter (melted)
4 large eggs (divided)
8 ounces cream cheese (softened)
4 cups powdered sugar
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350°F (325°F if using a dark pan). Grease a 9x13 inch baking pan or line with parchment paper.
  • Using an electric mixer, combine the cake mix, 2 eggs, and melted butter. The batter will be thick. Spread into the bottom of the greased pan with a rubber spatula.
  • Reuse the bowl (no need to clean) to combine the cream cheese, 2 eggs, powdered sugar, and vanilla until smooth. Pour over the top of the cake batter.
  • Bake for 35 minutes. Allow to cool completely and then slice and serve.

3 1/2 Cups whole milk
4 Cups all-purpose flour
1 1/2 tsp salt
1 tsp baking powder
6 Large eggs, at room temperature
For the Butter: (a must)
1 1/2 Cups butter, room temperature
1 Cup of your best quality strawberry preserves

Steps:

  • Place milk in bowl and microwave on high for two minutes, or warm to touch. Sift flour, salt and baking powder in a large mixing bowl. Crack eggs in another large bowl with an electric mixer and whisk for on medium for about 3 minutes, until foamy. Turn down mixer speed to low and add warm milk. Gradually add flour mixture and beat for about 2 minutes. Let batter rest at room temperature for about 1 hour. Preheat oven to 450. Spray popover pan generously with nonstick spray. (or place 1 T of pan dripping or butter in pan, then heat till piping hot.) Fill popover cups almost to the top with batter and place popover pan on cookie sheet. Transfer to oven and bake for 15 minutes. Turn oven down to 375 and bake for 30 to 35 minutes longer, until popovers are deep golden brown. Remove from oven and pop out popovers on a cool rack. Serve hot with the Strawberry Butter: To make butter, place in bowl and beat until smooth, add preserves and beat until fluffy. Enjoy

Almost everybody has heard the one about the woman lunching at the Neiman Marcus Cafe in Dallas, who enjoyed the chocolate chip cookies so much that she asked for the recipe. For "only two-fifty," the waitress said, it was hers. But when the credit card bill arrived, the woman found the total near $300. Turns out the recipe cost $250, the story goes. In 1997, after years of enduring the myth, Neiman Marcus came up with a recipe - and gave it out for free. It's a delicious variation on chocolate chip cookies, using ground oatmeal, nuts and adding extra chocolate with a grated Hershey bar (you can use any brand you love).

1 cup dark brown sugar, packed
1 cup granulated sugar
2 eggs
1 teaspoon vanilla
2 1/2 cups oatmeal
2 cups flour
1/2 teaspoon salt
1 teaspoon baking soda
1 teaspoon baking powder
12 ounces chocolate chips
1 4-ounce milk chocolate bar
1 1/2 cups chopped nuts

Steps:

  • Heat oven to 375 degrees.
  • Cream together butter and both sugars. Stir in eggs and vanilla.
  • Finely grind oatmeal in a blender or food processor. Combine the oatmeal, flour, salt, baking powder and soda in a medium bowl, and slowly add it to the wet ingredients. Beat just until combined. Grate chocolate bar using a microplane grater and add it, along with chocolate chips and nuts to the batter. Mix just to combine.
  • Drop by heaping tablespoonfuls, 2 inches apart, on a greased cookie sheet. Bake for 10 minutes.

1 large onion, chopped fine
6 tablespoons butter
3 (3 ounce) cans chopped green chilies, drained well
4 (14 ounce) cans diced tomatoes, drained well
12 ounces cream cheese, cut into bits
4 cups chicken broth
2 cups half-and-half
2 tablespoons lemon juice
2 teaspoons lemon juice
cayenne
salt
monterey jack cheese, shredded
corn tortilla strips

Steps:

  • In saucepan, cook onion in butter over moderate heat, stirring occasionally until soft.
  • Add chilies and tomatoes. Cook 10 min or so until liquid is evaporated.
  • Stir in cream cheese. Maintain mod heat until cheese is melted.
  • Stir in chicken broth, half and half, lemon juice, cayenne and salt. Heat soup until it is hot, but do not let it boil.
  • Serve with mont jack and tortilla strips.

5 cups blended oatmeal (measure oatmeal and blend in a blender to a fine powder)
24 ounces chocolate chips
2 cups brown sugar
1 teaspoon salt
1 -8 ounce Hershey Bar (grated, I use 2 bars)
4 eggs
2 teaspoons baking powder
2 teaspoons vanilla
3 cups chopped nuts (your choice, I like pecans and almonds)

Steps:

  • Cream the butter and both sugars.
  • Add eggs and vanilla;
  • mix together with flour, oatmeal, salt, baking powder, and soda.
  • Add chocolate chips,Hershey Bar and nuts.
  • Roll into balls and place two inches apart on a cookie sheet.
  • Bake for 10 minutes at 375 degrees.

  • In a mixing bowl, combine cake mix, 2 room temperature eggs and softened, mushy butter. Beat until smooth. Drop gobs of cake mix mixture into pan. Dampen your fingers with some water and press gently to cover pan evenly.
  • In the same bowl you used for the cake mix (and no need to wash it), beat softened cream cheese, powdered sugar, remaining room temperature eggs and vanilla until smooth. Spread on top of crust mixture.
  • Bake 32-38 minutes until edges are brown and center is set but still a little wobbly. If using two 8 inch square pans, check at 28 minutes.
