EASY CRAB PATE
A quick and easy crab pate suitable for appetizers and sandwiches

Steps:
- Put the crabmeat, celery and red pepper in a bowl.
- Add the Dijon mustard, lemon, a good pinch of salt and a grinding of black pepper.
- Stir lightly together.
- Add the mayonnaise, a bit at a time, just until the mixture clings together nicely.
- Taste for seasoning.
- Serve as desired as a paté, in canapés, salads and sandwiches garnished with a bit of parsley or paprika if liked.
L'ERMITAGE'S TERRINE DE LANGOUSTINES (SHRIMP PATE)

Steps:
- Preheat oven to 300 degrees.
- Shell and devein langoustines. Sprinkle with salt and pepper.
- Heat butter in large skillet and add langoustines. Cook, stirring, about a minute or just until langoustines lose raw look. Remove skillet from heat and sprinkle on Cognac.
- Shell and devein shrimp. Put uncooked shrimp in container of food processor and add salt, pepper and nutmeg. Start processing while gradually adding cream.
- Spoon and scrape pureed shrimp mixture into mixing bowl. Add cooked langoustines plus any pan liquid and blend.
- Butter 2-quart glass loaf pan (9 by 5 by 3 inches) and spoon and scrape mixture into it. Smooth over top. Cut out rectangle of wax paper that will fit neatly over mixture. Butter it and place it buttered side down over mixture. Cover closely with foil.
- Set baking dish in basin of simmering water and place in oven. Bake 1 hour 15 minutes. Remove from oven. Remove pate from water bath. Let cool to room temperature, then chill.
- Unmold and serve sliced with green sauce on the side.
SHRIMP AND CRAB PASTA
A quick pasta dish full of crab and shrimp.

- Boil your pasta and drain it, set aside.
- In a skillet, add 3 Tablespoons of olive oil, 1/4 cup (1/2 of 1 stick) of butter, Mrs. Dash, onion and garlic. On medium heat, melt butter and spices together, cooking for about 3 minutes, until your onion becomes translucent.
- Add to this your shrimp, stir. Add in tomatoes. Stir in crab meat. Sprinkle with sea salt to taste. Warm through.
- Add pasta and remaining butter, toss. When butter is melted and pasta is warm, place in a pasta bowl and top with fresh Parmesan cheese.

SHRIMP (OR CRAB) PATE
A tasty appetizer that I got off a Halloween recipe site. Don't know why it was classed as Halloween other than it was served in a "Brain" mold. Works for any occasion for me - delicioso!! Can be halved for smaller events or fewer people.

- Heat soup, undiluted and mix in the cream cheese until smooth. Stir in softened gelatin and blend well. Fold in remaining ingredients and pour into a lightly-oiled mold. Chill until firm and serve with your favorite crackers or hard bread.

CRAB PATE
I did a search for crab pate recipes. There were only four of them on Recipezaar. I decided to adapt my quick pate recipe with crab. You may need to add more Worcestershire or hot sauce depending on taste.

Steps:
- Open the cans of crab meat and squeeze out the liquid.
- Place the onion and garlic in a food processor and process until smooth.
- Add the crab meat and process until thoroughly mixed
- Add the Worcestershire sauce and hot sauce and process until absorbed.
- Add the cream cheese and process until smooth.
- Scrape down the sides of the food processor and whir for about 30 seconds.
- Serve with crackers.

- Preheat oven to 350°. Spread rice into a greased 13x9-in. baking dish. In a large skillet, heat butter over medium-high heat. Add celery and onion; cook and stir until tender, 6-8 minutes. Stir in flour until blended; gradually whisk in cream. Bring to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes., Stir in seafood seasoning, salt, pepper sauce and pepper. Fold in shrimp and crab. Spoon over rice. Sprinkle with cheese. Bake, covered, until shrimp turn pink, 40-45 minutes. Let stand 5 minutes. To Make Ahead: Can be made a day in advance. Prepare recipe as directed, cooling sauce slightly before adding shrimp and crab. Cover and refrigerate overnight. Remove from the refrigerator 30 minutes before baking. Bake as directed.
