CHICKEN PASTA SALAD WITH CREAMY DRESSING
Recipe video above. This is a big batch Chicken Pasta Salad with plenty of creamy dressing, lightened up using a combination of sour cream and mayonnaise so it's not excessively oil. Make it today, enjoy it for days!After a no mayo version? Use a Creamy Yogurt Dressing instead.

Steps:
- Cook pasta: Bring a large pot of water to the boil. Add salt, then cook pasta per packet directions. Drain well, let cool.
- Dressing: Mix Dressing ingredients in a bowl. Set aside 10 minutes+.
- Cook bacon: Place bacon in a cold non-stick skillet (Note X). Turn stove on to medium high, then cook bacon until golden. Drain on paper towels.
- Toss! Place cooked pasta in a large bowl along with all the Pasta Salad ingredients, reserving some bacon for garnish. Pour over Dressing, then toss well.
- Set aside for 20 minutes. Transfer to serving bowl, sprinkle with remaining bacon. Serve!
- Storage: Keeps for 3 - 4 days in the fridge. Best to bring to room temp before serving!

Fabulous light dish that's great on a hot summers night. An easy recipe to swap different ingredients around. Coriander (cilantro) instead of basil is yum! Also some crispy bacon or prosciutto goes well. Please note an Australian tablespoon is 4 teaspoons.

- Cook pasta according to packet directions, drain and rinse under cold water.
- Combine pasta with chicken, tomatoes, capsicum, onion, olives and basil in a large bowl.
- Make dressing - combine all ingredients in a screw top jar, shake to combine.
- Add dressing to chicken pasta and toss gently to combine all ingredients.

- Grill chicken, covered, over medium heat or broil 4 in. from heat for 4-6 minutes on each side or until a thermometer reads 170°. Set aside., Cook pasta according to package directions. Meanwhile, in a large serving bowl, combine the salad greens, artichokes, olives and tomatoes. Cube chicken. Drain pasta and rinse in cold water; add pasta and chicken to salad greens., Drizzle dressing over salad; sprinkle with walnuts and cheese. Toss to coat. Serve immediately.

- Bring a large pot of lightly salted water to a boil. Cook chicken breasts in the boiling water until no longer pink in the center and the juices run clear, 12 to 15 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C). Rinse chicken in cold water to cool, cut into small chunks, and refrigerate to cool completely.
- Bring a large pot of lightly salted water to a boil. Cook shell pasta in the boiling water, stirring occasionally, until cooked through but firm to the bite, 8 minutes; drain. Rinse pasta with cold water until cool; drain.
