Honey-Caramelized Figs with Yogurt image

Meet your new go-to breakfast. A light dusting of cinnamon adds just the right finish.

1 tablespoon honey, plus more for drizzling
8 ounces fresh figs, halved
2 cups plain low-fat Greek yogurt
Pinch ground cinnamon
1/4 cup chopped pistachios

Steps:

  • Heat honey in a medium skillet over medium heat. Cook figs, cut sides down, until caramelized, about 5 minutes.
  • Serve over yogurt with cinnamon and pistachios. Drizzle with honey, if desired.

Coconut Yogurt with Fresh Figs and Apples image

4 young Thai coconuts (yields 3 cups young Thai coconut meat)
1/2 cup coconut water
2 tablespoons agave nectar
1 3/4 tablespoons fresh lime juice
1/4 teaspoon sea salt
4 capsules acidophilus probiotic powder, optional
Zest of one lime
Fresh blueberries, for garnish
Dried goji berries, soaked for 10 minutes, for garnish
2 cups fresh figs, stemmed and halved
1 medium to large apple, sliced

Steps:

  • Crack open the coconuts with a cleaver or coconut knife and scrape out the coconut meat with the backside of a spoon. Remove any shell pieces or hard particles and rinse with fresh water. Place the coconut meat, coconut water, agave nectar, lime juice, sea salt, acidophilus probiotic powder if using and the lime zest in a high-speed blender and blend until completely smooth. Top with blueberries and goji berries and serve with fresh figs and apple slices. If you desire a firmer, chilled yogurt, place in the refrigerator for 30 minutes before serving.

This is from a cookbook entitled "Creative Cooking", and somehow manages to be both refreshing and decadent. It's so good. If you can only get small figs, use a few more; the glasses should be full almost to the top. Why not just make a double batch anyway? I usually do. :) I hope you enjoy this! Please note: Cooking time is chilling time.

8 fresh figs
1/2 cup heavy cream
1/2 cup yogurt
3 -4 tablespoons light brown sugar

Steps:

  • Submerge figs in hot (not boiling) water for 1 minute.
  • Drain, peel, and quarter each fig.
  • Beat the cream lightly, and blend it into the yogurt.
  • Spoon a little of the cream mixture into four sherbet glasses.
  • Top with a layer of figs and continue with alternating layers, finishing with a layer of cream.
  • Sprinkle each layer with the sugar.
  • NOTE: If I want this to be rather sweet, I sprinkle sugar on top of each cream layer, if I want less, I only use it on the very top.
  • It's up to you.
  • I have tossed the figs in the sugar before with decent results.
  • Chill in the refrigerator for at least two hours to allow the sugar to melt into the cream.
