I have been making corn pie for get togethers for as long as I can remember. It all started with the boxed corn bread mix and quickly decided I wanted to learn to make it from scratch. I wanted a corn pie with texture which I could achieve with a good balance of cornmeal and flour. To make it savory I added the typical seasonings. To keep the flavors of the Caribbean, I added our wonderful pimento peppers and the key to Caribbean cooking, the green seasoning. All the flavors shine in harmony and the whole corn kernels give each bite a pop of flavor.

Number Of Ingredients 17

1 cup buttermilk ((1 tbs vinegar plus 1 cup whole milk minus 1 tbs))
1/2 tsp baking soda
½ tsp salt
6 tbs butter (melted)
1 egg
1 can cream style corn
Pinch black pepper
1 tsp green seasoning (optional)
1 cup fine cornmeal
1 cup flour
½ cup brown sugar
1 can corn (drained)
¼ cup chopped red bell pepper
¼ cup chopped scallions
¼ cup chopped onion
2 pimento peppers (finely diced)
Hot pepper (optional)

Steps:

  • Preheat oven to 350 degrees Fahrenheit.
  • To make buttermilk, add 1 tbs of vinegar to a measuring cup, fill up to the 1 cup mark with whole milk. Allow it to sit for 5 mins. Mix in ½ tsp baking soda.
  • Place all dry ingredients in a bowl (1 cup cornmeal, 1 cup flour, ½ cup brown sugar) and mix to combine. Mix in whole corn, bell pepper, scallions, onion, pimento pepper(and hot pepper, if using).
  • Add the wet ingredients (6 tbs melted butter, buttermilk and 1 egg) to the dry ingredients and mix to combine.
  • Pour batter into a greased baking dish, place in the oven and cook for 40-60 mins until firm and the top is golden brown.

1 cup diced peeled potatoes
1/3 cup milk
2 eggs
2 cups fresh or frozen corn, thawed
1 teaspoon sugar
1/2 teaspoon salt
1 package (15 ounces) refrigerated pie pastry

Steps:

  • Place potatoes in a small saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 6-8 minutes or until tender. Drain and set aside. , In a blender, combine the milk, eggs, corn, sugar and salt; cover and process until blended., Line a 9-in. pie plate with bottom pastry; trim pastry even with edge of plate. Spoon potatoes into crust; top with corn mixture (crust will be full). Roll out remaining pastry; make a lattice crust. Seal and flute edges. , Bake at 375° for 35-40 minutes or until crust is golden brown and filling is bubbly.

SIMPLE CORN PIE

My grandmother always made this but she used her own pie dough. I again am very lucky to live near Anish country so I buy theirs frozen and just thaw and roll. Refridgerated is also fine. Served with a side of smoked sausage or whatever you like. Hope you try it.

2 refrigerated pie crusts or your own
1 can(s) 15oz creamed corn
1 can(s) 15oz whole corn kernels
2 hard boiled eggs chopped
1 tsp salt
1 tsp pepper

Steps:

  • 1. Preheat oven to 350 degrees. Place one pie crust in 9-10 inch pie pan. Pour in crust both cans of corn, mix in eggs, and salt and pepper to taste. Put top crust on and crimp edges. Cut 3 slits in top crust. Place pie pan on cookie sheet to catch possible spillage. Bake for 40 min. until top crust is done. Cover edges with foil if they are getting to dark. Take out of oven and let sit for 10-15 min. for it to set. Slice and dig in.

My dad's wife taught me how to make this recipe and it's always a big success! People just love the soft white sauce. It's specially good to use that frozen corn in the back of the freezer!

