POOR MAN'S HAMBURGER STEAKS
An old fashioned hamburger steak recipe topped with cream of mushroom. Serve with some warm mashed potatoes and your favorite green vegetable. Our family loves this. Makes a great cheap meal!

- Preheat the oven to 350 degrees F (175 degrees C).
- In a large bowl, mix together the ground beef, crackers, milk, pepper, salt, garlic powder, and Italian seasoning. Form 6 or 8 large beef patties, and place in a 9x13 inch baking dish, or other shallow casserole dish. Pour the condensed soup evenly over the top of the patties, and sprinkle canned mushrooms over the top. Cover the pan with a lid or aluminum foil.
- Bake for about 45 minutes in the preheated oven, or until beef patties are well done.

RICH MAN'S HAMBURGERS
This came from "The Great Big Burger Book," by Jane Murphy and Liz Yeh Singh. It makes a rich and tasty splurge of a hamburger. This would also be good served with a mustard-horseradish sauce. An English recipe brought across the ocean to end up in the Northeast and Mid Atlantic states.

Steps:
- CUT the beef into 1-inch chunks.
- Place in food processor in two batches and pulse until it's coarsely ground.
- (Don't overprocess; you want it a little chunky.) Put meat in a bowl and add the shallots, chives, mustard, Tabasco, egg yolks, Worcestershire, cognac, sea salt, capers and pepper.
- With very clean hands, work the ingredients into the meat, then form into three or four burgers about 1 1/2 inches thick.
- PLACE burgers in the refrigerator to chill and firm up while you start a fire in the grill.
- Grill over direct heat about 5 to 6 minutes per side.
- Insert an instant-read thermometer from the side to make sure the center is 160 degrees.
- While burgers are grilling, brush the insides of the rolls with melted butter.
- Place on the grill, cut side down, to toast lightly.
- Serve with Brooklyn Ketchup and your favorite toppings.
- For Brooklyn Ketchup: BEAT all the ingredients together in a small bowl or cup.
- The authors note that the garlic flavor gets stronger if you let it stand for an hour, but don't make it more than 24 hours in advance.
- Makes about 1/4 cup.

MINI MAN BURGERS

- Preheat the oven to 250 degrees F. Preheat a griddle to 350 degrees F.
- Combine the onion powder, garlic powder, pepper, and salt in a small bowl. Set aside.
- Line a jellyroll or sheet pan with parchment paper, and place the ground chuck in the middle of the pan. Cover the meat with a large sheet of plastic wrap. Roll meat with a rolling pin until it covers the surface of the pan; it should be very thin. Remove the plastic wrap, and sprinkle the meat with the seasoning mixture. Fold the meat in half, from side to side, using the parchment paper. Use a pizza wheel to cut the meat into 8 even squares.
- Wrap the buns in foil and place in the oven for 5 to 10 minutes. Meanwhile, place the burgers on the griddle and cook for 2 to 3 minutes per side.
- Remove the buns from the oven. Spread a small amount of mayonnaise on each bun and top with the burger and any other condiments, as desired. Serve immediately.

- Mix macaroni,cream cheese and cottage cheese put in greased (I use spray) 9"x 13" casserole dish.
- Mix hamburger, tomato sauce and spices.
- let simmer for about 15 minutes.
- Put hamburger mixture evenly on top of macaroni.
- Sprinkle mozzarella cheese on top of hamburger.
- Cook at 350 degrees for about 30 minutes.
- Let stand for about 5 minutes before cutting.
