1 cup raisins
½ cup hot water
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups quick cooking oats
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1 cup packed brown sugar
½ cup chopped walnuts
2 eggs
¾ cup vegetable oil
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Soak raisins in hot water and set aside.
  • In large bowl, sift flour with soda, salt and spices. Blend in rolled oats, sugar and nuts. In a separate bowl, beat eggs with fork and add oil, vanilla, and raisins and water mixture. Pour into dry ingredients, stirring until well mixed. Drop by teaspoonfuls about two inches apart onto ungreased cookie sheets.
  • Bake 10 to 13 minutes in the preheated oven, until the edges are golden.

2 cups quick-cooking oats (such as Robin Hood®)
½ cup milk chocolate chips (such as President's Choice®)
½ cup white sugar
2 scoops vanilla protein powder (such as Leanfit® 100% Whey Protein Blend)
1 teaspoon baking soda
¼ teaspoon salt
6 tablespoons smooth peanut butter (such as Kraft®)
2 large eggs
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Combine oats, chocolate chips, sugar, protein powder, baking soda, and salt in a medium bowl. Add peanut butter, 1 egg, and vanilla extract; mix well. Mix in remaining egg. Knead until dough is thick and sticky.
  • Drop tablespoonfuls of dough 2 inches apart onto the prepared baking sheets. Using your palm, slightly flatten cookies.
  • Bake in the preheated oven until the bottoms and edges are golden brown, about 10 minutes. Let cool for 2 minutes on the pan before transferring to a wire rack to cool completely.

1 ½ cup instant oats
½ tsp baking powder
pinch of salt
¼ cup granulated Stevia or other low carb granulated sweetener
¼ cup vanilla protein powder
¼ cup unsweetened finely shredded coconut
2 tbsp coconut oil, melted
5 tbsp unsweetened almond or cow milk (more or less as necessary)

Steps:

  • Preheat oven to 350°F.
  • Line a baking sheet with parchment paper. Set aside.
  • In a bowl place the instant oats, baking powder, salt, sweetener, protein powder and shredded coconut.
  • Add the coconut oil.
  • Slowly stir in the almond milk, 1 tablespoon at a time until the mixture is moistened throughout.
  • Drop the dough by rounded tablespoons onto the prepared baking sheet.
  • Flatten the cookies with the back of a wet spoon.
  • Bake in preheated oven for 8-10 minutes.
  • Remove from the oven and allow to cool completely before serving.

These are NOT regular oatmeal cookies, they are the best "health food" cookie I've ever had though. They beat a packaged protein bar by leaps and bounds, and they're budget-friendly as well!

2 cups gluten-free quick oats (Bob's Red Mill makes some)
1/2 cup milk
2 eggs
1/2 teaspoon salt
2 teaspoons vanilla
2 scoops vanilla whey protein powder (make sure it is gluten-free, I used Spirutein Vanilla Whey)
1 -2 tablespoon cinnamon, depending on your taste (it helps stabilize your blood sugar)
1/3 cup brown sugar (more if you like them really sweet) or 1/3 cup honey (more if you like them really sweet)

Steps:

  • Mix all ingredients together. The mixture should be like sticky cookie dough, not crumbly (add more milk if too dry and more protein powder if too wet). Drop by spoonfuls (about 1 1/2 tbsp/cookie) onto greased or parchment lined cookie sheets. Bake at 350 degrees for 15 minutes.

These are adapted from Melissa Clark's "Classic Oatmeal Raisin Cookies" on the NY Times cooking site. I swapped healthier alternatives for some of the butter, flour, and sugar, and ended up with subtly sweet breakfast cookies that my boyfriend eats all day at work. Store in an airtight container at room temperature.

1 tablespoon chia seeds
½ cup water
½ cup unsalted butter, softened
½ cup brown sugar
2 tablespoons stevia powder
1 large egg
3 tablespoons water
1 tablespoon ground flax seeds
1 tablespoon vanilla extract
1 cup whole wheat flour
¼ cup almond flour
¼ cup whey protein powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
¾ teaspoon salt
¼ teaspoon ground nutmeg
¼ teaspoon ground cardamom
3 cups rolled oats
1 cup raisins
1 cup chopped walnuts

Steps:

  • Prepare chia gel in advance by swishing chia seeds with 1/2 cup water and allowing to sit in a covered Mason jar for a minimum of 15 minutes.
  • Preheat the oven to 325 degrees F (165 degrees C). Grease 2 large cookie sheets, or line with parchment paper.
  • Beat butter with an electric mixer in a large bowl until creamy. Add brown sugar and stevia and beat until fluffy, 2 to 5 minutes. Beat in chia gel, egg, 3 tablespoons water, ground flax, and vanilla extract.
  • Stir whole wheat flour, almond flour, protein powder, baking soda, cinnamon, nutmeg, and cardamom together in a separate bowl. Set mixer on low speed and mix dry mixture into the wet ingredients. Stir in oats, raisins, and walnuts.
  • Spoon out dough by large tablespoonfuls onto the prepared cookie sheets, leaving at least 2 inches between cookies.
  • Bake in the preheated oven until cookie edges brown, about 15 minutes. Centers will be soft, but they'll firm up as the cookies cool. Cool on a wire rack.

With a large cookie scoop or spoon, portion the batter by 1/4 cupfuls onto the prepared cookie sheet. If needed, shape them lightly with your fingers so that they are round and slightly flat on top. Bake for 12 to 14 minutes, until the cookies feel dry and set on the top and edges and a toothpick inserted into the center comes out clean. Let cool on the pan for 10 minutes, then transfer to a wire rack to finish cooling completely.