1 egg
2 cups frozen corn
1 tablespoon vegetable oil
¾ cup onion, chopped
2 cups milk
¼ cup cornstarch
¼ cup butter
1 teaspoon ground nutmeg
½ teaspoon salt
½ teaspoon ground black pepper
1 (9 inch) unbaked pie crust
1 egg, beaten

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C).
  • Place 1 egg into a saucepan cover with water by 1 inch. Cover the saucepan and bring the water to a boil. Once the water is boiling, immediately remove from the heat and let the egg stand in the hot water for 15 minutes. Pour out the hot water and cool the egg under cold running water in the sink; peel and chop the egg. Meanwhile, bring a saucepan of water to a boil. Stir in the corn and return to a boil. Cook for 2 minutes; strain and set aside to cool.
  • Heat the vegetable oil in a saucepan over medium heat. Stir in the onion, and cook until the onion has softened and turned translucent, about 5 minutes. Pour the milk into the saucepan and whisk in the cornstarch. Add the butter, nutmeg, salt, and pepper. Bring to a simmer whisking constantly, then cook for 2 minutes until the butter has melted and the sauce has thickened. Stir in the hard boiled egg and corn; pour into the pie crust. Brush the crust with the beaten egg.
  • Bake in the preheated oven until the crust and the pie are golden brown, about 25 minutes.

This is my mom's corn pie. We grew up eating this and loving it in the heart of Amish country. It is a very hearty dish, and easy to make. Give this one a try before you decide you won't like it. Corn takes on a whole different flavor made this way. Some people add cooked chicken to the pie as well.

1 large potato, peeled and chopped
1 (15 ounce) can whole kernel corn, drained
1 (15 ounce) can cream-style corn
3 hard-cooked eggs, chopped
salt and pepper to taste
½ cup milk
1 tablespoon butter
1 (15 ounce) package double crust ready-to-use pie crust

Steps:

  • Preheat the oven to 425 degrees F (220 degrees C).
  • In a saucepan over medium heat, stir together the potato, whole kernel corn, creamed corn, hard cooked eggs, salt, pepper and milk. Simmer for about 15 minutes.
  • Press one of the pie crusts in to the bottom and up the sides of a 9 inch pie plate. I like to use clear glass so I can check the bottom crust for doneness. Pour the hot filling into the crust. Dot with pieces of butter. Cover with the top crust, and flute the edges to seal. Cut a few slits in the top crust to vent steam. Place on a cookie sheet that has been lined with aluminum foil for easy clean up.
  • Bake for 30 minutes in the preheated oven, then reduce the temperature to 350 degrees F (175 degrees C). Bake for an additional 10 minutes, or until the crust is browned. Serve hot.

1 tablespoon olive oil, plus more for pan
1 medium onion, chopped
1 1/2 teaspoons ground cumin
1/4 teaspoon red-pepper flakes
Coarse salt and ground pepper
2 tablespoons tomato paste
1 pound ground beef sirloin
3 garlic cloves, minced
1 package (10 ounces) frozen corn kernels
3 packed cups loose baby spinach (about 5 ounces), torn into pieces
2 cups (8 ounces) shredded Monterey Jack cheese
Fresh cilantro sprigs, for garnish (optional)
Sour cream (optional)

Steps:

  • Preheat oven to 400 degrees. Using a paring knife, trim tortillas to fit a 9-inch springform pan (use the removable bottom of the pan as a guide). Assemble pan with the bottom upside down; lightly oil bottom and sides. Set aside.
  • In a large skillet, heat oil over medium. Add onion, cumin, and red-pepper flakes; season with salt and pepper. Cook until onion has softened, 3 to 5 minutes. Stir in tomato paste. Raise heat to medium-high; add beef and garlic. Cook, breaking up meat with a spoon until no longer pink, 4 to 6 minutes. Add corn and spinach; stir until spinach has wilted, about 2 minutes.
  • Place one tortilla in the prepared pan. Spreading evenly, top with 1 1/2 packed cups beef mixture, then 1/2 cup cheese. Repeat with two more layers. Top with last tortilla, and sprinkle with remaining 1/2 cup cheese.
  • Bake pie until top is lightly browned, 15 to 20 minutes. Run knife around edge of pan; remove sides. Using two wide metal spatulas, lift pie from bottom of pan, and transfer to a cutting board. Cut into wedges. If desired, serve with cilantro and sour cream.
