Elmo's Nightmare: Brussels Sprouts with Onions and Bacon image

Provided by Robert Irvine : Food Network

Categories     side-dish

Time 30m

Yield 6 servings

Number Of Ingredients 8

1/4 pound bacon, small dice*
1 onion, finely sliced
Salt
1 1/2 pounds Brussels sprouts, leaves only
4 cloves garlic, minced
1/8 cup unsalted butter
2 teaspoons fresh chopped tarragon leaves
Freshly ground black pepper

Steps:

  • In a large deep skillet, over a medium heat, add the bacon. Render the fat and cook until crisp and golden brown. At this point, add the onion and cook until translucent. Remove from heat and set aside.
  • Fill a small saucepan with salted water and bring to a boil over medium heat. Add the sprout leaves and blanch for about 3 minutes. Transfer the leaves to a large bowl of iced water. Drain. Reheat the bacon and onion in the skillet until sizzling, then add the blanched sprout leaves and cook for another 2 minutes.
  • Toss together well and finish with the butter and fresh tarragon. Season with salt and pepper, to taste and transfer to a serving bowl. Serve immediately.

EMERIL'S OVEN-BRAISED OSSO BUCO WITH ORZO "RISOTTO"

Emeril's Oven-Braised Osso Buco with Orzo

Provided by Emeril Lagasse

Categories     main-dish

Time 3h35m

Yield 8 servings

Number Of Ingredients 26

8 veal shanks, about 1 1/2 inches thick, tied tightly around the middle with kitchen string
3 cups chopped onions
4 tablespoons olive oil
1/2 cup all-purpose flour
1 1/2 tablespoons Essence, recipe follows
1 1/2 cups diced celery
1 1/2 cups diced carrots
2 tablespoons minced garlic
3 bay leaves
1 1/2 tablespoons chopped fresh thyme leaves
1 1/2 tablespoons chopped fresh rosemary leaves
1 tablespoon salt
1 1/2 teaspoons coarsely ground black pepper
2 1/4 cups dry red wine
1 1/2 quarts rich veal or beef stock
1/2 cup chopped fresh parsley leaves
1 1/2 pounds orzo pasta (uncooked)
3/4 cup finely grated Parmesan, for serving
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • Preheat the oven to 350 degrees F.
  • Heat a large Dutch oven over medium heat. Add the olive oil and heat until very hot. In a shallow bowl or plate combine the flour with the Essence and dredge the shanks in the seasoned flour. Shake the shanks to remove any excess flour, then transfer shanks to the pot and cook until well-browned on all sides, working in batches if necessary, 6 to 8 minutes. Remove the shanks to a roasting pan or deep lasagna pan large enough to hold the shanks in 1 layer and set aside. Add the onions, celery and carrots to the Dutch oven and cook until softened and lightly browned around the edges, 4 to 6 minutes. Add the garlic, bay leaves, thyme, rosemary, salt and pepper and cook for 1 minute. Deglaze the pot with the red wine, scraping up any browned bits from the bottom of the pan. Transfer to the roasting pan along with the stock and bring to a boil on the stovetop. Cover the roasting pan and transfer to the oven. Cook for about 2 1/2 hours, or until the shanks are very tender.
  • Remove from the oven and add the parsley and orzo to the pan; stir to distribute evenly. Replace the cover and return the pan to the oven for 20 minutes. Remove the pot from the oven and stir gently. Cover and let sit for 10 minutes. Serve immediately, 1 shank per person on top of a bed of orzo. Garnish with some of the grated Parmesan.
  • Combine all ingredients thoroughly.

CALDO DE COSTILLA (COLOMBIAN BEEF RIB SOUP)

Caldo de Costilla (Colombian Beef Rib Soup) image

This hearty soup from the Colombian Andes uses a handful of ingredients and takes only a few minutes of active time to put together. It's traditionally served for breakfast (especially after a night of dancing and drinking) along with hot chocolate and arepas, but it's hearty enough to serve for any meal. Because of its relatively neutral flavor profile, it's good to make in large batches (the beef broth can easily be doubled or tripled through Step 4) to be doctored into different dishes (see Tip).

Provided by J. Kenji López-Alt

Categories     dinner, soups and stews, main course

Yield 4 servings

Number Of Ingredients 8

1 bunch cilantro, leaves and fine stems
8 scallions
1 yellow onion, skin removed, halved pole to pole
5 to 6 medium cloves garlic, lightly smashed
1 teaspoon whole cumin seeds
3 to 4 pounds beef short ribs, oxtail or beef shins
Salt
1 pound firm, nonstarchy potatoes, such as red bliss or Yukon Gold

Steps:

  • Reserve a small handful of cilantro and 5 scallions. To a large stockpot or Dutch oven, add the split onion, the garlic cloves, the cumin seeds and the beef. Cover with water by 2 inches (3 to 4 quarts total).
  • Bring to a simmer over high heat, then reduce heat to maintain a very bare simmer. Using a ladle, skim off and discard any solid scum that has collected on the surface. Roughly chop the remaining cilantro and scallions, and add them to the pot. Cover and cook until the beef is tender and a skewer or knife shows no resistance when poked through the meat, 2½ to 3 hours.
  • Using tongs or a skimmer, remove the meat with the bones to a large plate and set aside.
  • Set a fine mesh strainer in a large bowl and strain the broth. Discard the solids. Scrub out the pot, then return the broth to it and season to taste with salt. (It should taste quite salty.) Proceed immediately to the next step, or return the beef to the broth and refrigerate in sealed containers for up to a week before continuing (or adapting into one of the alternate serving methods, see Note).
  • Peel the potatoes, halve or quarter them lengthwise, then cut crosswise into ⅓- to ½-inch-thick slices and add them to the broth. Simmer the potato slices in the broth until tender, 10 to 12 minutes. Return the beef to the broth.
  • Roughly chop the reserved cilantro and scallions, and add to the broth. Serve immediately.
