- In a small saucepan heat the sugar and water and bring to a boil. When the sugar is completely dissolved remove from heat and cool to room temperature. Refrigerate, covered, for up to 1 week.
- Simple syrup can be used to sweeten iced tea, mint juleps or other alcohol based drinks, fruit salad, as well as a soaking liquid for in between layers of genoise cake.

PERFECT ICED TEA

- Hot-Brewed:
- Bring 8 cups water to a simmer; remove from the heat and add 3 tablespoons loose tea or 6 tea bags. Let steep about 4 minutes, until it's the strength you like. Strain loose tea with a fine-mesh sieve or remove the tea bags. Let cool, then transfer to a pitcher, cover and refrigerate.
- Cold-Brewed:
- Combine 8 cups cold water and 6 tablespoons loose tea or 10 tea bags in a pitcher. Cover and refrigerate 15 to 36 hours, until it's the strength you like. Strain loose tea with a fine-mesh sieve or remove the tea bags.
- Sweet Teas:
- Combine 3/4 cup each sugar and water in a saucepan and add 1 infuser, if desired. Bring to a simmer over medium heat, stirring until the sugar dissolves, then remove from the heat and let cool. Strain the infused syrup through a fine-mesh sieve (you'll get about 1 cup).
- Orange Add 6 strips zest
- Blackberries 1 cup
- Cinnamon 2 sticks
- Lavender 3 tablespoons dried
- Vanilla 1 halved bean
- Mint 3 sprigs
- Ginger 1 cup sliced
- Lemon 8 strips zest
- Nectarine 1 cup chopped
- Cucumber 2 cups chopped

- For the simple syrup, pour 1 cup of the boiled water into a glass measuring cup, stir in sugar until it dissolves.
- Set aside.
- Pour remaining water into a tea pot or glass measuring cup with tea bags.
- Steep 5 minutes, then remove the bags.
- Stir syrup into the tea.
- Chill tea.

- Steep 15 minutes; discard tea bags (do not squeeze for the tea will become bitter).
- Add sugar and baking soda; stir to dissolve.
- Add to mixture the lemon juice.
- To serve: pour enough tea syrup to taste in tall iced tea glass filled with ice cubes. Fill remainder of glass with water. Enjoy!

Steps:
- In small saucepan, combine sugar and water.
- Over medium-low heat, bring to a boil, stirring occasionally.
- While syrup is heating, rinse mint leaves under water to eliminate dirt.
- Once sugar has dissolved, remove from heat and add mint leaves, making sure they are submerged.
- Cool 1 hour.
- Strain.
- Store in an airtight container and refrigerate; will keep for 3-4 weeks.
BLUEBERRY DRINK SYRUP FOR BLUEBERRY ICED TEA
A refreshing change from ordinary iced tea. I bet it would be good added to some other drinks also...blueberry lemonade maybe???

Steps:
- Place blueberries in a saucepan with water. Bring to a boil, reduce heat and simmer 10 minutes.
- Set sieve or colander lined with cheesecloth (I use a thick papertowel) over a bowl and pour in the blueberry mixture.
- Gently press out the juice with a spoon or by twisting the cheesecloth. Discard the pulp and measure the juice into saucepan.
- Add 1/2 cup sugar for each cup of juice and cook over medium heat, stirring until sugar is dissolved.
- Bring to a boil and cook 2 minutes.
- Chill and pour into covered jar. Store in refrigerator.
- Add two tablespoons to each glass of prepared iced tea. Stir well and garnish with a lemon slice.
