Singgang Daging is a Malaysian dish of beef cooked in a soup infused with tamarind, ginger, garlic, onion and other spices.

1 kg beef ribs
200 g okra, trimmed
4 tbsp tamarind pulp
1/2 thumb sized ginger, thinly sliced
1 tbsp coriander seeds, crushed
1 tsp black pepper, crushed
6 pcs shallots, thinly sliced
4 cloves garlic, pounded
3 pcs birds eye chillies, minced
lemon zest
2 tsp brown sugar
fish sauce
freshly ground black pepper

Steps:

  • In a pot add beef ribs, onion, garlic, ginger, coriander and chillies. Fill it with water just enough to cover the meat. Bring it to a boil then simmer for 1 hour and 30 minutes.
  • Add the tamarind pulp and lemon zest then season with fish sauce and freshly ground black pepper then let it continue to simmer for 15 minutes.
  • Add okra then simmer for 5 more minutes then serve.

3 lbs beef short ribs
3 garlic cloves, finely chopped
1 teaspoon finely grated fresh ginger
1 teaspoon salt
3 tablespoons peanut oil
1/4 cup dark soy sauce
1/2 cup water
2 tablespoons dry sherry
1/2 teaspoon five-spice powder
1/4 teaspoon ground black pepper
1 tablespoon palm sugar (or substitute) or 1 tablespoon honey

Steps:

  • Have spareribs cut into individual ribs and short lengths. They are easier to cook and eat this way.
  • Rub them with garlic, ginger, and salt.
  • Heat oil in a wok and stir fry for 5 or 6 minutes over high heat until ribs are browned.
  • Combine all the other ingredients and pour over the ribs.
  • Bring to boil, then reduce heat to simmer, cover pan and cook until meat on ribs is very tender and liquid reduced.
  • Uncover, stir in honey or sugar until dissolved.
  • Serve hot.
  • *Ribs can be roasted in a preheated moderately hot oven for a few minutes until further glazed and browned.

This recipe is native to Eastern Java, because in this recipe, we use Petis Udang. Petis Udang is translated as Shrimp Paste. Don't get confused with Dried Shrimp Paste, that is translated as Terasi Udang in Indonesian. This Petis Udang is a common ingredient for Eastern Java style cook.

500 g boneless mutton or 500 g beef
2 tablespoons indonesian sweet soy sauce
1 tablespoon shrimp paste (it's different with dried shrimp paste or terasi)
3 tablespoons oil, to saute
300 ml water
3 red chili peppers, discard the seed, finely sliced
6 shallots
3 garlic cloves
6 bird chiles
1 teaspoon white pepper
2 medium tomatoes
salt, as desired

Steps:

  • Marinate meat with sweet soy sauce and petis udang for 15 - 30 minutes.
  • Heat oil in a skillet over medium heat, add pureed mixture, saute until fragrant. Add meat, stir thru until the meat stiff and add water. Cover the skillet with lid and cook in medium heat, stir occasionally until the meats are tender and the water almost evaporates.
  • Uncover the skillet, keep stirring until the oil of meats come out.
  • Add red chilli peppers, stir until soft. Remove from heat and serve.
  • PS: Use less red chili peppers and bird chilies, if you don't like hot taste.
  • Tips: Beat the meat with a meat mallet before slicing/cutting to tenderize.
